2 cups chopped fresh broccoli
1 pound ground beef
1 can (4 ounces) mushroom stems and pieces, drained
2 cups shredded cheddar cheese, divided
1/3 cup chopped onion
2 cups biscuit/baking mix
1/2 cup water
4 large eggs
1/2 cup whole milk
1/4 cup grated Parmesan cheese
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • In a small saucepan bring 1 in. of water to a boil. Add broccoli; cover and boil for 3-5 minutes or until crisp-tender; drain and set aside. , In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in mushrooms, 1-1/2 cups cheddar cheese and onion. Remove from the heat and set aside. , Combine the biscuit mix and water to form a soft dough. Add remaining cheddar cheese; stir until blended. With well-floured hands, pat dough onto the bottom and 1 in. up the sides of a greased 13x9-in. baking dish. , Spoon meat mixture over dough; top with broccoli. Combine the eggs, milk, Parmesan cheese, salt and pepper; pour over broccoli. Bake, uncovered, at 350° for 35 minutes or until a knife inserted in the center comes out clean.

Hearty comfort food at it's finest... Like a beef stew within a pie shell. Perfect for cold winter nights indoors. I happen to use a quiche' dish for an extra deep pie.

2 -3 stalks celery, diced
2 cups carrots, coins (Grimway pre-sliced carrot coins in produce aisle)
1 small onion, diced
2 chicken bouillon cubes
1 tablespoon minced garlic (I use refrigerated jar)
1 (1 lb) package boneless beef chuck (1 package of tips or cut beef into bite size pieces Note -- chuck has best flavor for this recipe bu)
1 pillsbury ready-made pie crust (2 pie shells per package)
olive oil
butter
1 (10 1/2 ounce) can campbell's beef gravy
Pam cooking spray

Steps:

  • Boil celery, onion & carrots in water with 2 cubes boullion in medium pot until tender.
  • Meanwhile, brown meat in olive oil/butter with 1 tablespoon refrigerated minced garlic in large stock pot.
  • Drain meat when done & return to pot. Add 1 can Campbell's beef gravy. Then drain vegetables & add to meat & gravy. Simmer on low.
  • Spray deep pie dish (I use quiche' dish) with Pam.
  • Roll out pie crust & press into dish & up sides. Add beef/vegetable mixture.
  • Cover with top crust & press together both crusts then flute edges. Pierce top crust with fork to vent steam.
  • Bake 450 degrees x 35-45 minute until crust golden brown. After 20 minute cover edges with foil as to not burn.

1 box (9 oz) Frozen Broccoli Cuts, thawed
1 jar (4 oz) sliced mushrooms, drained
1/2 cup Original Bisquick™ mix
1 cup milk
1/4 cup sour cream
2 eggs
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 cup shredded Swiss cheese

Steps:

  • Heat oven to 400° F. Grease 9-inch pie plate. In medium bowl, mix beef, onions, broccoli and mushrooms; spoon into pie plate.
  • In same bowl, stir Bisquick mix, milk, sour cream, eggs, salt and pepper until blended. Pour into pie plate. Top with cheese.
  • Bake 30 to 35 minutes or until knife inserted in center comes out clean. Cool 5 minutes. Garnish with parsley, if desired.

Trying to replicate a dish from Williamsburg's King's Arms Tavern, I formulated this recipe out of several: my mom's pie crust, an old port wine sauce recipe, and, of all things, fajita filling. Great as the main dish for Thanksgiving or Christmas.

1 tablespoon butter
1 large shallot, finely chopped
1 (750 milliliter) bottle tawny port
3 sprigs fresh thyme
2 ½ cups chicken broth
1 portobello mushroom cap, cut into 1/2-inch slices
3 tablespoons cornstarch
1 teaspoon balsamic vinegar
sea salt to taste
freshly ground black pepper to taste
1 ½ pounds diced beef stew meat
1 large onion
2 cups all-purpose flour
1 teaspoon salt
⅔ cup butter, softened
2 tablespoons butter, softened
¼ cup cold water
3 tablespoons cold water

Steps:

