1 cup (200g) long grain brown rice
1 cup (250ml) cold water

Steps:

  • Pressure Cook Brown Rice: Place 1 cup brown rice (200g) and 1 cup cold water (250ml) in Instant Pot. With Venting Knob in Venting Position, close the lid, then turn Venting Knob to Sealing Position. Pressure cook at High Pressure for 15 minutes (See experiment for your own preference), and Natural Release for 5 minutes, then Quick Release (turn Venting Knob to Venting position). Open the lid carefully.
  • Serve: Fluff brown rice with a rice paddle or fork. *Pro Tip: If the rice is a bit wet, let it rest a bit for the moisture to escape before serving.

Plain brown rice, if you don't have time to pre-soak the rice, from Kuhn Rikon's instruction manual (15 psi cooker). If you increase the amount, please make sure that you don't fill the cooker over the 1/2 mark. Kuhn Rikon strongly recommends cooking grains on LOW pressure - like steaming it; this prevents burned rice. I have made separate recipes for soaked brown rice and parboiled brown rice because there are differences in the rice:water ratios and the cooking times.

1 1/2-1 3/4 cups water
1 cup brown rice, picked over and rinsed and drained

Steps:

  • In the pressure cooker, pour in water and bring it to a rolling boil.
  • Pour in well-drained rice, stir well.
  • Secure lid, and bring to LOW pressure (8 psi, 1 bar). Once pot has reached low pressure, adjust heat to stabilize at low pressure. (My stove runs hot for a simmer, so sometimes I stack an extra burner grate or I press the steam valve of my Kuhn Rikon p.c. lid with a wooden spoon to keep the pressure at 1 bar.) Once low pressure has been reached, begin timing for 18 minutes and cook for 18 minutes.
  • Remove from heat. Let pressure reduce naturally (this will absorb some of the excess water, if any). If brown rice is fluffy but there is excess water, drain off the excess water.
  • Remove lid and serve.

Steps:

  • Rinse and drain the rice using either your hands to cup and drain, or a rinser made for this purpose.
  • Put rice, water, ghee (or oil), and salt into your electric pressure cooker or Instant Pot.
  • Cook at high pressure for 22 minutes, and allow it to release pressure naturally for 10 minutes.
  • Do not skip the natural release time, as this time is essential for the rice to "steam" and cook further.

Plain parboiled brown rice, from Kuhn Rikon's instruction manual. From my Kuhn Rikon instruction manual (15 psi pressure cooker). If you increase the amounts, do not exceed the 1/2 full mark on your pressure cooker pan. Kuhn Rikon strongly recommends cooking grains on LOW pressure (8 psi) so the rice won't burn on the bottom; it's more like steaming. I have made separate recipes for soaked brown rice and unsoaked brown rice, because there are differences between the rice:water ratios and cooking times. If you have a different brand cooker, please consult your manual for recommended cooking time. Personally, I was very disappointed by Uncle Ben's parboiled brown rice (and I grew up on Uncle Ben's Converted White Rice), but I love the nutty brown rice taste of premium brown rice (using one of the other recipes). Before you decide that you "hate" brown rice, be sure to try a premium brown rice.

Kuhn Rikon strongly recommends cooking grains on LOW pressure (actually "MEDIUM" pressure of 10 psi per Miss Vickie, but K-R has only 2 settings so one is HIGH of 15 psi, and the other is LOW of 10 psi) so the rice won't burn on the bottom; it's more like steaming. I have made separate recipes for unsoaked brown rice and parboiled brown rice, because there are differences between the rice:water ratios and cooking times. If you have a different brand cooker, please consult your manual for recommended cooking time. Updated 4/10/14: made with 2 cups rice and 4 cups low-sodium chicken broth in K-R Duromatic Top 3-L pressure cooker; added second burner grate after pressure was reached and had few adjustments to make (my stove runs hot). It took about 7 minutes for pressure to fall completely. There was a little unabsorbed liquid left, which I cooked off at Simmer setting. Note that using 10 psi is less likely to clog the safety valve.

2.5 to 3 cups (590 to 710 ml) water
1 teaspoon (4.9 ml) salt

Steps:

  • Add the rice to cold water to rinse it. Measure 2 cups (470 ml) brown basmati rice, and pour it into a medium-sized bowl of cold tap water.
  • Rinse the rice. Use your hand to swish the rice around until the water becomes cloudy-looking and foam appears on the edges. While rinsing can wash away some of the rice's nutrients, brown basmati rice is typically imported and may be processed with talc, powdered glucose, and rice powder. Rice connoisseurs, therefore, recommend rinsing it. Doing so will also get rid of some of the starch, which will help make your rice less gluey.
  • Strain the water from the rice. Pour out the water through a mesh strainer or by tilting the bowl to the side. You can hold a plate over the bowl to keep the rice from spilling out as you drain the water.
  • Rinse the rice again. Add more cool tap water and repeat this process until the water is clear. This could require up to 10 rounds of washing the rice.
  • Once the water is clear, leave the rice in the bowl and set it aside.
  • Combine the rinsed rice and cold water to soak. Add 2.5 cups (590 ml) cold water to the drained and rinsed rice and let it soak between 30 minutes to 24 hours depending upon the method of cooking and how long you want to cook it. The longer you allow it to soak, the less time it will take to cook. Additionally, basmati rice is known for its rich flavor, which can be lost during the heating process. Soaking it reduces cooking time, thus preserving more of its flavor. Soaking rice also improves its texture, making it softer and lighter.
  • Drain the water from the rice. Use a mesh strainer to drain the water that has not been absorbed by the rice. You can also use a colander, but the holes must be very small so the rice doesn't escape when you strain it.
