HOMEMADE TERIYAKI SHRIMP
If you want to serve this dish on rice, you need to start the rice first, because it comes together quickly! I used coconut aminos, a sub for soy sauce, that is a bit thinner in consistency and sweeter in taste than soy sauce. Sweet and full of umami, this recipe works as a light lunch, or as a main, with some steamed broccoli or a salad as a side.

Steps:
- Place frozen shrimp in a single layer on a metal pan and set aside.
- Combine coconut aminos, ginger, garlic, brown sugar, rice wine vinegar, and sesame oil in a large skillet. Bring to a boil over medium heat, 3 to 4 minutes.
- Add shrimp to the boiling sauce in a single layer and cook for 2 to 3 minutes. Turn and cook until shrimp curls into a "C" shape and changes color from white and pink, 2 to 3 minutes.
- Combine cornstarch and water in a small bowl, stirring to remove lumps. Add slurry to the skillet and cook, stirring briskly, until sauce is slightly thickened, about 1 minute. Remove from heat. Serve over hot cooked rice and garnish with green onions and sesame seeds.

- Spray skillet with cooking spray, heat over medium-high heat. Add broccoli and garlic together. Saute, stirring pretty constantly for about 3-4 minutes.
- Add the teriyaki sauce and sprinkle with pepper. Combine well. Stir and cook till desired doneness. I leave mine a good 10 minutes because I like my broccoli extra soft, but if you like yours with a crunch still, only cook it a couple more minutes.

- Preheat the oven to the hottest temperature, and line a non-stick oven tray with baking paper.
- Wash the broccoli, dry thoroughly with paper kitchen towelling, place it in a large mixing bowl, add the chopped garlic, season with pepper, sprinkle with teriyaki sauce and toss to coat thoroughly.
- Place the broccoli in a single layer on the prepared oven tray, spray lightly with olive oil, turn it over and spray lightly again.
- Bake for 6 minutes; turn broccoli and bake for a further 6 minutes, or until just tender.

- Preheat oven to high broil.
- Cover a baking sheet with foil, and add the chopped broccoli and olive oil. Toss until broccoli is covered in oil.
- Sprinkle with salt.
- Place in the oven and let broil for 4-5 minutes, flipping broccoli halfway through.
- Drizzle the honey over the beef. And cook until desired doneness (I like mine pink in the middle).
- Remove from heat.
- In a small bowl, combine the teriyaki sauce, soy sauce, and honey until well combined.
- Combine the beef and broccoli and drizzle the teriyaki glaze on top.
- Serve immediately.
- Top with optional green onions and serve over cooked brown rice (optional)

- Blanch the broccoli and plunge into ice cold water to stop the cooking. Drain and set aside.
- Prepare the teriyaki by diluting the arrowroot in 2 tbsp of cold water.
- Heat the remaining water, soy sauce, garlic, and ginger. Add the honey and stir to dissolve. Add the arrowroot mixture and the pepper. Continue stirring to thicken. There should be about 2/3 cup sauce.
- Toss the broccoli with 1/3 cup of sauce and serve.

And this way, you can control the fine-tuning of the flavors and texture. This teriyaki sauce is great with meaty, flaky fish and asparagus, mushrooms and/or tofu with leeks, chicken with leeks or scallions, beef and broccoli-on and on. - For the teriyaki sauce: Combine all ingredients except cornstarch in a small pot and bring to low boil, then reduce heat. Whisk together the cornstarch in a few tablespoons water in a small bowl, then add to sauce to thicken to coat spoon. Remove from heat.
- For the stir-fry: Place meat in freezer for a few minutes to firm, then trim as needed and halve the tenderloin lengthwise. Press into an even layer and thinly slice meat on bias resulting in thin and uniform strips of pork. Pat meat dry and season.
- Heat a large skillet over high heat with oil to coat. When oil smokes and ripples, add pork in 2 batches if necessary to avoid crowding, then cook, stirring occasionally, until browned in places and crispy at edges; remove to plate and repeat if necessary.
- Add a bit more oil if pan looks dry and stir-fry the leeks 1 to 2 minutes, then add garlic and peppers and add meat, broccolini, if using, and pour over 2/3 cup teriyaki sauce to combine.
- Serve the teriyaki stir-fry with rice and garnishes of choice.
