BROCCOLI SALAD WITH LEMON POPPY SEED DRESSING

Steps:
- Add all the ingredients for the lemon poppy seed dressing except for the poppy seeds to a small blender. Blend until completely smooth. Stir in the poppy seeds until well combined. Set aside until ready to use.
- Heat a pot of water on the stove top to boiling and add the broccoli florets to quickly blanch. Leave the florets in the boiling water just for 30 seconds or so. Strain, and immediately rinse with cold water. Allow broccoli to dry to pat it dry with a paper towel
- Transfer the broccoli to a large mixing bowl, along with the remaining ingredients for the salad. Pour in the lemon poppy seed dressing and toss everything together until well combined. Taste the broccoli salad for flavor and add more sea salt, and/or lemon juice to taste.

- Add clean, dry broccoli pieces into a large mixing bowl. Add bacon, onions, cherries, almonds, sunflower seeds and cheese.
- To make the salad dressing, in a small mixing bowl, whisk together the yogurt, sugar, vinegar, lemon juice, poppy seeds, lemon zest and salt until combined. Pour the desired amount dressing over the salad, toss to combine. Serve immediately.

- In a blender or food processor, combine sugar, lemon juice, onion, mustard, and salt. Process until well blended. With machine still running, add oil in a slow, steady stream until mixture is thick and smooth. Add poppy seeds, and process just a few seconds more to mix.
- In a large serving bowl, toss together the romaine lettuce, shredded Swiss cheese, cashews, dried cranberries, apple, and pear. Pour dressing over salad just before serving, and toss to coat.
