2 cups frozen chopped broccoli
1 tablespoon water
1 tablespoon butter
1/4 cup chopped onion
3 tablespoons all-purpose flour
1 can (10-1/2 ounces) chicken broth
2 cups cubed fully cooked ham
1 cup sour cream
1 jar (4-1/2 ounces) sliced mushrooms, drained
Hot cooked noodles

Steps:

  • Place broccoli and water in a 1-qt. microwave-safe bowl. Cover and microwave on high for 2-4 minutes or until the broccoli is tender, stirring once. Drain; set aside and keep warm. , In another microwave-safe bowl, heat butter, uncovered, on high for 20 seconds or until melted. Add onion; cover and microwave on high for 1 minute or until tender. Stir in flour until blended. Gradually stir in broth; mix well. Microwave, uncovered, on high for 3-5 minutes or until thickened and bubbly, stirring once. , Add the ham, sour cream, mushrooms and reserved broccoli; mix well. Cook, uncovered, on high for 2-4 minutes or until heated through, stirring once. Serve over noodles.

This is a great, easy to make, and nutritious casserole. You can add some macaroni pasta or try seasoning the potatoes before you bake. Put this dish in the freezer and bake whenever you're too lazy to cook! Can also be made with leftover cooked chicken.

1 (16 ounce) package frozen French fries
1 (16 ounce) package frozen chopped broccoli
1 ½ cups cooked, cubed ham
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10.75 ounce) can milk
¼ cup mayonnaise
1 cup grated Parmesan cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Spray a 9x13 inch baking dish with cooking spray. Cover bottom of dish with layer of French fries. Add a layer of broccoli, then sprinkle ham evenly over broccoli. In a small bowl mix together soup, milk and mayonnaise. Pour mixture evenly over ingredients in baking dish and sprinkle with cheese.
  • Bake uncovered in preheated oven for 40 minutes.

2 cups broccoli, frozen chopped
1 tablespoon water
1 tablespoon butter
1/4 cup onion, chopped
3 tablespoons flour
10 1/2 ounces canned chicken broth
2 cups cooked ham, cubed
1 cup sour cream
4 1/2 ounces canned mushroom slices, drained
hot cooked noodles

Steps:

  • Place broccoli and water in a 1 quart microwave-safe bowl.
  • Cover and microwave on high for 3 to 5 minutes, or until the broccoli is tender, stirring once.
  • Drain; set aside and keep warm.
  • In another microwave-safe bowl, heat butter, uncovered on high for 20 seconds, or until melted.
  • Add onion, cover and microwave on high for 2 minutes, or until tender.
  • Stir in flour until blended.
  • Gradually, stir in broth; mix well.
  • Microwave, uncovered, on high for 4 to 6 minutes, or until thickened and bubbly, stirring once.
  • Add the ham, sour cream, mushrooms and reserved broccoli; mix well.

1 head broccoli head, cut into florets
2 cups cheddar cheese, shredded
6 oz cream cheese, softened
1 cup ham, diced
1 tablespoon onion powder
1 teaspoon salt
1 teaspoon pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried oregano
1 teaspoon paprika
3 boneless, skinless chicken breasts
6 slices ham

Steps:

  • Preheat oven to 350°F (180°C).
  • Finely chop the broccoli florets, and then transfer to a large bowl.
  • Add the cheddar, cream cheese, ham, onion powder, and mix evenly until combined. Set aside.
  • In a bowl, mix together the salt, pepper, garlic powder, onion powder, oregano, and paprika, then stir to combine.
  • Place the chicken breasts on a cutting board and slice across horizontally, making sure not to cut all the way through.
  • Season both sides of the chicken liberally with the spice mix.
  • Place each chicken breast on a double layer of plastic wrap, then cover with more plastic wrap.
  • Use a meat pounder to thinly pound the chicken breast and form into a rectangular shape.
  • Repeat with the remaining chicken breasts.
  • Lay down two of the flattened chicken breasts into a greased loaf pan lined with parchment paper, slightly overlapping them.
  • Place the ham slices evenly across the bottom and sides, hanging the ham over the sides of the loaf pan.
  • Spread broccoli mixture evenly on top of the ham, pressing it flat into the edges of the pan.
  • Fold over the flaps of ham to completely seal the mixture.
  • Place the third flattened chicken breast on top. Use a fork to tuck in the edges, creating a seal.
  • Bake for 25-30 minutes, until the loaf looks slightly brown and red on top.
  • Cool the loaf in the pan. Release any juices from the pan. Remove the chicken loaf using the parchment paper.
  • Slice into 1-inch (2-cm) slices, and serve!
  • Enjoy!

1 large onion, finely chopped

1/3 cup all-purpose flour
4 cups fat-free milk
2-1/2 cups shredded reduced-fat cheddar cheese
1/4 cup minced fresh parsley
2 teaspoons Dijon mustard
1/2 teaspoon garlic powder
1/2 teaspoon Italian seasoning
1/4 teaspoon pepper
TOPPING:
1/4 cup dry bread crumbs
1 tablespoon butter, melted

Steps:

  • Cook macaroni according to package directions. Meanwhile, place 1 in. of water in a large saucepan; add broccoli. Bring to a boil. Reduce heat; cover and simmer for 4-5 minutes or until crisp-tender., In another saucepan, saute the onion, ham and red pepper in 1 tablespoon butter until vegetables are crisp-tender. Sprinkle with flour; stir until blended. Gradually stir in milk. Bring to a boil; cook and stir for 2 minutes or until thickened., Stir in the cheese, parsley, mustard and seasonings until blended. Drain broccoli and macaroni; stir into cheese sauce. Transfer to a greased 2-qt. baking dish (dish will be full)., Combine bread crumbs and butter. Sprinkle over top. 1 medium diced onion
1/4 cup butter
1 (8 ounce) can mushrooms
1 (8 ounce) can cream of mushroom soup
1 (16 ounce) container sour cream
2 tablespoons flour
1 (16 ounce) package medium egg noodles

Steps:

  • Saute onion butter and ham until onions are clear.
  • Add mushrooms and flour.
  • Add mushroom soup and sour cream.
  • Hheat thru but do not boil.
  • Cook noodles as directed drain but do not rinse; add to sauce.
  • Let set for about 10 minutes with cover on before serving.
