BROWN BUTTER-MAPLE GLAZED HEIRLOOM CARROTS
Steps:
- Preheat the oven to 375 degrees.
- Melt the butter over medium heat in a small saucepan, stirring often, until melted. It will start to bubble, foam, and separate then will turn golden brown with a nutty aroma. Side Note: Watch the butter carefully while cooking because it can burn quickly & easily.
- Remove from the heat and immediately add the vinegar and stir; add the maple syrup and stir until well combined. Side Note: Be careful because it will pop and splatter a bit.
- Arrange the carrots on the prepared baking sheet in an even layer.
- Drizzle half of the browned butter sauce over the heirloom carrots then season with sea salt and freshly cracked pepper, to taste, then toss to coat evenly. Reserve the remaining sauce for serving.
- Bake until the carrots are caramelized and fork-tender, about 20-25 minutes, flipping them halfway through roasting.
- Transfer the carrots to a serving platter.
- Reheat the reserved sauce until warm then drizzle it over the heirloom carrots. Sprinkle with chopped parsley.
- Serve and enjoy.

- Place carrots into a pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 15 to 20 minutes. Drain and transfer carrots to a serving bowl.
- Melt butter in a saucepan over medium-low heat. Stir maple syrup into melted butter and cook until warmed, 1 to 2 more minutes. Pour butter-maple syrup over carrots and toss to coat; season with salt and pepper.

- In a Dutch oven, combine the carrots, water, 2 tablespoons butter and ginger. Cover and cook for 10 minutes. Cook, uncovered, until carrots are crisp-tender, 6-8 minutes longer., Stir in the syrup, vinegar, salt and pepper. Cook, stirring frequently, until sauce is thickened, 5-6 minutes. Stir in remaining butter. If desired, garnish with parsley.

- Prepare the carrots: Trim the carrot tops from the carrots, either leaving an inch or two on top for decorative purposes or trimming the tops off entirely. Wash the carrots well, but do not peel.
