Rich and delicious, filled with several of your five a day and perfectly sized for two. I like to serve this with pickled beets and some buttered fresh brown bread.

Number Of Ingredients 15

250g whole milk (1 generous cup)
1 whole dried clove
1 dried bay leaf, broken in two
1 1/2 TBS butter
1 1/2 TBS flour
salt and white pepper to taste
1 TBS Dijon mustard
60ml double cream (1/4 cup)
75g grated strong cheddar cheese (2/3 cup)
2 TBS grated Parmesan cheese
115g dry macaroni (1 cup or 4 ounces)
325g cauliflower florets (1 cup)
325g broccoli florets (1 cup)
60g grated strong cheddar cheese (1/2 cup)
a couple TBS of either cracker crumbs or potato chip crumbs

Steps:

  • First make the sauce. Add the clove and bayleaf to the milk. Bring just to the boil, then set aside to infuse for about 15 minutes. Remove the clove and bay leaf and discard.
  • Melt the butter in a saucepan until it begins to foam. Whisk in the flour and allow it to cook for a vew minutes until it starts to smell a bit nutty. Pour in the milk slowly, whisking continuously until the mixure has thickened nicely. Whisk in the cheese and allow it to melt. Whisk in the cream and Dijon mustard. Season to taste with salt and white pepper. Set aside.
  • Preheat the oven to 200*C/400*F/ gas mark 6. Butter a shallow casserole dish about 7 by 11 inches in size.
  • Cook the dry macaroni in a pot of lightly salted water according to the package directions, adding the broccoli and cauliflower florets for the last 2 to 3 minutes of cook time. Drain everything well, then stir into the cheese sauce. Pour the whole lot into the prepared casserole dish.
  • Mix together the cheeses and crumbs/chips for the topping and sprinkle evenly over top of the macaroni and cheese.
  • Bake in the preheated oven for 20 to 25 minutes, until bubbling and golden brown. Let stand about 10 minutes before serving.

4 tablespoons salted butter, plus more for the baking dish
1 pound elbow macaroni
1 stalk celery, finely diced
1/2 head broccoli, stalks largely removed, broken into very small florets
1/2 medium onion, finely diced
2 tablespoons all-purpose flour
1 teaspoon dry mustard
2 cups whole milk
1 cup chicken or vegetable broth
1/4 cup half-and-half
2 1/2 cups grated sharp Cheddar
1 cup cubed processed cheese, such as Velveeta
1 cup grated Parmesan
Kosher salt and freshly ground black pepper
1/2 cup breadcrumbs

Steps:

  • Preheat the oven to 350 degrees F. Butter a baking dish.
  • Bring a pot of water to a boil. Cook the macaroni according to the package instructions until still firm. Drain and set aside.
  • Meanwhile, melt the butter in a pot over medium heat. Add the celery, broccoli and onion and cook, stirring, until the vegetables soften, 4 to 5 minutes. Use a wooden spoon to mash some of the broccoli. Sprinkle on the flour and dry mustard and stir to coat the vegetables. Pour in the milk, broth and half-and-half and cook, stirring, to allow it to warm up.
  • Add the Cheddar, processed cheese, 1/2 cup of the Parmesan and some salt and pepper and stir to melt the cheese. Add the macaroni and stir. Taste and check for seasoning. Pour into the prepared baking dish. Combine the breadcrumbs and remaining 1/2 cup Parmesan in a small bowl and sprinkle over the dish. Bake until bubbly, about 25 minutes.

300g dried essential Waitrose Macaroni 300g pack cauliflower and broccoli florets 50 g butter 50 g plain flour 750ml essential Waitrose Skimmed Milk 100g vintage Davidstow Cheddar, grated 2 tsp Dijon mustard 2 tbsp Cooks' Ingredients Chilli & Coriander Crust

Steps:

  • Preheat the oven to 200°C, gas mark 6. Cook the pasta in plenty of boiling water for 8 minutes until just tender. Place the cauliflower and broccoli in a steamer (or sieve) and set over the pasta for the last 5 minutes until almost tender. Drain the pasta and place in a 1.75 litre ovenproof baking dish with the vegetables. Melt the butter in a medium non-stick pan and stir in the flour. Cook for 1 minute until thick, then off the heat gradually whisk in the milk, keeping the mixture smooth. Return the pan to the heat and stir constantly until thickened. Simmer for 2 minutes, then remove from the heat, stir in the cheese, mustard and seasoning and pour over the pasta and vegetables. Sprinkle the crust over the dish. Cook in the oven for 20-25 minutes until the top is crisp and golden. Serve as it is, or with grilled or roasted meats.

