Easy Broccoli Cheese Bread image

This is fast and easy. We like to dip it in spaghetti sauce. This is a great appetizer or light meal. You can add a red bell pepper, if desired.

1 cup cooked broccoli
1/3 cup chopped green onion
1/2 cup mozzarella cheese
1 teaspoon seasoning salt
1/2 teaspoon basil
8 ounces refrigerated crescent dinner rolls

Steps:

  • Preheat oven to 375 degrees. Coat baking sheet with nonstick cooking spray.
  • Mix everything but the crescent rolls in a medium bowl.
  • Unroll the crescent roll dough. Mine usually comes in a rectangle that I have to break apart to make the crescent shapes. Don't do that! Leave it rectangular. If yours is different, just shape it into a rectangle.
  • Spread the broccoli mixture over the dough, leaving just 1/2 an inch free on one of the long sides.
  • Roll the dough up like a cinnamon roll starting with the long side you left empty. Pinch the dough together at the end to seal the seams. Place the seam side down on the baking sheet.
  • Bake until golden, about 15 minutes.

1 1/2 cups grated sharp cheddar cheese
1 (1 1/2 ounce) envelope knorr cream of broccoli soup mix
1 large egg
1 1/2 cups milk
1/4 cup butter, melted

Steps:

  • Coat a 9x5 inch loaf pan with non-stick cooking spray; set aside.
  • In a mixing bowl, add the flour, sugar, cheese, and soup mix; stor to combine.
  • Add in the egg, milk, and 2 tablespoons melted butter; stir until well combined.
  • Pour the mixture into the loaf pan.
  • Drizzle the rest of the melted butter over the top.
  • Bake in a 350° oven for 1 hour or until pick comes out clean.
  • Place loaf pan on wire rack and let cool for 10 minutes.
  • Turn bread out of loaf pan and let cool completely on a wire rack before cutting.

2 (8.5-ounce) boxes corn muffin mix
1/2 cup whole milk
2 cloves minced garlic
1 (8-ounce) container cottage cheese
4 large eggs
1 tablespoon salt
1 cup plus 2 tablespoons grated Cheddar
1 stick unsalted butter or margarine
1 medium onion, chopped
1 (10-ounce) package frozen chopped broccoli, thawed but not drained

Steps:

  • Preheat oven to 375 degrees F.
  • Mix together all ingredients except 2 tablespoons Cheddar to create a batter in a bowl.
  • In a 10-inch cast iron skillet melt butter. Saute onions and broccoli until soft. Pour batter over the vegetable mixture and sprinkle top evenly with remaining cheese. You can also place the ingredients in an 11 by 17-inch baking dish.
  • Bake in oven until golden, 30 minutes.

Savory Bread Pudding With Broccoli and Goat Cheese image

For this comforting gratin, broccoli is briefly steamed and seasoned with garlic and thyme before being tossed with the bread, eggs, goat cheese and milk. You can include tomatoes if you can still find good ones.

5 to 6 ounces stale baguette or whole wheat country bread, crusts removed, cut into 3/4-inch slices if it isn't too hard to cut (see note)
1 1/2 cups milk (low-fat or regular)
2 large garlic cloves, 1 cut in half, 1 minced
1/2 pound broccoli crowns
1 tablespoon extra virgin olive oil
2 teaspoons fresh thyme or 1 teaspoon dried
4 ounces goat cheese, crumbled (about 1 cup)
4 large eggs
Salt and freshly ground pepper to taste
1 pound ripe, firm tomatoes, sliced (optional)

Steps:

