1 3/4 teaspoons ground ginger
1 1/2 teaspoons onion powder
1 teaspoon cayenne pepper
1 teaspoon ground coriander
1 teaspoon dry mustard
1 teaspoon dried oregano
3/4 teaspoon ground cumin
3/4 teaspoon garlic powder
3/4 teaspoon black pepper
1/2 teaspoon white pepper
4 black drum fillets (about 4 ounces each), or other firm, mild-flavored fish
2 tablespoons vegetable oil
Melted butter, to drizzle on fish

Steps:

  • Combine the seasoning mix ingredients in a small bowl. Season each side of each fillet evenly with 1/2 teaspoon of the seasoning mix. Place the vegetable oil in a 12-inch nonstick skillet over high heat just until the oil just begins to smoke, about 3 to 4 minutes. Place the fillets in the pan, drizzle with butter, and cook, turning once, until they are just cooked through, about 2 to 3 minutes per side. The fillets are done when they flake easily.

This dish has always been my favorite, easy to make and easy to get the ingredients. It can be served with pita bread, salad, or steamed rice, but I prefer it with steamed rice. Passed down from mum to me as a family delicacy.

1 (2 pound) whole red snapper, cleaned and scaled
5 lemons, juiced, divided
¼ cup sweet soy sauce
2 tablespoons butter
1 tablespoon finely minced fresh ginger
3 tomatoes, chopped
1 bunch chives, chopped
½ red chile pepper, sliced
1 pinch white sugar, or to taste
1 pinch salt to taste

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Place snapper on a large plate; squeeze juice of 1 lemon onto each side and inside cavity. Set snapper aside to marinate, about 10 minutes. Combine soy sauce, butter, and ginger in a small bowl. Mix remaining lemon juice, tomatoes, chives, chile pepper, sugar, and salt together in a separate bowl.
  • Heat a large skillet to smoking hot over medium-high heat. Cook snapper until just beginning to brown, about 1 minute per side.
  • Place snapper on preheated grill; brush with soy mixture on each side. Grill, basting occasionally with soy mixture, until snapper flakes easily with a fork, 4 to 6 minutes per side.
  • Transfer snapper to serving platter. Pour tomato mixture over snapper to serve.

  • For Butter:.

2 pounds skin-on red snapper fillets
2 cloves fresh garlic, minced
1 pinch garlic salt, or to taste
1 pinch ground red chile pepper, or to taste
½ cup chopped fresh cilantro
1 lime
2 tablespoons butter

Steps:

  • Spray a baking dish with cooking spray. Place red snapper skin-side down in the baking dish. Sprinkle evenly with garlic, garlic salt, and red pepper. Spread cilantro evenly over the fish; squeeze lime evenly on top.
  • Marinate in the refrigerator, 30 minutes to 1 hour.
  • Preheat the oven to 425 degrees F (220 degrees C). Melt butter and pour evenly over the fish.

Steps:

  • In a small bowl, combine lime juice and honey. Pour 1/2 cup into a large resealable plastic bag; add the fish. Seal bag and turn to coat; refrigerate for up to 1 hour. Place remaining mixture in a small saucepan; set aside., Drain fish and discard marinade. 1 large fingerling potato, peeled, thinly sliced
1 teaspoon kosher salt
1 teaspoon fresh turmeric, grated
1/4 cup coconut cream
2 tablespoons pureed chipotle chiles
2 teaspoons fish sauce
1 teaspoon palm sugar
14 ounces red snapper, cut in 1 x 1 chunks
1 1/4 cups coconut milk
1/2 avocado, sliced
1 green mango, thinly sliced
3 red jalapeno chiles, seeded, thinly sliced
1/2 lime
12 mint leaves

Steps:

  • Bring a small saucepan of water to a boil, add the salt, potato, and turmeric. Reduce to a simmer. After ten minutes, remove and strain.
  • In a wok, over medium heat, simmer the coconut cream for five minutes, taking care not to burn it.
  • Add the chipotle puree and stir until fragrant, one to two minutes.
  • Add the palm sugar and fish sauce, cook for two minutes, or until it darkens.
  • Add the fish, coating the pieces in the curry.
  • Slowly incorporate the coconut milk.
  • Gently stir in the strained potato, red jalapenos, mango, avocado, eight of the mint leaves, and squeeze the juice of the lime into the curry.
  • Cook for two minutes until it's done.
  • Serve over rice, and garnish with the remaining mint leaves.
  • Enjoy.