  • Melt 1 tablespoon butter in a large saucepan over medium heat. Add shallot; cook and stir until softened, about 5 minutes. Add port and thyme; bring to a boil over high heat. Reduce heat to medium-low; cook until sauce is reduced to 1/2 cup, about 35 minutes.
  • Bring chicken broth to a simmer in a small saucepan. Turn off heat and add half the mushroom slices. Let mushrooms soak, 15 to 20 minutes.
  • Use a slotted spoon to transfer soaked mushrooms to a small bowl. Strain the chicken broth from the saucepan into a separate bowl, pouring it through a coffee filter or cheesecloth to remove any sediment.
  • Dice the soaked mushrooms and transfer to the port sauce. Add the strained chicken-mushroom broth.
  • Bring the sauce to a boil. Reduce heat to medium-low. Cook and stir until reduced to 1 1/2 cups, about 15 minutes.
  • Mix cornstarch with 1/4 cup cold water in a bowl. Whisk cornstarch slurry rapidly into the simmering sauce until thickened, about 3 minutes. Add balsamic vinegar, salt, and pepper.
  • Heat a skillet over medium-high heat. Saute beef until meat is still slightly pink in the center, 6 to 7 minutes. Transfer to a bowl. Saute remaining mushrooms and onion in the beef drippings until tender, about 5 minutes. Add to the bowl with the beef.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Combine flour and salt in a bowl. Cut 2/3 cup plus 2 tablespoons butter into the flour using 2 knives or a pastry blender until mixture is crumbly. Add 1/4 cup plus 3 tablespoons cold water; mix until dough pulls away from edges of the bowl. Divide dough in half; set 1 portion aside and roll the other half onto a floured surface. Press dough into a 10-inch pie pan to form the bottom crust.
  • Spread the vegetable-beef mixture over the crust in the pie pan. Pour sauce on top, spreading to the edges. Roll out the other half of the dough and cover pie with the crust; seal the edges.
  • Bake in the preheated oven until flaky and golden, about 45 minutes. Cool for 15 minutes.

2 cups all-purpose flour
3/4 teaspoon salt
2/3 cup shortening
6 to 8 tablespoons cold water
FILLING:
1 pound ground beef
1 small onion, chopped
2 cups chopped broccoli, cooked and drained
2 cups shredded Swiss cheese
4 ounces cream cheese, cubed
1 large egg, lightly beaten
1/2 cup plus 1 teaspoon whole milk, divided
1 tablespoon all-purpose flour
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • In a large bowl, combine flour and salt; cut in shortening until crumbly. Gradually add water, tossing with a fork until dough forms a ball. Roll out dough to fit a 9-in. pie plate. Transfer to plate; trim even with edge., In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the broccoli, Swiss cheese, cream cheese, egg, 1/2 cup milk, flour, garlic powder, salt and pepper. Spoon into crust., Roll out remaining dough to fit top of dish; place over filling. Trim, seal and flute edges; cut slits in top. Brush pastry with remaining milk. Bake at 350° for 50-55 minutes or until the crust is golden brown. Let stand for 5 minutes before cutting.

1 (17.5 ounce) package frozen puff pastry, thawed
4 tablespoons olive oil
1 cup chopped onion
1 teaspoon minced garlic
1 cup raw porcini mushrooms
1 cup chopped carrots
½ cup chopped celery
1 potato, diced
1 pound beef tenderloin, cubed
1 bay leaf
1 teaspoon dried oregano
1 cup dry Marsala wine
2 tablespoons chopped fresh parsley
1 egg white

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large skillet, cook bay leaf, oregano, onions and mushrooms in olive oil until soft. Stir in garlic, carrots, celery, potatoes, and meat.
  • Cook and stir for 10 minutes, or until meat starts to brown. Pour in wine. Bring to a boil, and reduce heat to simmer. Simmer for 35 to 45 minutes.
  • Place in pie dish, sprinkle with parsley, and cover with pastry. Brush with egg whites.

1 lb ground beef
1/4 cup chopped onion
2 tablespoons all-purpose flour
3/4 teaspoon garlic salt
pepper, to taste
1 1/4 cups milk
1 (3 ounce) package cream cheese, softened
1 egg, beaten
1 (10 ounce) package frozen chopped broccoli florets, cooked and well-drained
2 (8 count) packages refrigerated crescent dinner rolls
4 ounces monterey jack cheese
additional milk

Steps:

  • In skillet, brown ground beef and onions; drain off fat. Stir in flour, salt, garlic salt and pepper. Add milk and cream cheese; cook and stir till mixture is thickened and smooth. Add a moderate amount of hot mixture to beaten egg; return to mixture in skillet. Cook and stir over medium-heat for 1 to 2 minutes or until thick. Stir in the well-drained broccoli.
  • Unroll one package of crescent rolls. On floured surface, lay dough down forming a 12 x 7-in rectangle. Seal edges and perforations together. Roll to a 12 inch square and fit into a 9 inch pie dish; trim the edges. Spoon meat mixture into shell.
  • Cut monterey jack cheese in slices; arrange so that it covers the meat mixture. Roll second package of crescent rolls into 12 inch square as before. Place atop filling. Trim and seal edges with fork; cut slits for escape of steam. Brush top of pie with a little extra milk.
  • Bake in 350 degree oven for 40 minute If pastry browns too quickly, cover with foil for the last 20 minutes. Let stand for 10 minutes before serving.
