Steps:
- Preheat broiler. Place doughnuts on small baking sheet; set aside. Stir butter and brown sugar in heavy medium skillet over medium heat until butter is melted. Boil 1 minute, stirring occasionally. Remove from heat. Mix in lemon juice and spices, then rum; stir to blend. Cool caramel sauce 3 minutes.
- Meanwhile, broil doughnuts just until hot and bubbly, watching closely to avoid burning, 1 to 2 minutes per side. Transfer doughnuts to 2 plates. Toss bananas with caramel sauce in skillet. Top doughnuts with scoop of ice cream, flattening slightly in center. Spoon bananas and caramel sauce over. Sprinkle with nuts and serve.

- Mix all together in mixer until blended and pour into Gallon Pitchers. Place in cooler for transport. Line up 100 martini glasses, rim glasses with Banana Praline dust, if time allows, prior to service. Pour 3 1/2 ounces of drink into glasses, float 1/2-ounce of 151 on top and light with a torch. Add ice cube (frozen banana with orchid).

- Preheat broiler. Peel bananas and slice them crosswise into 3/4-inch thick slices. Mix the brown sugar and lime juice and toss this with bananas. Spread the sliced bananas in a shallow baking pan and broil, as close to the heat source as possible, until the sugar has melted into a glaze - 2 to 3 minutes. Transfer to a pretty serving bowl and serve immediately - topped with sour cream and nuts if you wish.

- Peel Bananas and place in a non-stick skillet. Pour syrup over the bananas and bring to a simmer.
- Continue to cook bananas, spooning syrup over the top for 3 minutes.
- Turn off heat and cover to keep warm.

- Preheat oven to 325°. Line a 13x9-in. baking pan with foil, letting ends extend up sides; grease foil. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in oil and vanilla. In another bowl, whisk flour and cocoa; gradually beat into creamed mixture., Spread into prepared pan. Bake 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack., For fudge sauce, in a large saucepan, melt butter over medium heat. Stir in sugar, cocoa, water, corn syrup, vanilla and salt until blended. Bring to a boil. Cook, uncovered, 3-5 minutes or until sugar is dissolved and sauce is smooth, stirring frequently., Lifting with foil, remove brownies from pan. Cut into eighteen 3x2-in. rectangles. Top each brownie with ice cream, fudge sauce and a cherry. Freeze option: Securely wrap and freeze cooled brownies in plastic wrap and foil. To use, thaw at room temperature.

BROILED PEACHES à LA MODE
I've never appreciated pies the way I know a lot of other folks do. I love chocolate so much that I always feel if I'm going to eat something fattening, I want it to be super-decadent-and pies, to me, are not. If I'm going to eat something that tastes like fruit, I figure I might as well just eat fruit and save the additional calories to later get my chocolate fix. Then I started cooking fruit more, and it totally changed my view. Granted, I make fruit much cleaner (as in healthier) than putting it in pies, but there's something really satisfying about a baked peach or a roasted grapefruit that just doesn't come across in uncooked fruit. This makes a hearty amount, so it's perfect for when you're craving something sweet, and lots of it. If you want just a little something, I'd recommend sharing it with a buddy.

- Preheat the broiler. Line a small baking sheet with foil. Lightly mist the foil with spray.
- Cut each peach in half, crossing over the stem. Remove the pit. (If the peach is ripe, this should be easy to do with your fingers. If you have trouble, use a spoon to gently dig it out, being careful not to remove too much of the flesh.) - Preheat broiler, with rack 6 inches from heat source. Mix ricotta and nutmeg in a small bowl. Mix sugars, salt, and vanilla in a small bowl. Cut bananas diagonally 1/4 inch thick, keeping slices in order as you cut. Discard tips.
- Spread 1/4 cup ricotta mixture in each of four 5-inch-wide by 1-inch-deep baking dishes. Fan 1 banana around edge of each dish, creating a circle. Gently press bananas into ricotta mixture. BROILED BANANAS WITH LEMON AND SUGAR
