GRILLED SALMON STEAKS
Steps:
- Prepare grill by lighting 4 quarts of charcoal (1 starter chimney's worth), or turning gas grill to medium-high.
- Examine steaks for pin bones by rubbing fingers over surface of meat. If found, remove with bone tweezers or pliers reserved for culinary uses.
- Using a sharp paring or boning knife, trim bones from the cavity side of the steak. Trim the stomach flaps so that 1 side is missing about 2 inches of skin and the other, 1 inch of meat. Roll the skinless section up into the hollow of the cavity, then wrap the other around the outside to form a round resembling a filet mignon. Tie in place with 2 passes of butcher's twine. (Do not tie it too tight or fish will pop out during cooking.)
- Combine cumin, coriander, fennel and peppercorns on a double thick piece of aluminum foil and toast over grill, shaking gently until seeds become fragrant. Crush seeds in mortar and pestle or pour into spare pepper grinder. Coat steaks lightly with oil, season with salt, then liberally grind toasted seeds on both sides of steaks.
- Quickly wipe hot grill grate with a rag or towel dipped in a little Canola oil, then grill fish to medium rare, about 3 minutes per side. (Fish should be well colored on the outside and barely translucent at the center.
- Serve steaks alongside simple salad dressed with "Veni, Vedi, Vinaigrette."

- Coat each salmon fillet with the olive oil (just enough to make it shine, not drip) and salt and pepper.
- Preheat grill to medium-high heat and place the salmon skin side up, (even if the skin has been removed) this is VERY important. Then close the lid and allow to cook about 5 to 7 minutes. Check the grill to make sure there are no flame flare-ups and the salmon is cooking evenly, and let cook another 3 to 4 minutes. You are going to let the fish cook about 90 percent on this side. After about 8 to 9 minutes the salmon should turn over easily and allow to finish another 3 to 4 minutes. Remove from grill and serve with your favorite side dishes. The entire cooking time should be about 10 to 12 minutes.
EASY BROILED SALMON

- Heat the broiler on high and set an oven rack directly below the heating element (4 inches below). Line a large rimmed broiler-safe baking sheet with foil (for easy cleanup).
- Generously spray both sides of the salmon fillets with olive oil.
- Place the fish fillets in the pan, skin side down. Sprinkle their tops with kosher salt, black pepper, garlic powder, and dried thyme.
- Lightly spray the tops again, to help keep the spices (especially the thyme) moist and prevent them from scorching under the broiler.
- Broil the salmon until opaque and cooked through, about 4 minutes. Serve immediately.

- In a small mixing bowl whisk well together light olive oil, lime juice, lime zest, honey, garlic, salt, and pepper.
- Place salmon fillets in a gallon size resealable bag* then pour marinade over salmon (be sure marinade is coating all sides of the salmon pieces), press out excess air from the bag and seal.
- Let rest at room temperature 20 minutes to 30 minutes (no longer).
- Align oven rack in center of oven. Preheat broiler to high heat for about 5 minutes.
- Meanwhie line a rimmed baking sheet with aluminum foil and spray with vegetable oil cooking spray.
- Remove salmon from marinade and align on baking sheet, leaving some space between each piece. Sprinkle tops evenly with cumin and coriander.
- Place salmon in oven (check on it frequently throughout broiling). Broil in preheated oven about 4 minutes then if needed tent with foil to prevent excess browning. Continue to broil about 3 - 6 minutes longer until cooked to desired doneness in center.**
- Remove from oven and sprinkle with cilantro and serve. If you want the salmon a little more tart you can serve with lime wedges for spritzing.

- Preheat the oven's broiler and set the oven rack about 6 inches from the heat source. Line a jelly roll pan with aluminum foil, and spray with nonstick spray.
- Place garlic and olive oil in a small microwave safe bowl and cook on High for 1 1/2 minutes. Melt the butter in a saucepan over low heat, and stir in the garlic mixture. Remove from heat; stir in the Worcestershire sauce, lemon juice, white wine, black pepper, garlic salt, and fines herbs.

- Rinse the salmon steaks and pat dry with paper towels.
- In a shallow dish, combine the worcestershire sauce, mustard, tabasco, salt and pepper and stir with a fork to combine.
- Set the salmon steaks in the dish and turn so that they are evenly coated with the mixture.
- Let stand for 15 minutes.
- Set the oven rack 3 to 4 inches below the element and preheat the broiler.
- Line the broiler pan or baking sheet with a piece of foil and lightly oil the foil.
- Using tongs, take the salmon steaks from the marinade, allowing excess to drip off, and arrange them on the foil with at least an inch between them; reserve the marinade.
- Broil the salmon until lightly browned, 3 to 5 minutes.
- Take the pan from the oven, turn the steaks and spoon on some of the reserved marinade.
- Continue broiling until the salmon is just barely opaque through the thickest part (cut to test), 3 to 5 minutes longer.
- Transfer the salmon steaks to individual plates, sprinkle with the minced parsley and serve.
BROILED SALMON
My husband loves Salmon and this is a quick and easy way to make a great supper. Just throw it together with a spinach salad with balsamic vinaigrette or your favorite fresh green. Also nice with hot rolls or garlic Vrench bread. Tips- Stay by your timer. Especially if you are not used to broiling. When it is ready to turn or take out, it is ready. You can by the Salmon pre-seasoned or season it from below.

Many people fear the broiler because they don't know how to use it, or they're worried they'll overdo it and end up with a scorched dinner. - In a medium serving bowl, toss together the herbs, scallions, red-pepper flakes, lemon juice and 2 tablespoons of olive oil, and season to taste with salt and pepper. Season with more lemon or oil as needed until the leaves look glossy. Set aside.
- Heat the broiler with a rack 6 inches from the heat source.
- In a small bowl, mix the soy sauce and mustard until smooth. Add the asparagus to a large sheet pan, toss with the remaining 1 tablespoon of oil, then season well with salt and pepper. Move the asparagus to the sides, and place the salmon skin side down in the center. Season the salmon with salt and pepper, brush the tops and sides with the soy mixture, then toss the asparagus in the rest of the soy mixture. (Use a paper towel to wipe off excess soy on the sheet pan, as it will smoke.)
- Broil until the salmon is opaque with a deep brown crust, about 6 to 8 minutes for medium rare, and 8 to 10 minutes for medium, depending on the strength of your broiler and the thickness of the salmon. (Reduce cooking time by 1 to 2 minutes for thinner fillets.) If it looks like it's browning too quickly or smoking excessively, move to a lower rack to finish cooking. Top the salmon and asparagus with the herb salad or serve on the side with a final round of pepper.
