1 1/2 cups steamed broccoli florets (roughly chopped)
1 6.5 oz container light garlic-herb spreadable cheese (i.e. Boursin or Alouette)
4 large eggs
1/2 cup butter (melted)
1 small sweet onion (finely diced)
2 cups shredded sharp white cheddar cheese (divided)
1 8.5 oz box cornbread mix [Martha White or Jiffy]
1/2 tsp garlic powder
1/2 tsp dry mustard
1/4 tsp onion powder

Steps:

  • Preheat the oven to 350°F and butter a 11 x 7 inch (2 Quart) baking dish. Set aside.
  • In a mixing bowl, mix together, the steamed broccoli, garlic-herb cheese spread, 4 eggs, melted butter and finely diced onion until blended.
  • Add 1 cup of cheddar cheese, cornbread mix and seasonings. Stir until combined.
  • Pour into the prepared dish and sprinkle the remaining cheese on top.
  • Place into the oven and bake for 30-35 minutes until golden and you see moist crumbs on a toothpick inserted into the center.

1 cup chopped onion
1 cup butter, cubed
2 packages (8-1/2 ounces each) cornbread/muffin mix
2 cups shredded cheddar-Monterey Jack cheese
6 large eggs
1-1/2 cups 4% cottage cheese
1 package (9 ounces) frozen broccoli cuts, thawed and drained
1 cup fresh or frozen corn, thawed
2 tablespoons canned jalapeno slices, chopped

Steps:

  • In a large skillet, saute onion in butter until tender; set aside. In a large bowl, combine cornbread mix and shredded cheese. In another bowl, beat the eggs, cottage cheese and onion mixture. Stir into cornbread mixture just until moistened. Fold in the broccoli, corn and jalapeno. , Transfer to a greased 13x9-in. baking pan. Bake at 400° for 35-40 minutes or until lightly browned and edges pull away from sides of pan. Serve warm. Refrigerate leftovers.

2 (8.5 ounce) packages corn bread/muffin mix
1 (10 ounce) package frozen chopped broccoli, thawed
1 large onion, chopped

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.

2 cloves minced garlic
1 (8-ounce) container cottage cheese

1 tablespoon salt
1 cup plus 2 tablespoons grated Cheddar
1 stick unsalted butter or margarine
1 medium onion, chopped
1 (10-ounce) package frozen chopped broccoli, thawed but not drained

Steps:

  • Preheat oven to 375 degrees F.
  • Mix together all ingredients except 2 tablespoons Cheddar to create a batter in a bowl.

1 1/2 cups self-rising buttermilk cornbread mix
1/2 cup chopped sweet onion, such as Vidalia
10 ounces pepper Jack cheese, grated
8 ounces fresh broccoli florets, chopped (about 2 cups)
1/2 teaspoon freshly ground black pepper
1 jalapeno pepper, seeded and chopped
1 cup sour cream
3/4 cup buttermilk
2 tablespoons unsalted butter, melted

Steps:

  • Preheat the oven to 350 degrees F. Pour the vegetable oil in a 9-inch cast-iron skillet that has been well seasoned to prevent sticking.
  • Combine the cornbread mix, onion, cheese, broccoli, black pepper and jalapeno in a large bowl. Stir in the sour cream, buttermilk and melted butter to make a thick batter.
  • Heat the oil in the skillet over medium heat until hot and shimmering. Spoon in the batter, spreading it to the edges. The oil will come up around the edges of the batter. Spread it over the top of the batter. (During the baking process the oil will help brown the bread.)
  • Bake until golden brown and a toothpick inserted in the center comes out clean, about 45 minutes. Cool in the pan for 10 minutes, and then carefully loosen the edges and bottom with an egg turner or large spatula and turn onto a rack. Serve warm or at room temperature.

1 (8 ounce) box Jiffy cornbread mix
4 eggs

  • Preheat oven at 350.Put the stick of butter in a 9x13 pan and sit in the oven to melt. Mix all remaining ingredients together (the mixture will be very thick). 1/2 cup unsalted butter
1 medium onion, chopped
2 garlic cloves, minced
One 10-ounce package frozen chopped broccoli, thawed but not drained (or see headnote)
Two 8 1/2-ounce boxes cornbread mix
1/2 cup whole milk
One 8-ounce container cottage cheese
4 large eggs
1 tablespoon salt
1 cup plus 2 tablespoons grated sharp cheddar cheese, for topping

Steps:

  • Preheat the oven to 375°F.
  • Heat the butter in a 10-inch cast-iron skillet over medium high heat. Add the onion, and sauté until softened, 4 to 5 minutes. Add the garlic and broccoli to the skillet, and sauté for 2 minutes, until the garlic is fragrant and the broccoli has warmed through. In a medium bowl, stir together the cornbread mix, milk, cottage cheese, eggs, salt, and 1 cup of the cheddar cheese until smooth, then pour the batter into the skillet over the vegetables and stir to blend.
