Fantastic quiche, very easy!

1 (9 inch) deep dish prepared pie crust
1 teaspoon vegetable oil, or as needed
2 cups finely chopped broccoli
4 eggs
½ cup milk
1 tablespoon Dijon mustard
1 teaspoon dried oregano
½ teaspoon salt
¼ teaspoon ground black pepper
½ teaspoon dried thyme
½ cup shredded Cheddar cheese
¼ cup grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.
  • Place pie crust into a 9-inch deep pie dish and prick crust all over with a fork; brush with oil. Place crust onto prepared baking sheet.
  • Bake crust in the preheated oven for 8 minutes.
  • Place broccoli into a bowl and microwave on high until broccoli is bright green and slightly tender, about 4 minutes. Whisk eggs, milk, Dijon mustard, oregano, salt, pepper, and thyme in a bowl; stir broccoli into egg mixture. Pour mixture into crust and sprinkle quiche with Cheddar and Parmesan cheeses. Place pie dish on the baking sheet.
  • Bake until a knife inserted into the middle of the quiche comes out clean, about 40 minutes. Let stand 10 minutes before cutting.

This is somewhat like a quiche. The crust consists of Cheddar cheese, which is delicious. A must try.

1 head fresh broccoli, chopped
1 cup shredded Cheddar cheese
¾ cup all-purpose flour
½ teaspoon salt
¼ teaspoon dry mustard
¼ cup butter, melted
1 tablespoon butter
1 onion, chopped
¼ pound fresh mushrooms, sliced
2 tablespoons all-purpose flour
1 cup half-and-half cream
1 teaspoon salt
¼ teaspoon ground nutmeg
3 eggs, beaten

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Bring about 1 inch water to a boil in a pot. Place the chopped broccoli in a steamer basket over boiling water, and steam 5 minutes, or until tender but firm.
  • In a bowl, mix the Cheddar cheese, 3/4 cup flour, 1/2 teaspoon salt, and mustard. Mix in 1/4 cup butter until evenly moist. Press into the bottom and sides of an 8 inch pie dish.
  • Melt the 1 tablespoon butter in a skillet over medium heat, and saute the onion and mushrooms until tender. Stir in 2 tablespoons flour, half and half, 1 teaspoon salt, and nutmeg. Bring to a boil, and cook 1 minute. Remove from heat. Mix in steamed broccoli. Gradually stir in eggs. Transfer to the pie crust.
  • Bake 15 minutes in the preheated oven. Reduce heat to 375 degrees F (190 degrees C), and continue baking 20 minutes, until a knife inserted in the center comes out clean.

1 large onion, diced
2 garlic cloves, minced
2 teaspoons italian seasoning
8 cups broccoli, chopped
1 cup milk
7 large eggs, lightly beaten
1 cup shredded monterey jack pepper cheese
1 cup asiago cheese
salt and pepper

Steps:

  • In a large frying pan that can be put into the oven, melt butter and saute onions for 3 minutes add the garlic, seasoning and broccoli stir and cover cook for 3 minutes.
  • Meanwhile mix together rest of ingredients.
  • Pour over broccoli mixture spreading to evenly coat and bake in oven till puffy and browned about 25-30 minutes.

This is a delicious, rich quiche that I made for the first time using DiB's Cheddar Cheese Crust, recipe #17857.

1 (19 ounce) bag green giant frozen cut broccoli in cheese sauce
4 eggs
2/3 cup whipping cream
6 slices bacon, cooked crisp and crumbled
1 cup parmesan cheese
1 cup shredded cheddar cheese or 1 cup four-cheese Mexican blend cheese
1/2 teaspoon dried basil
1/2 teaspoon black pepper
1/4 teaspoon dried parsley flakes
2 cups flour
2/3 cup shredded sharp cheddar cheese
1/2 teaspoon salt
1/2 cup solid shortening
5 -6 tablespoons ice water

Steps:

  • Preheat oven to 350 degrees.
  • Make frozen broccoli according to microwave directions on bag.
  • Meanwhile, make cheddar cheese crust or fit frozen crust to 9" glass pie plate.

  • In a food processor, pulse together flour, cheese and salt until blended.
  • Add shortening and pulse until crumbly.
  • Add ice water, one tablespoon at a time,and pulse until dough just holds together.

3 ounces cream cheese, at room temperature
1/4 lb butter, at room temperature
1 cup flour
1 chopped shallots or 1/4 cup chopped green onion
1/2 cup sliced fresh mushrooms
3 tablespoons butter
5 eggs
1 cup half-and-half
1/2 cup milk
1 teaspoon salt
1 dash fresh ground pepper
4 ounces swiss cheese, grated
1 (10 ounce) package frozen chopped broccoli, cooked and drained
1/2 cup diced tomato (optional)

Steps:

  • Crust: Cream cheese and butter together.
  • Add flour and mix.
  • Press into greased pie plate.
  • Filling: Saute shallot or onions and mushrooms in butter until soft.
  • In blender, combine eggs, half and half, milk, salt and pepper.
  • To assemble, place mushrooms and shallot in bottom of pie crust.
  • Sprinkle with cheese; add broccoli and tomatoes.
  • Pour egg and milk mixture over all.
  • Bake at 350 degrees for 1 hour.
  • Let set 5 minutes before serving.

My second entry into the broccoli quiche category...this one is from Vegetarian Pleasures. Breadcrumbs in recipes always confuse me, I'm not sure what I'm being asked for. In this one, you want to make a slice or two of toast, let it (them) cool, and give a buzz in the food processer. This can be made up to 8 hours in advance-cover and chill the crust and filling separtely. Have not done that, so I could only guess how you might need to adjust the baking time; maybe another 15 minutes? I don't know why it's called crustless, it has a crust, just a thin one. Anyway, it's yummy. I've had no problem using lowfat/non-fat milk and cottage cheese. I never use the cayenne pepper, because Mr. B. does not like even a touch of heat, so I don't know how that tastes in there. Hope you enjoy!

3 tablespoons parmesan cheese, grated
1/4 cup breadcrumbs, preferably whole wheat
1 1/2 cups cottage cheese
1/4 cup milk

1 dash cayenne pepper

  • Mix the cottage cheese, milk, Monterey Jack and eggs together well, then stir in the remaining ingredients (except the butter). Pour into the pie crust and smooth over the top, then dot with butter.
  • Bake for 40 minutes, or until a knife inserted into the center comes out almost clean. Serve immediately.

3/4 cup cooked chicken
1 1/4 cups Velveeta cheese

Steps:

  • Preheat oven at 350 degrees.
