In 2010, Sam Sifton, who was then The New York Times restaurant critic, made a list of the 15 best things he ate in New York City that year. For breakfast, he chose a dish from Pulino's in SoHo, which is now closed. This quick-cooked grapefruit is not so much a dish as a magic trick, the fruit covered with a caramel of muscovado sugar and mint that transforms it into ambrosia.

1 grapefruit
1/3 cup muscovado sugar
2 teaspoons finely chopped mint

Steps:

  • Cut the grapefruit in half and thoroughly loosen all sections with a knife. Dry the cut surface with a paper towel.
  • Put the sugar in a 10-inch heavy skillet and place over medium-high heat. Add 2 tablespoons water to the pan and swirl it into the sugar. Continue swirling until the sugar melts and darkens slightly, approximately 3 to 5 minutes; do not let it burn. Immediately add the grapefruit halves, cut sides down, and turn off the heat.
  • Move the grapefruit in the pan to coat the surface. Using tongs or two spoons, transfer to serving dishes, cut sides up. Sprinkle with mint and serve immediately.

Sweeten up your morning with this nifty way to prepare grapefruit! This is the only way my mother could convince me to eat my grapefruit, and I still eat it this way.

4 grapefruit
1 tablespoon ground cinnamon
1 tablespoon white sugar
4 teaspoons butter

Steps:

  • Preheat your oven's broiler.
  • Cut the grapefruits in half, and use a small serrated knife to cut out the sections in the halves. Spoon the sections and juice into a bowl, then scrape out all of the remaining thick skins and pulp. Spoon the sections from the bowl back into the halves. This is best done one half at a time.
  • Sprinkle sugar and cinnamon over the top of each grapefruit half, adjusting as you see fit. Dot with butter. Place the halves on a cookie sheet.
  • Broil for 3 to 5 minutes, until the butter is melted and sugar is starting to turn brown.

Steps:

  • Preheat the oven's broiler and set the oven rack about 6 inches from the heat source.
  • Place grapefruit halves, cut sides up, onto a baking sheet; sprinkle each with about 1 1/2 tablespoon of brown sugar.
  • Broil the grapefruit until the brown sugar has melted and begun to bubble, 3 to 8 minutes. Let cool for a few minutes before eating warm.

Fresh ginger and coconut sugar top grapefruit halves and are broiled until caramelized and unbelievably delicious. Top with toasted coconut to take them over the top. Perfect for a special breakfast or brunch, but also ideal as a healthy(ish) dessert!

1/2 cup dried coconut chips or shredded coconut
2 grapefruits (I like Texas Rio or other Texas grapefruits for their sweetness)
1/4 cup plus 4 teaspoons coconut sugar (divided)
2 teaspoons grated fresh ginger

Steps:

  • Preheat oven to 325 degrees Fahrenheit. Spread coconut on a cookie sheet and bake, stirring occasionally, until golden brown and fragrant, about 5-6 minutes. Remove from oven and set aside.
  • Heat oven broiler on high. Cut your grapefruits in half and place them cut-side-up on a rimmed cookie sheet. If they do not sit flat, cut a little off of the bottoms of the halves to create a flat surface.
  • Place 1/4 cup coconut sugar in a small bowl. Add the ginger and rub the ginger into the sugar with your fingers.
  • Crumble the gingered sugar evenly over each grapefruit half. Sprinkle 1 additional teaspoon coconut sugar over the tops of each half, taking care to cover any spots couldn't cover with the gingered sugar. Place in oven directly under broiler and broil until the sugar is bubble, melted, and golden in spots, about 5 minutes (but the time can really vary depending on your oven, so keep an eye on them from the get go and know it could take anywhere from 2 - 8 minutes).
  • Remove from oven and sprinkle each half with the toasted coconut. Serve with spoons (serrated grapefruit spoons are great if you have them!)

Broiled Grapefruit With Brown Sugar and Flaky Salt image

A classic at a fancy breakfast or brunch, the best broiled grapefruits have a glossy caramelized topping covering sections of the warm, juicy citrus. This recipe also includes a little cinnamon for a heady fragrance, and a touch of sea salt, which softens the bitterness of the grapefruit peel. It's best served warm from the oven, when the brown sugar is still melted and syrupy. Ruby or pink grapefruits make for the prettiest presentation, but white ones work just as well, and have a livelier, more acidic flavor.

2 grapefruits, preferably pink or ruby
4 tablespoons light brown sugar
2 tablespoons unsalted butter, melted
Honey, for drizzling

Steps:

  • Move the rack 4 inches away from the broiler, and turn it on.
  • Halve the grapefruits through their equators. Using a paring knife or a grapefruit knife, cut the sections away from the membranes and pith so they are easy to spoon up. Place grapefruit halves, cut-side up, on a baking sheet. Sprinkle each grapefruit half with 1 tablespoon brown sugar, then drizzle with melted butter and a little honey. Sprinkle cinnamon over the tops if you like.
  • Broil grapefruit until the sugar melts and caramelizes, 2 to 5 minutes. (Broilers vary a lot so watch carefully to make sure they don't burn.) Sprinkle with flaky sea salt, and serve immediately.