  • Rub the bread slices, front and back, with the cut clove of garlic. Cut into cubes. Place in a bowl and toss with 1 cup of the milk and let sit while you prepare the other ingredients. Note: If the bread is too hard to cut safely, place the whole chunk in a bowl with 1 cup of the milk. Refrigerate for 1 hour or longer, turning the bread in the milk every once in a while. Remove the bowl with the soaked bread from the refrigerator. Break up the bread with your hands. Using a wooden spoon, a whisk or an immersion blender, mash or beat the soaked bread so that the mixture turns into a mush.
  • In a large bowl, beat together the eggs and goat cheese. Beat in the milk. Add salt to taste (about 1/2 teaspoon), a few twists of pepper and the bread, along with any milk remaining in the bowl in which you soaked the bread. Stir well to combine. Let sit for 15 to 30 minutes.
  • Meanwhile, heat the oven to 350 degrees. Rub the sides of a 2-quart baking dish or gratin with the cut side of a garlic clove. Oil or butter the dish. Mince any remaining garlic from the halves you used to rub the bread and the dish. Break up the broccoli crowns into florets and steam for 4 minutes. Remove from the heat, drain and cut the florets into 1/2-inch slices, or chop coarsely.
  • Heat 1 tablespoon of the olive oil over medium heat in a large skillet and add the minced garlic. Cook, stirring, until fragrant, about 30 seconds, and stir in 1 teaspoon of the thyme, the broccoli, and salt and freshly ground pepper to taste. Stir together for a minute, until the broccoli is nicely seasoned, and remove from the heat. Stir into the bread mixture.
  • Scrape the bread mixture into the baking dish. If including tomatoes, scrape in half the bread mixture and layer half the tomatoes on top. Spread the remaining bread mixture over the tomatoes and top with the remaining tomatoes. Season the tomatoes with salt and pepper, sprinkle with the remaining thyme and drizzle on the remaining tablespoon of olive oil. Place in the oven and bake 50 minutes, until puffed, set and lightly browned. Remove from the oven and serve hot or warm.

This is a great casserole that I threw together one day when a friend requested Broccoli au Gratin for her birthday dinner. This is a great idea for those who aren't big fans of bread crumbs. Also, the eggs can be taken out for a great sauce and using skim milk and fat-free cheese works well, too. It's basically a great recipe that can be easily altered according to taste. Enjoy!

8 cups fresh broccoli
½ cup butter
2 tablespoons all-purpose flour
1 small onion, chopped
1 ¼ cups milk
salt and pepper to taste
4 cups shredded Swiss cheese
2 eggs, beaten

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Place broccoli in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, about 2 to 6 minutes. Drain.
  • Melt butter in a medium saucepan over medium heat and add flour; cook until bubbly. Stir in onion and gradually add milk, stirring well. Bring to a boil and cook for 1 minute. Remove from heat and season with salt and pepper. Stir in cheese and eggs; mix well. Combine mixture with broccoli and transfer to a 9 x 13 inch casserole dish.

3-1/4 to 3-1/2 cups all-purpose flour
1 tablespoon sugar
1 package (1/4 ounce) quick-rise yeast
1 teaspoon salt
1 cup water
1 tablespoon butter, softened
1-1/2 cups finely chopped fresh broccoli, cooked and drained
1 cup shredded cheddar cheese
5 bacon strips, cooked and crumbled
1 large egg
1/2 teaspoon dried minced onion
1/2 teaspoon dried oregano
1 large egg white
1 tablespoon cold water

Steps:

  • In a large bowl, combine 2-1/4 cups flour, sugar, yeast and salt. In a saucepan, heat water and butter to 120°-130°. Add to dry ingredients. Beat on medium speed for 2 minutes. Add eggs and 1/2 cup flour; beat 2 minutes longer. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 4 minutes. Cover and let rest for 10 minutes., Meanwhile, in a large bowl, combine the broccoli, cheese, bacon, egg, onion and oregano. On a lightly floured surface, roll dough into a 16x9-in. rectangle with a 16-in. side facing you. Spoon broccoli mixture lengthwise over top two-thirds of dough to within 1 in. of edges. , Starting at the plain long side, fold dough over half of filling; fold over again. Pinch seams to seal and tuck ends under. Place, seam side down, on a greased baking sheet. With a sharp knife, cut into eight strips to within 1 in. of pinched edge. 2 packages (8-1/2 ounces each) cornbread/muffin mix

1 cup fresh or frozen corn, thawed
