BROCCOLI SALAD WITH LEMON POPPY SEED DRESSING
A fresh, vibrant broccoli salad recipe that is mayo-free and loaded with flavor for all your gatherings!

Steps:
- Add all the ingredients for the lemon poppy seed dressing except for the poppy seeds to a small blender. Blend until completely smooth. Stir in the poppy seeds until well combined. Set aside until ready to use.
- Heat a pot of water on the stove top to boiling and add the broccoli florets to quickly blanch. Leave the florets in the boiling water just for 30 seconds or so. Strain, and immediately rinse with cold water. Allow broccoli to dry to pat it dry with a paper towel
- Transfer the broccoli to a large mixing bowl, along with the remaining ingredients for the salad. Pour in the lemon poppy seed dressing and toss everything together until well combined. Taste the broccoli salad for flavor and add more sea salt, and/or lemon juice to taste.

LEMON-POPPY SEED BROCCOLI SALAD
A delicious, simple, and quick Lemon-Poppy Seed Broccoli Salad combines broccoli, dried cranberries, sunflower seeds, sharp Cheddar cheese, and sliced almonds with a delicious creamy lemon poppyseed dressing.

- OPTIONAL BLANCH: Remove the stems from the broccoli and cut them into very small pieces. If you want to blanch the broccoli, see Note 1. I like to use a salad spinner and then let it sit out for a while. If it's even a tiny bit wet, the salad becomes too watery.
- PREP: If not blanching broccoli, cut into very small pieces. If desired, toast the almonds. (See Note 2.) Cut the cheese into tiny cubes.
- SALAD: Add the completely dry broccoli, cranberries, almonds, sunflower seeds, and sharp Cheddar cheese to a large bowl.
- DRESSING: In a small bowl, whisk together the mayo, red wine vinegar, sugar, lemon zest, and lemon juice. Add salt and pepper to taste. Add more sugar (1-2 more tablespoons) or more lemon to personal preference. Whisk in the poppy seeds.
- DRESS THE SALAD: Toss the dressing with the salad and place in the fridge to marinate for 15-30 minutes. Taste and adjust any flavors to personal preference. Don't shy away from adding more salt and pepper until the flavors sing. Toss once more and enjoy.
- STORAGE: Salad is best eaten the same day it is made.

- Dressing: Combine all the ingredients for the dressing in a food processor starting with 3 tablespoons of honey and a big pinch of salt and pepper. Blend until the dressing is smooth. Taste and adjust with additional honey or salt and pepper as desired. I prefer this one with around 3½ tablespoons of honey.
- Broccoli Salad: Steam the broccoli if you'd like, I did because I wanted it to have a more vibrant color. Combine the ingredients for the salad in a large bowl. Dress the entire salad if you'll finish it all within 24 hours. Otherwise, mix just what you need and keep the two separate, they'll last much longer this way.
