Olive oil, for brushing
One 16-ounce bag frozen broccoli tots, defrosted
1/3 cup grated Parmesan
1/2 cup ricotta cheese
1 cup shredded rotisserie chicken
1 cup frozen broccoli florets, defrosted and chopped
1 cup shredded mozzarella

Steps:

  • Preheat the oven to 425 degrees F. Line the bottom of a baking sheet with parchment and brush with olive oil.
  • In a medium bowl, add the broccoli tots and Parmesan. Break up the tots with your hands or a wooden spoon and mix until combined. Transfer the tot mixture to the prepared baking sheet and use your hands to form the mixture into a circle, making sure it isn't too thick. Bake the crust until golden brown, about 25 minutes. Let cool slightly.
  • Spread the ricotta on the crust and top with the chicken and broccoli. Top with the mozzarella and return to oven until the cheese is completely melted, about 10 more minutes. Let cool for about 5 minutes before serving.

1-3/4 to 2-1/4 cups all-purpose flour
1 pack Fleischmann's® RapidRise® Yeast​
1-1/2 teaspoons sugar
3/4 teaspoon salt
2/3 cup very warm water (120° to 130°F*)
3 tablespoons Canola oil
1 1/3 cups broccoli florets
1/2 to 1 cup pizza sauce
1 to 2 cups 4 to 8 ounces or 125 to 250g shredded mozzarella cheese
5 oz shredded cooked chicken
1 teaspoon Italian seasoning

Steps:

  • Preheat the oven to 425 degrees F. Add in your pizza stone or baking sheet to preheat, too.
  • Mix together one cup of the flour, the Fleischmann's® RapidRise® Yeast​, sugar, and salt to a bowl. Add in the water and oil. Stir until well-combined.
  • Add in 3/4 cup of flour and mix until it comes together. Add a touch more flour if the dough feels too sticky.
  • Knead for about 8 minutes, until the dough feels soft and stretchy. Place in the bowl and cover for 10 minutes.
  • While the dough is rising, blanch your broccoli and set aside.
  • Roll out your dough on a lightly floured surface until it is about 12 inches wide. Roll the ends to form the crust.
  • Spread the sauce around the pizza, making sure not to get it onto the edge crust.
  • Top with the cheese, then with the chicken and broccoli, then sprinkle with the seasoning.
  • Place the pizza on the preheated pizza stone or baking sheet.
  • Bake for 12 - 15 mins or until the cheese is melted and the crust is golden brown.

1 16-ounce package frozen potato-cheese pierogi
1 head broccoli, cut into florets
1/2 cup sour cream
2 tablespoons chopped fresh chives

3/4 cup shredded Monterey Jack cheese (about 3 ounces)
3 tablespoons unsalted butter
1 small red onion, thinly sliced
4 ounces deli-sliced ham, cut into thin strips
Kosher salt and freshly ground pepper

Steps:

  • Melt the butter in a large broiler-proof skillet over medium-high heat. Add the red onion and cook, stirring occasionally, until softened, about 3 minutes. Add the ham and season with 1/4 teaspoon salt and a few grinds of pepper. Cook, stirring occasionally, until the onion starts browning, about 2 minutes. Add the broth and bring to a simmer; cook until the onion softens, about 3 minutes.
  • Reduce the heat to medium low and stir in the pierogi and broccoli. Cover and cook until the pierogi are warm and the broccoli is tender, about 15 minutes. Meanwhile, combine the sour cream, chives and paprika in a small bowl; set aside. Preheat the broiler.

1 (13.8-ounce) can refrigerated pizza crust dough
2 1/2 cups small fresh broccoli florets
1/4 cup very thinly sliced red onion
2 cups shredded fontina cheese
1 1/2 cups shredded mozzarella cheese

Steps:

  • In a medium skillet, melt butter over medium heat. Sprinkle chicken with salt and pepper, and cook for 8 to 10 minutes or until done. Remove from skillet; let cool 5 minutes, and thinly slice. In the work bowl of a food processor, process tomatoes until smooth. Preheat oven to 450°. Spray a large baking sheet with nonstick cooking spray. Unroll dough on prepared pan, and press dough to fit pan. Brush with tomato purée, and top with chicken, broccoli, onion, and cheeses. 6 oz cream cheese, softened
1 cup ham, diced
1 tablespoon onion powder
1 teaspoon salt

3 boneless, skinless chicken breasts

Steps:

  • Preheat oven to 350°F (180°C).
  • Finely chop the broccoli florets, and then transfer to a large bowl.
  • Add the cheddar, cream cheese, ham, onion powder, and mix evenly until combined. Set aside.
  • In a bowl, mix together the salt, pepper, garlic powder, onion powder, oregano, and paprika, then stir to combine.
  • Place the chicken breasts on a cutting board and slice across horizontally, making sure not to cut all the way through.
  • Season both sides of the chicken liberally with the spice mix.
  • Place each chicken breast on a double layer of plastic wrap, then cover with more plastic wrap.
  • Use a meat pounder to thinly pound the chicken breast and form into a rectangular shape.
  • Repeat with the remaining chicken breasts.
  • Lay down two of the flattened chicken breasts into a greased loaf pan lined with parchment paper, slightly overlapping them.
  • Place the ham slices evenly across the bottom and sides, hanging the ham over the sides of the loaf pan.
  • Spread broccoli mixture evenly on top of the ham, pressing it flat into the edges of the pan.
  • Fold over the flaps of ham to completely seal the mixture.
  • Place the third flattened chicken breast on top. Use a fork to tuck in the edges, creating a seal.
  • Bake for 25-30 minutes, until the loaf looks slightly brown and red on top.
  • Cool the loaf in the pan. Release any juices from the pan. Remove the chicken loaf using the parchment paper.

This was inspired by a broccoli cheese stuffed potato recipe I found, but it seemed to be a little labor intensive, so I decided it would work better as pizza. This is an original "sbera007" creation! We were serving 6 so we let our dough rise so it would spread into a jelly roll pan. If using a store bought dough, I would double the dough. Feel free to half the topping for 4 people and use a single store bought dough. Halving the recipe will alter the cooking time a little bit. (NOTE: I included the time for the dough to rise in the recipe time. This will be different if you use a different pizza crust).

1 pizza crust (I use No-Knead Food Processor Thin Crust Pizza Dough)
2 cups broccoli (steamed and chopped)
1/2 lb boneless chicken breast
1 tablespoon olive oil
oregano (to taste)
basil (to taste)
15 ounces part-skim ricotta cheese
1 cup mozzarella cheese (divided)
1 cup cheddar cheese (divided)
1 teaspoon dry mustard
1 teaspoon crushed red pepper flakes (more if you like it hot, less if you don't)

Steps:

  • Preheat oven to 425 degrees Fahrenheit.
  • Prepare dough.
  • While dough is rising or sitting, steam broccoli and cook chicken with olive oil, oregano and basil to taste, until no longer pink.
  • Spread the dough into a prepared jelly roll pan.
  • Bake for about ten minutes.
  • Meanwhile, chop cooled chicken into small chunks and chop steamed broccoli.

  • Saute ground chicken with a little olive oil, salt, pepper, and thyme until cooked.
