MINT LEMON SYRUP
Steps:
- In a small saucepan over moderate heat, bring the sugar, 1/4 cup water, lemon juice and zest to a boil and cook until the sugar has dissolved and the mixture has reduced by half. Chill in the fridge at least 1 hour and up to 24 hours. Right before serving, stir in the mint and pour over the mangos and berries. Garnish with whole mint leaves.
- BYOC: You will love this syrup so much you will be pouring it over fruit all year long. For something a little different, try using fresh basil instead of the mint. This also makes a fantastic base for a drink. Try a mojito by adding a bit of rum and club soda. Or try adding fresh ginger for a kick of warm spice.

FRESH FRUIT WITH LEMON VERBENA SIMPLE SYRUP

Use a colorful variety of seasonal fresh fruit of your choice: peaches, other types of berries or melons, red seedless grapes, etc. I reduced the amount of sugar from the original 2-1 ratio but please feel free to add more. Lemon verbena is a favorite herb of mine! Recently I made this using galia melon only (see photo).

- Simple syrup: combine the water and sugar in a small pan and bring to the boil.
- Boil mixture until it is reduced by half.
- Stir in the lemon verbena leaves. Set aside to allow verbena leaves to infuse and the mixture to cool completely.
- Salad: Prep the fruit and arrange on a large shallow platter.
- Once the simple syrup is cool, use a fine mesh strainer and drizzle the syrup all over the fruit.
- *Garnish fruit with a few fresh lemon verbena leaves. Or cover and chill until ready to serve.
- *Tip: fresh lemon verbena leaves wilt quickly. Garnish the fruit platter with freshly cut lemon verbena leaves [just] before serving.

- In a medium saucepan, combine the water, sugar, mint leaves and stems or dried mint, and lemon zest. Bring to a boil. Remove from the heat and let stand, covered, for 20 minutes. If using fresh mint, remove it and the lemon zest with a slotted spoon and discard. If using dried mint, strain the syrup.
- Bring the syrup back to a simmer. Remove from the heat and add the berries. Stir gently and then pour into a bowl. Let cool to room temperature. Serve the berries and syrup in bowls topped with the fresh mint sprigs, if using.
