Time 8h

Yield 12

Number Of Ingredients 13

1 (3 ounce) package lime flavored Jell-O® mix
1 (3 ounce) package orange flavored Jell-O® mix
1 (3 ounce) package strawberry flavored Jell-O®
3 cups boiling water, divided
3 cups cold water, divided
1 cup canned pineapple juice
1 (.25 ounce) package unflavored gelatin
2 ½ cups graham cracker crumbs
½ cup butter, melted
½ cup brown sugar
2 cups chilled heavy cream
½ cup white sugar
1 teaspoon vanilla extract

Steps:

  • Place lime, orange, and strawberry gelatin mixes into 3 separate 9x9-inch glass dishes.
  • Pour 1 cup boiling water into each flavor of gelatin mix; stir the gelatin until dissolved.
  • Pour 1 cup cold water into each flavor of gelatin, stir to combine, and refrigerate the 3 flavors of gelatin until set, at least 4 hours.
  • Heat pineapple juice in a saucepan until hot but not simmering. Stir unflavored gelatin into pineapple juice until dissolved. Refrigerate pineapple juice mixture until cool and thickened, about 30 minutes. Stir occasionally.
  • Mix graham cracker crumbs, melted butter, and brown sugar together in a bowl. Set 1 cup of crumb mixture aside for garnish. Press remaining 2 cups crumb mixture into the bottom of a 9x13-inch cake pan to make a crust.

  • Cut the different flavors of gelatin into cubes. Use a thin spatula to lift the cubes away from the bottom of the dish and loosen them.
  • Very gently fold the thickened pineapple juice and gelatin cubes into the whipped cream mixture until thoroughly combined. Spoon into the graham cracker crust.
  • Sprinkle the cake with reserved graham cracker crumb mixture.
  • Refrigerate until set, at least 3 hours to overnight.

"BROKEN GLASS" CUPCAKES

The recipe for the "glass" is essentially one for caramel. The trick is to cook it for a shorter amount of time than usual so it stays clear.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Cupcake Recipes

Time 1h15m

Yield Makes 3 1/2 dozen

Number Of Ingredients 17

4 1/2 cups cake flour (not self-rising)
2 tablespoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon freshly grated nutmeg
Salt
1 1/2 cups whole milk
1 tablespoon pure vanilla extract
2 sticks plus 2 tablespoons unsalted butter, room temperature
2 1/4 cups granulated sugar
7 large egg whites, room temperature
1 1/2 cups granulated sugar
3/4 cup water
1 pound cream cheese, room temperature
2 sticks unsalted butter, room temperature
6 cups confectioners' sugar
1/2 teaspoon pure vanilla extract
1 cup cherry preserves, strained, for garnish

Steps:

  • Preheat oven to 350 degrees. Make the cupcakes: Line cupcake tins with baking cups. Sift flour, baking powder, cinnamon, nutmeg, and 3/4 teaspoon salt into a medium bowl. Combine milk and vanilla in a measuring cup.
  • Beat butter with a mixer on medium-high speed until pale and fluffy. Reduce speed to medium, and gradually add granulated sugar in a slow, steady stream. Beat until pale and fluffy, about 3 minutes. Reduce speed to low, and add flour mixture in 3 additions, alternating with milk mixture, beginning and ending with flour.
  • In a clean bowl, whisk egg whites with a mixer on medium-high speed until stiff peaks form. Fold one-third of the whites into the cupcake batter. Fold in remaining egg whites in 2 batches.
  • Divide batter among baking cups, filling each halfway full. Bake until a toothpick inserted into the center of each comes out clean and the tops spring back when lightly touched, 18 to 20 minutes. Let cool completely in tins set on wire racks.
  • Meanwhile, make the caramel: Bring granulated sugar and water to a boil in a small high-sided saucepan, stirring, until sugar dissolves. Reduce heat to medium-high, and cook until mixture just starts to turn pale gold around edges. Remove from heat, and immediately pour caramel onto a rimmed baking sheet. Working quickly, tilt pan to spread caramel to edges to make a very thin layer. Let cool to harden.
  • Make the frosting: Beat cream cheese and butter with a mixer on medium-high speed until pale and fluffy. Gradually add confectioners' sugar and vanilla. Beat until creamy and spreadable.
  • Frost each cupcake using an offset spatula. Twist pan to release and break caramel in order for it to resemble broken glass. Place a shard or 2 of caramel "glass" in the center of each cupcake. Drizzle or pipe cherry preserves where caramel has entered the cupcake.

