BROILED TERIYAKI SALMON

2 lbs. fresh salmon (about 1 inch in thickness (you can cut into serving sizes or larger pieces))
1 cup favorite teriyaki marinade (I use Trader Joe San Soyaki)
1 Tbsp. dried ginger
1/3 cup dark brown sugar

Steps:

  • In a small bowl, combine the teriyaki sauce, dried ginger, and dark brown sugar; whisk together. Pour into a ziploc bag; add the salmon.
  • Preheat the broiler to high. Place the salmon on a prepared (sprayed) broiler pan or baking sheet. [Toss out the marinade]
  • Broil for 5-6 minutes, flip, and then broil for another 5-6 minutes more. (With skin, I broil for about 8-10 minutes total, skin-side down. It will be a little darker on top than if you are flipping it).
  • Remove and serve!

Simple salmon cooked under the oven's broiler with a homemade teriyaki glaze. I really like how well teriyaki flavor pairs with salmon but store-bought teriyaki sauce is so thin and doesn't stay on but runs underneath the fish. I came up with this homemade version that is more of a glaze that stays on the fish.

1 ¼ cups water, divided
2 tablespoons cornstarch
¼ cup soy sauce
¼ cup brown sugar
½ teaspoon sesame oil
1 clove garlic, minced
1 ½ pounds salmon fillets
1 medium green onion, thinly sliced
2 teaspoons toasted sesame seeds

Steps:

  • Combine 1/4 cup cold water and cornstarch in a small bowl with a lid. Seal and shake until cornstarch has dissolved. Set aside.
  • Combine remaining 1 cup water, soy sauce, brown sugar, sesame oil, and garlic in a saucepan and bring to a boil over medium-high heat. Reduce heat to a simmer and stir in the cornstarch mixture. Simmer until sauce has thickened, about 5 minutes. Remove from heat. Measure out 1/2 cup of teriyaki glaze and set aside.
  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler to low. Place salmon on a foil-lined baking sheet. Brush on all sides with teriyaki glaze.
  • Broil salmon for 12 minutes. Turn broiler to high. Brush reserved glaze over the top. Broil on high until salmon flakes easily with a fork, about 3 minutes. Serve garnished with green onion and sesame seeds.

1/4 cup no-salt-added chicken broth
1/4 cup sake or 1/4 cup dry white wine
2 tablespoons sugar
2 tablespoons gingerroot, peeled, grated
2 tablespoons low sodium soy sauce
16 ounces salmon fillets, skinned (about 1/2 inch thick)
vegetable oil cooking spray

Steps:

  • Combine first 5 ingredients in a small saucepan; bring to a boil, and cook over medium-high heat 5 minutes or until slightly thickened, stirring occasionally. Strain and discard gingerroot. Let cool.
  • Brush both sides of fillets with soy sauce mixture. Place fillets on a rack coated with cooking spray; place rack on a broiler pan. Broil 4 to 5 inches from heat 3 minutes.
  • Turn fillets over, and baste with soy sauce mixture. Broil an additional 2 minutes or until fish flakes easily when tested with a fork. Baste with soy sauce mixture.

1 cup soy sauce
1/4 cup honey
2 tablespoons fresh lemon juice or mild vinegar
1 inch peeled fresh ginger, sliced
3 garlic cloves, smashed
2 pounds boneless salmon fillet, pin bones removed

Steps:

  • Whisk the soy, honey, and lemon juice together in a large enough dish to fit the salmon. Stir in the ginger and garlic. Place the salmon, skin side up, in the sauce and marinate for at least 10 minutes or up to 30 minutes.
  • Preheat a broiler or prepare coals to very hot in a grill. Remove the salmon from the marinade, pat it dry with paper towels, and place it skin side down on an oiled pan or grill grate. Cool until it is slightly firm to the touch, 10 to 15 minutes, depending on thickness. While the salmon is cooking, brush it a couple of times with the marinade to use it all up. Immediately remove the skin while the fish is hot. Serve.

4 (8-ounce) salmon fillets

Steps:

  • Coat each salmon fillet with the olive oil (just enough to make it shine, not drip) and salt and pepper.
  • Preheat grill to medium-high heat and place the salmon skin side up, (even if the skin has been removed) this is VERY important. Then close the lid and allow to cook about 5 to 7 minutes. Check the grill to make sure there are no flame flare-ups and the salmon is cooking evenly, and let cook another 3 to 4 minutes. You are going to let the fish cook about 90 percent on this side. After about 8 to 9 minutes the salmon should turn over easily and allow to finish another 3 to 4 minutes. Remove from grill and serve with your favorite side dishes. The entire cooking time should be about 10 to 12 minutes.

½ cup apple juice
2 tablespoons brown sugar, or more to taste
2 tablespoons balsamic vinegar
½ teaspoon freshly cracked black pepper
3 cloves garlic, minced
2 (6 ounce) fillets salmon

Steps:

  • Whisk teriyaki sauce, apple juice, brown sugar, vinegar, pepper, and garlic together in a small bowl.
  • Place salmon fillets in a glass baking dish. Pour marinade over top, cover, and refrigerate for 4 to 6 hours.
  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Remove salmon fillets from the marinade and shake off excess. Pour marinade into a small saucepan and bring to a boil. Reduce heat to medium-low and simmer until reduced, about 5 minutes.
  • At the same time, grill salmon fillets on the preheated grill until fish flakes easily with a fork, 3 to 4 minutes per side.
  • Serve fillets with reduced marinade drizzled over top.

1/2 cup vegetable oil
1/4 cup lemon juice
1/4 cup soy sauce
1 teaspoon ground mustard
1 teaspoon ground ginger
1/4 teaspoon garlic powder
4 salmon steaks (6 ounces each)

Steps:

  • In a large resealable plastic bag, combine the first six ingredients.
  • Set aside 1/2 cup for basting and refrigerate.
  • Add salmon to remaining marinade; turn to coat.
  • Cover and refrigerate for 1-1/2 hours, turning once.
  • Drain and discard marinade.
  • Broil 3-4 inches from the heat for 5 minutes. Spoon reserved marinade over fish; turn and broil for 5 minutes or until fish flakes easily with a fork.
  • Spoon marinade over fish.
  • Yield: 4 servings.
  • **NOTE**.
  • Marinating time is not included in prep time, as I don't consider that "active work time".

2 fillets salmon
2 oz honey
1 handful sesame seed
½ cup soy sauce
½ lemon, juiced
1 oz ginger, chopped
1 red chili, sliced
4 cloves garlic, minced
1 pinch sea salt
sesame seed, to taste
spring onion, to taste
red chili, to taste

Steps:

  • Cut the salmon into bite-size cubes. Set aside.
  • Prepare the marinade by mixing the soy sauce, lemon juice, ginger, chilli, garlic, and sea salt together.
  • Mix the salmon into the marinade, cover, and marinate for 15-30 minutes.
  • In a large pan with a little oil, pour in the marinade and add the honey and sesame seeds.
  • Mix together until it starts to bubble and gets thicker/saucier.
  • Add the salmon and fry for a couple of minutes on each side.
  • Take off the heat and garnish with more sesame seeds, spring onion, red chilli, and cocktail sticks.
  • Enjoy!
