BROCCOLI-HAM HOT DISH

- Preheat oven to 350°. Cook broccoli according to package directions; drain. Spoon rice into a 13x9-in. baking pan. Place broccoli over rice. , Melt butter in a large skillet. Sprinkle 2 tablespoons of melted butter over the bread crumbs and set aside. In remaining butter, saute onion until soft. Add flour, salt and pepper, stirring constantly until blended; stir in milk. Bring to a boil; cook and stir until thickened, about 2 minutes. Add ham. , Pour over rice and broccoli. Sprinkle with crumbs. Bake until heated through, about 30 minutes. Sprinkle with cheese; let stand 5 minutes before serving.

HAM AND BROCCOLI QUICHE

- Preheat the oven to 400 degrees F (200 degrees C).
- Lightly flour the bottom of a 9-inch pie or quiche pan and fit crust into the pan, all the way up to the edge. Lightly prick the bottom and sides of the pastry, 1 1/2 inches apart.
- Cut parchment paper to fit the bottom of the pan, place parchment on the pastry, and put pie weights or dried beans on top of the parchment.
- Bake on the center rack of the preheated oven for 10 minutes. Place pan on a wire rack, remove the weights and the paper, and allow to cool completely, about 30 minutes.
- Meanwhile, fill a large bowl with ice and cold water. Bring a large pot of lightly salted water to a boil. Add broccoli and cook uncovered until softened, about 5 minutes. Drain in a colander and immediately immerse in ice water for several minutes to stop the cooking process. Drain.
- Reduce oven temperature to 375 degrees F (190 degrees C).
- Break eggs into a large bowl and whisk until yolks and whites are combined. Add milk, salt, nutmeg, and pepper, whisking until well combined.
- Sprinkle broccoli, ham, Gruyere cheese, and chives evenly over the crust. Pour egg mixture over the filling.
- Set quiche on a baking sheet and place on the center rack of the oven. Bake until egg mixture is set, 45 to 50 minutes. Insert a knife in the center of the quiche to test for doneness; quiche is done when the knife comes out clean. Pace pan on a wire rack to cool for about 10 minutes. Serve warm.

- Place cooked chicken on top of broccoli in bite-sized pieces.
- Combine other ingredients and pour over this base.

BRISKET HOTDISH
This is my Midwest Jewish mashup for a low-maintenance crowd-pleasing Passover main dish. A hotdish is a meal in a dish with a protein (brisket, you have to have it on Passover!), vegetables (carrots, celery and peas), starch (potato smiles) and something to bind it together (the thick stewy braising liquid) ...it's rich and comforting but not overly heavy thanks to all of the veggies. Passover happens in Spring and it's still really cold where I live, so this warm cozy dish just makes sense!

- Season the brisket on all sides with salt and pepper.
- In a large oven-safe braiser, heat the oil over medium-high heat. Add the brisket and cook, turning occasionally, until browned, about 10 minutes. Reduce the heat to medium. Add the leeks, carrots, and celery. Season with salt. Cook, stirring often, until softened, about 10 minutes. Add the garlic and stir until fragrant, about 1 minute. Add the tomato paste and stir to toast, 1 minute. Add the wine to deglaze and use a wooden spoon to scrape any brown bits from the bottom of the pan. Bring the wine to a boil and cook for 3 to 5 minutes. Add 2 1/2 cups of stock, the tomatoes and rosemary. Bring back to a boil, then reduce the heat to medium-low. Simmer, covered, stirring occasionally, until the beef is tender, about 2 hours.
- Place an oven rack in the middle position. Preheat the oven to 400 degrees F.
- Remove the lid from the brisket and continue to cook until the sauce is reduced and thickened to a stew-like gravy, 20 to 30 minutes. Turn off the heat. Using two forks, break up the meat into smaller chunks, but not shredded. Add the peas and stir to combine. Arrange the potato smiles on top in concentric circles.
- Bake until golden, steamy and bubbling, 45 to 50 minutes. Let cool slightly. Garnish with the parsley and chives. Serve with ketchup, if desired.
MEXICAN HOTDISH
This is a Midwestern version of Mexican lasagna. It's easy to prepare and even easier to tailor to your taste. Alter this by using different types of Doritos®, chiles, and by adding additional seasoning to spice it up. Serve with pico de gallo and sour cream.

- Preheat oven to 350°F (180°C).
- Finely chop the broccoli florets, and then transfer to a large bowl.
- Add the cheddar, cream cheese, ham, onion powder, and mix evenly until combined. Set aside.
- In a bowl, mix together the salt, pepper, garlic powder, onion powder, oregano, and paprika, then stir to combine.
- Place the chicken breasts on a cutting board and slice across horizontally, making sure not to cut all the way through.
- Season both sides of the chicken liberally with the spice mix.
- Place each chicken breast on a double layer of plastic wrap, then cover with more plastic wrap.
- Use a meat pounder to thinly pound the chicken breast and form into a rectangular shape.
- Repeat with the remaining chicken breasts.
- Lay down two of the flattened chicken breasts into a greased loaf pan lined with parchment paper, slightly overlapping them.
- Place the ham slices evenly across the bottom and sides, hanging the ham over the sides of the loaf pan.
- Spread broccoli mixture evenly on top of the ham, pressing it flat into the edges of the pan.
- Fold over the flaps of ham to completely seal the mixture.
- Place the third flattened chicken breast on top. Use a fork to tuck in the edges, creating a seal.
- Bake for 25-30 minutes, until the loaf looks slightly brown and red on top.
- Cool the loaf in the pan. Release any juices from the pan. Remove the chicken loaf using the parchment paper.
- Slice into 1-inch (2-cm) slices, and serve!