RED WHITE AND ROSE BROKEN GLASS CAKE

Red White and Rose Broken Glass Cake image

Your guests will do a double-take when they see this glossy cake that appears to have shards of glass floating in it! But no worries -- all those fragments are made from wine-infused gelatin. Trapped in a panna-cotta-like pudding with a shortbread crust, they make for a surprising and sweet finale to any meal.

Provided by Food Network Kitchen

Categories     dessert

Time 7h10m

Yield 8 to 10 servings

Number Of Ingredients 9

Nonstick cooking spray, for the pans
10 ounces shortbread cookies (about 14 cookies)
3 tablespoons unsalted butter, at room temperature
2 tablespoons plus 1 1/2 cups sugar
Ten 1/4-ounce packets unflavored gelatin
1 3/4 cups dry red wine
1 3/4 cups dry rose wine (look for a deep dark rose)
1 3/4 cups dry white wine
Two 14-ounce cans sweetened condensed milk

Steps:

  • Coat a 10-inch springform pan with cooking spray and set aside. Pulse the shortbread cookies in a food processor until finely ground, then add the butter and 2 tablespoons sugar and pulse until combined. Press the mixture into the bottom of the prepared pan and freeze until solid, about 1 hour.
  • Meanwhile, spray three 9-by-5-inch loaf pans with cooking spray and line with plastic wrap so that there is at least a 3-inch overhang on each side; spray the plastic wrap with cooking spray. Mix 2 packets gelatin into 1/2 cup cold water in a medium microwave-safe bowl until combined and let sit for 5 minutes to bloom; the mixture will get very stiff. Microwave on high power for 20 seconds, then stir to combine. Continue to heat and stir in 20-second intervals until the gelatin is completely dissolved, then stir in the red wine and 1/2 cup sugar until the gelatin is incorporated and the sugar is completely dissolved. Pour into one prepared pan. Repeat the process with the rose and white wines, respectively, then refrigerate all the pans until completely set, about 3 hours.
  • Meanwhile, mix the remaining 4 packets gelatin into 1 cup cold water in a large bowl; let stand 5 minutes. Add 1 cup boiling water and stir until dissolved; stir in the condensed milk until combined. Set aside to cool to room temperature, 2 to 3 hours. Skim the foam from the top.
  • Using the plastic wrap to help you, lift the wine jellies out of the pans and lay them on a clean baking sheet. Working one at a time, tear and break them up into irregular pieces about 1 inch wide and 2 to 3 inches long; they should look like broken shards of glass. Repeat with remaining wine jellies. Arrange all but 2 cups of the wine shards on the frozen shortbread crust. Pour the condensed milk gelatin slowly into the pan, avoiding pouring directly on the wine shards so that they remain brightly colored and don't develop a milky film. Arrange the remaining wine shards on top so that they are poking up slightly through the top of the milk gelatin. Chill until completely set, at least 3 hours (overnight is best). Open clasp to release the sides of the pan, then serve.

BROKEN GLASS CUPCAKES RECIPE - (3.8/5)

Broken Glass Cupcakes Recipe - (3.8/5) image

Provided by á-32164

Number Of Ingredients 13

SUGAR GLASS:
1 can white frosting
1 box red velvet cake mix
2 cups water
1 cup light corn syrup
3 1/2 cups white sugar
1/4 teaspoon cream of tartar
EDIBLE BLOOD:
1/2 cup light corn syrup
1 tablespoon cornstarch
1/4 cup water, or more as needed
15 drops red food coloring
3 drops blue food coloring

Steps:

  • Prepare red velvet cake mix According to box, line cupcake tins with paper cupcake liners. Divide cake batter between lined cupcake tins. Bake according to box instructions. Let cool and frost cupcakes with white frosting. Make the sugar glass. Mix 2 cups water, 1 cup corn syrup, white sugar, and cream of tartar in a large saucepan; bring to a boil. Use a candy thermometer and boil sugar syrup until temperature reaches 300°F (hard ball), stirring constantly. The mixture will thicken as water evaporates. When sugar reaches 300°F, quickly pour onto a metal baking pan. This can take up to an hour -- patience! And, don't let the sugar burn. Cool until completely hardened. Break into "shards" using a meat mallet. Make the edible blood. Mix together 1/2 cup corn syrup and cornstarch in a large bowl. Slowly stir in the 1/4 cup of water, adding more if necessary, until the corn syrup mixture has thickened to the consistency of blood. Stir in the red and blue food coloring. Stab each frosted cupcake with a few shards of broken sugar glass. Drizzle on drops of "blood" to complete the effect.
