Steps:
- In a large bowl, whisk together the eggs, cream, milk, maple syrup, vanilla and a pinch of salt. Tip about two-thirds of the blueberries into a baking dish (about 20cm x 30cm) that is quite deep. Dip each brioche piece into the egg mixture until well soaked, then arrange on top on the blueberries and pour any remaining egg mixture over the top. Scatter over the remaining blueberries. Cover with cling film and chill for 1 hr, or overnight if serving it for breakfast.
- Heat oven to 180C/160C fan/gas 4. Uncover the dish and scatter over the pecans. Bake for 25 mins until the egg mixture is set and the blueberries are starting to burst. Meanwhile, line a baking tray with foil and arrange the bacon on top. When the brioche bake is ready, remove from the oven and cover loosely with foil to keep warm. Heat the grill to high and cook the bacon for about 5 mins each side until crispy.
- Dust the brioche bake with icing sugar and top with the crispy bacon. Serve with extra maple syrup for drizzling.

Steps:
- Grease a 9x13-inch pan. Layer brioche cubes evenly in the prepared pan.
- Cook the bacon in a skillet over medium heat, stirring occasionally, until it is cooked through, about 10 minutes. Remove from heat, including any rendered bacon fat, and allow to cool slightly, about 5 minutes.
- Heat a small amount of bacon fat in the same skillet over medium-high heat. Saute onion and bell pepper until soft, 5 to 7 minutes.
- Meanwhile, beat eggs in a large bowl. Mix milk, Cheddar cheese, mustard powder, pepper, and salt into the beaten eggs. Mix in bacon and onion-bell pepper mixture when done. Carefully pour the egg mixture over the brioche bread cubes and give it a gentle stir so everything is evenly distributed. Gently press the cubes into the egg mixture as needed, so all the bread cubes are sitting in the liquid. Cover and refrigerate for 8 hours, to overnight.
- Preheat the oven to 350 degrees F (175 degrees C).
- Bake in the preheated oven on the middle rack until set, the top is browned, and a toothpick inserted into the center of the casserole comes out clean, 45 to 55 minutes. Remove from the oven and allow to cool slightly before serving, 5 to 10 minutes.

- Arrange the bacon in a single layer on a baking tray then cook in a preheated 400F oven for 15-20 minutes.
- Heat your skillet over medium-high heat. Reduce the heat to medium and add enough butter to coat the base of the pan. Once the butter is melted carefully crack the egg into the skillet. Let the egg cook gently, about 2 minutes for runny yolks or 3 minutes for medium yolks. Transfer the egg to a baking tray and repeat the process with the rest of the eggs. While the eggs are cooking toast the brioche.
- Slather a few tablespoons of aioli onto each slice of brioche, top with the arugula, two slices of bacon, and a fried egg. Season the eggs with salt and freshly cracked black pepper, top with chives, and dig in!