1 small onion, chopped
2 tablespoons all-purpose flour
1/2 cup 2% milk
1 package (8 ounces) Velveeta, cubed
1/4 teaspoon salt
3 large eggs, lightly beaten
2 packages (12 ounces each) frozen broccoli-cauliflower blend, thawed

Steps:

  • Preheat the oven to 325°. In a Dutch oven, heat the butter over medium-high heat. Add onion; cook and stir until tender, 2-3 minutes. Stir in flour until blended; gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes. Stir in cheese and salt until cheese is melted., Remove from heat. Gradually whisk in eggs. Stir in vegetable blend. 1 pound broccoli crowns, cut into small pieces
½ pound cauliflower, broken into small florets
¼ cup butter
2 tablespoons all-purpose flour
1 ¼ cups half-and-half
½ teaspoon Dijon mustard
⅔ cup grated Cheddar cheese
½ cup grated Parmesan cheese
.063 teaspoon paprika
salt and ground black pepper to taste
3 tablespoons grated Cheddar cheese
2 tablespoons bread crumbs

Steps:

  • Bring a large pot of lightly salted water to a boil. Add broccoli and cauliflower and cook uncovered until tender yet firm to the bite, 2 to 3 minutes. Drain in a colander and immediately immerse in ice water for several minutes to stop the cooking process. Drain and transfer broccoli-cauliflower to a baking dish.
  • Melt butter in a saucepan over medium heat; add flour and stir until browned and bubbling, 3 to 4 minutes. Whisk half-and-half and Dijon mustard into butter-flour mixture; bring to a boil, reduce heat to medium-low, and simmer until cream sauce is thickened, about 2 minutes.
  • Stir 2/3 cup Cheddar cheese, Parmesan cheese, and paprika into cream sauce; cook and stir until cheeses are melted. Season sauce with salt and pepper. Pour sauce over broccoli-cauliflower mixture and top with 3 tablespoons Cheddar cheese and bread crumbs.
  • Bake in the preheated oven until topping is lightly browned, 15 to 20 minutes.

Cauliflower cheese gets more colourful with the addition of broccoli in this super Sunday lunch side dish

1 small cauliflower, leaves removed and broken into small florets
1 small head broccoli, broken into small florets
50g butter
50g flour
1 tsp mustard powder
500ml milk
100g strong cheddar, or vegetarian alternative
2 tbsp snipped chives

Steps:

  • Heat oven to 200C/180C fan/gas 6. In a very large saucepan, cook the cauliflower in boiling salted water for 5 mins. Then add the broccoli and cook for 3 mins more. Drain well and transfer to a large ovenproof dish.
  • To make the cheese sauce, melt the butter in a small pan. When foaming, add flour and mustard powder, and cook for 1 min, stirring constantly. Take off the heat and add the milk, a little at a time, stirring constantly to get rid of any lumps. Once half the milk has been added, return to the heat and add the remaining milk. Keep stirring and bring to the boil, then turn down to a simmer and cook for 2 mins, until thickened and smooth. Add most of the cheese and some seasoning then take off the heat and add the chives.
  • Pour the sauce over the vegetables and sprinkle with the remaining cheese. This can be done the day before and kept covered in the fridge. Cook in the oven for 35-40 mins until bubbling, allowing an extra 5-10 mins cooking time if from the fridge.

1/4 cup minced shallot
4 cups milk
1/4 teaspoon salt

1 1/2 cups broccoli florets
1 1/2 cups cauliflower florets

Steps:

  • Steam broccoli and cauliflower until just tender.
  • Preheat oven to 375 degrees and grease a 3 quart baking dish.
  • Cook pasta 2 minutes less than package directions.
  • While pasta cooks, in a medium saucepan over medium heat, melt butter. Ass flour and shallot, and cook 2 minutes, stirring frequently. In a slow stream, add milk,whisking constantly. Increase heat to medium-high and bring to simmer. Cook for 2-4 minutes until thickened.
  • Off heat, add salt and cheeses, stirring until cheese is just melted. Combine pasta with cheese sauce, broccoli and cauliflower, and pour the mixture into a baking dish.
  • Bake until sizzling and lightly browned on top, about 20 minutes. Let stand at least 5 minutes before serving.

1 small head or bundle broccoli, trimmed into florets
1 small head cauliflower or half a large head, trimmed and cut into florets
1 pound whole-wheat macaroni or penne or other short cut pasta
2 cups sour cream or reduced-fat sour cream
1 tablespoon Dijon mustard
1/3 cup finely chopped chives
2 cloves garlic, peeled and grated or crushed into paste
A few drops hot sauce
Freshly ground black pepper
2 1/2 cups grated extra-sharp Cheddar

Steps:

  • Bring a large pot of water to a boil over medium heat. Salt the water and add the broccoli and cauliflower florets. Boil the vegetables for 5 minutes, then remove them with a spider or a strainer and drain. Add the pasta to the water and undercook by about 2 minutes, drain.
  • Meanwhile, combine the sour cream in a large bowl along with the mustard, chives, garlic, hot sauce and salt and pepper, to taste. Add the pasta and cauliflower and 2/3 of the cheese. Stir to combine, then transfer it to a casserole or baking dish and cover with the remaining cheese. Cool and chill for a make-ahead meal.
  • To heat and eat, put the casserole on baking sheet and bake it in the middle of a preheated 375 degree F oven until deeply golden and bubbly, about 40 to 45 minutes.

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a baking dish.
  • Bring a large pot of salted water to a boil. Add cauliflower and cook until tender, 8 to 10 minutes. Remove from heat, drain, and set on paper towels to dry.
