1 tablespoon olive oil
1 can (14-1/2 ounces) sliced potatoes, drained
1 small onion, cut into thin wedges
2 teaspoons minced fresh parsley
1/2 teaspoon paprika
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Pinch salt

Steps:

  • In a small skillet, heat oil over medium heat. Add potatoes and onion; cook and stir for 10 minutes or until lightly browned. Combine the parsley, paprika, garlic powder, onion powder and salt; sprinkle over potato mixture and toss to coat. Cook 5-10 minutes longer or until onion is tender.

4 medium russet potatoes, scrubbed clean and dried
1/4 cup olive oil (or vegetable oil)
kosher salt (optional)

Steps:

  • Preheat oven to 425 degrees Fahrenheit. Pierce potatoes a few times with a fork. Place oil in a small bowl. Place salt in another small bowl (if using). Place one potato at a time into oil bowl, and roll potato around in oil.
  • Shake off excess oil (and if using salt, then after shaking off excess oil, roll in salt bowl). Wrap tightly in heavy duty aluminum foil. Repeat with remaining potatoes.
  • Place the potatoes on a baking sheet so the oil will not drip down into oven. Bake for 45 minutes to one hour until a fork inserted will not lift potato off the baking sheet.
  • Slice still-wrapped potatoes lengthwise with a knife; pinch open from long sides to create a 'boat' to fill with your favorite toppings.
  • Notes: If baking potatoes with another item in the oven, this guide will help the adjustments. Using a meat thermometer, potatoes are done when the internal temperature reaches 210-220 degrees F. If you do not have a meat thermometer, then use this as a guide: for medium sized potatoes: 45 minutes at 450°F 60 minutes at 400°F 75 minutes at 375°F 90 minutes at 350°F.

  • Put a medium (or small) frying pan on top of the stove to heat it up.
  • Combine the garlic salt, crushed rosemary, oregano leaves, parsley flakes, thyme, marjoram leaves, ground ginger, chili powder, dill weed, curry powder, black pepper, chives, seasoned salt and grated Parmesan cheese in a medium sized bowl; stir well.

2 tablespoons minced fresh garlic
1 ½ teaspoons kosher salt

I've been making this recipe for years. It's very simple, flavorful, and great with ketchup. You can substitute the lard for an olive oil/butter mixture or just with vegetable oil. 2 tablespoons lard, more as needed (or bacon grease or goosefat)
6 medium red potatoes, washed and cubed 1 inch square
1 teaspoon paprika
1 teaspoon garlic powder
1/2 teaspoon kosher salt, ground
1/2 teaspoon onion powder
1/4 teaspoon black pepper
1 onion, chopped
1/2 green bell pepper (optional)
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon dried marjoram

Steps:

  • Heat lard (or oil) in a large nonstick skillet over medium heat. Add potatoes, paprika, garlic powder, salt, onion powder, and black pepper. Toss to coat, cover, and let steam for 10-15 minutes or until potatoes are semi-soft, stirring occasionally.
  • Remove lid, add onion (bell pepper if using), and herbs. Toss to coat. increase heat to medium-high and cook an additional 10-15 minutes, turning occasionally until potatoes are cooked through and crispy browned on the outside. Serve with ketchup if desired.
  • OPTIONAL BAKE METHOD: Melt the fat, then mix all the ingredients together in a large bowl. Place onto a baking sheet in a single layer. Bake at 425°F for 45-60 minutes, turning/tossing occasionally.
