MUSHROOM RICE
"A co-worker shared the recipe for this tasty rice side dish more than 30 years ago, and I've been taking it to potlucks ever since," relates Iris Hubbard of North Fort Myers, Florida. It's a snap to throw together...and inexpensive, too, at 41 cents a helping.

- In a 2-qt. microwave-safe dish, combine all ingredients. Cover and microwave on high for 4 minutes. Microwave at 50% power for 12 minutes. Let stand for 5-10 minutes. Stir before serving.

MUSHROOM RICE RECIPE
Recipe VIDEO above. One for mushroom lovers! Brown the mushrooms well so the base of the pot turns brown, then deglaze it with broth so all that flavour ends up in the rice as well as staining it a lovely earthy brown colour. Also see Baked Mushroom Rice!

Steps:
- Heat 2 tbsp oil in a large pot over high heat. Add half the mushrooms, and cook for 5 minutes until golden. Season with salt and pepper then remove and set aside (we put these in at the end, mushrooms cooked in rice don't stay as golden).
- If the pot is dry, another 1/2 - 1 tbsp oil, and add butter. When melted, add onions and garlic.
- Cook for 30 seconds, then add remaining mushrooms. Cook for 5 minutes or until mushrooms are lightly browned (they won't caramelise as well as the first batch) and the base of the pot is brown.
- Add rice and a splash of broth. Mix so the brown stuff on the bottom of the pot mixes into the liquid. (Video below helpful here)
- Once the base of the pot is clean, add remaining liquid. Place lid on, bring to a simmer then turn down to medium low.
- Cook for 15 minutes or until there is no residual liquid (tilt pot to check).
- Remove from stove, remove lid, QUICKLY toss in reserved mushrooms and scallions, put lid back on. Leave for 10 minutes (do not skip this step!).
- Fluff rice using a fork or wooden spoon. OPTIONAL: Stir through more butter. :) Serve!

- Heat oven to 190C/fan 170C/gas 5. Tip the rice into a sieve, rinse under cold running water, then leave to drain. Heat the oil in a flameproof casserole, add the onion, then fry until softened, about 5 mins. Stir in the rosemary and mushrooms, then fry briefly. Add the rice, stir to coat in the oil, then add the peppers, tomatoes, stock and some freshly ground pepper. Bring to the boil, give it a stir, cover tightly with a lid, then bake for 20-25 mins until the rice is tender. Scatter over the parsley and serve.

- Heat olive oil and butter in 8" skillet over medium-high heat.
- Add shallots, sauteing for 1 minute.
- Add mushrooms, sauteing for about 2 minutes.
- Add salt, pepper and rice, stirring to coat rice, 2 minutes.
- Add wine and bring to a boil, stirring occasionally until wine is almost gone.
- Add chicken broth and stir well.
- Bring to a boil, cover and reduce heat to simmer.
- Keep covered for 20 minutes, without lifting the lid.

- First start cooking your rice.
- Add butter into your rice as it is cooking.
- Do not add salt.
- if you do only add a pinch of salt.
- Then cook your cream of mushroom soup, add little to no milk or water.
- You want your cream of mushroom soup to be like gravy and not soup.
- Use Cambell's soup as it's the best for this.
- When it's all done mix the rice and soup together.
- You can also mix in canned peas, but that is optional.
- Now you can dish it up and eat, but be careful dish is very hot and may burn your mouth.

- In a heavy saucepan, heat the oil and butter, add the onion and mushrooms and sauteed until soft and translucent.
- Pour in the rice and stir to coat the granules well. Cook until the edges of the rice grains have turned translucent, but not toasted.
- Add the stock and salt. Cover the pan tightly, placing a sheet or two of paper toweling under the lid, reduce the heat to low and cook until all the liquid has evaporated and grains are tender.
- Correct the seasonings. Toss the rice with a fork and fold in the sauteed almonds and parsley.

- In a 1 1/2-quart heavy saucepan bring rice and water with salt to a boil. Stir rice once and cook, covered, over moderately low heat 15 minutes. Remove pan from heat and let rice stand, covered, 5 minutes.
- While rice is cooking, cut mushrooms into 1/4-inch-thick slices and chop scallions. In a skillet heat butter over moderately high heat until foam subsides and sauté mushrooms with salt to taste until golden and any liquid mushrooms give off is evaporated. Add wine and simmer, stirring occasionally, until wine is evaporated.
- Fluff rice with a fork and stir in mushrooms and scallions.
