From Lyn Rosetto Kasper and Sally Swift's book, "The Splendid Table: How to Eat Supper", this recipe originated in Gainesville, Florida, and pays homage to the late Mamo Lo Alexander and her soul food restaurant, where she was a local folk hero. They write, "Her broccoli casserole magically transformed the dour stalks of green into something rich, sweet and satisfying by combining them with a luxurious and ultra-soulful melange of eggs, cheese, sugar and cushiony white bread. We make a batch to split (with a tiny bit left over for the next day) whenever we are in desperate need of culinary comfort, southern-style."

- Preheat oven to 350 degrees. Butter an 8-inch square Pyrex baking dish. Cover the bottom of the dish generously with the torn bread.
- Combine the eggs, milk, melted butter, cheese, salt and sugar in a bowl. Mix ntil combined. Stir in the roccoli and pour the mixture over the read.
- Cover with aluminum foil and bake for 35 minutes. For a chewier top, remove the foil during the last 10 to 12 minutes of baking. If you want a crisper crust, run the casserole under the broiler.

- In a bowl combine mayonnaise, yogurt, cheddar cheese, blue cheese dressing, eggs, salt, pepper, and flavor pack from noodles. In a separate bowl combine broccoli, mushrooms, and broken noodles then toss together wet mixture and vegetables to evenly coat. Place in an 8 by 8-inch baking dish that has been sprayed with non- stick cooking spray and cook for 45 minutes covered. Then remove cover and bake for additional 15 minutes to brown. Cool for 15 minutes before serving.
BROCCOLI PUFF CASSEROLE
I was tired of serving the typical broccoli and cheese side dish. Having a creative moment gave me this casserole/side dish. Add chicken or ham and it's a casserole. Using the regular ingredients makes it a fantastic side dish for any dinner. My kids love it and we have it often.

- Preheat oven to 400 degrees. In two batches, cook broccoli in a large pot of salted boiling water until slightly tender, about 3 minutes. Drain and rinse with cold water to cool. Drain well.
- Melt 2 tablespoons butter in a large straight-sided skillet over medium-high. Add onion and mushrooms; season with salt and pepper. Stir in cooled broccoli. Transfer to a 2 1/2-quart shallow baking dish. Combine crackers and remaining 2 tablespoons melted butter. Sprinkle evenly over top of casserole. - Preheat oven to 350 degrees F (175 degrees C).
- Bring a pot of lightly salted water to a boil. Cook broccoli in the boiling water for 1 minute. Drain, and set aside.
- In a saucepan over medium heat, mix the cheese, cream of mushroom soup, salt, and pepper. Stir until cheese is melted. Add the broccoli, stirring to coat. Transfer the mixture to a 9x13 inch baking dish.
- In a separate saucepan, melt the butter over medium heat. Mix in the croutons, and sprinkle over the broccoli mixture.

- Preheat oven to 450 degrees, with rack in upper third. In a food processor, pulse bread and 1 tablespoon oil until large crumbs form; season with salt and pepper. Set aside.
- In a large saucepan, heat remaining 2 tablespoons oil over medium. Whisk in flour; cook, stirring constantly, 1 minute. Gradually whisk in milk. Bring to a boil; add broccoli. Reduce to a simmer. Cook, stirring occasionally, until broccoli is tender, 15 to 20 minutes. Remove from heat; stir in 3/4 cup cheese.

- Peel the potatoes and place in a large saucepan of boiling water. Boil about 25 to 30 minutes, or until tender. Drain, then return to empty pot. Place over medium heat, tossing and stirring the potatoes to expel all moisture, about 1 to 2 minutes.
- Mash the potatoes with a potato masher. When free of lumps, add butter, salt and pepper. Continue mashing until well mixed.
- Mixing vigorously with heavy whisk, add the warm milk. The longer the potatoes are mixed, the fluffier the potatoes will be. Serve immediately, with extra pepper and butter, if desired.
