I wanted a rice recipe that was easy and relatively quick to make brown rice more tasty. This is what I came up with. :-) I've used long-grain brown rice and brown basmati rice for this, but you could also use white rice. Great for any meal you would use rice in.

1 onion, thinly sliced
2 tablespoons butter
1 tablespoon brown sugar
2 garlic cloves, minced
1 cup brown rice
2 1/4 cups chicken broth

Steps:

  • Melt butter in skillet and sauté onions until softened and lightly browned. Add garlic, sauté 1 minute.
  • Add brown sugar and sauté until caramelized-looking, 3-4 minutes.
  • Mix rice, broth and onion mixture and cook in rice cooker.
  • Note: I like my rice slightly crunchy and not soggy so if you like yours softer add 1/4- 1/2 cup of extra broth.

1/4 cup plus 1 tsp/65 ml sunflower oil
2 large onions, cut into 3/4-inch/2 cm wedges (5 cups/500g)
salt
1 lemon, peel finely shaved, plus 2 tbsp juice
1 cup/200g brown rice, rinsed
2 cups/500ml water
10 black garlic cloves, thinly sliced
1/2 cup/150g Greek-style yogurt (optional)
1/2 cup/10g parsley leaves, roughly chopped (I used green onions)

Steps:

  • Pour 3 tbsp/50ml of oil into a large saute pan with a lid, and place over medium-high heat. Once hot, add the onions, along with 1/4 tsp salt, and fry for 12 minutes, stirring occasionally to make sure they don't burn. Add the lemon peel and cook for another 12 minutes, continuing to stir from time to time, until the onions are dark and caramelized. Transfer to a plate and set aside.
  • Add the remaining 1 tbsp plus 1 tsp of oil to the pan, then add the rice and 1/2 tsp of salt. Fry for 1 minute, stirring continuously, then pour in the water. Bring to a boil, then decrease the heat to medium-low. Cover the pan and simmer for about 45 minutes, until cooked through. Remove from the heat and stir in the onions, lemon juice and black garlic. Serve at once, topping each serving with a generous spoonful of the yogurt and sprinkle of parsley. Alternatively, you can serve the yogurt in a bowl on the side.

I tried this recipe a few years ago and remember that I really liked it. I'm not so good at rice...it tends to stick to the pot...but this one was easy and tasty.

2 tablespoons olive oil
2 cups short-grain brown rice, uncooked
6 garlic cloves, minced
1 1/2 cups water
2 (13 3/4 ounce) cans chicken broth
1/2 teaspoon salt
4 tablespoons green onions, thinly sliced

Steps:

  • Heat oil in a large skillet over medium-high heat.
  • Add rice and sauté for 1 minute.
  • Add garlic and sauté for 2 minutes.
  • Stir in water, broth and salt. Bring to a boil.
  • Cover, reduce heat and cook over medium-high heat for 45 minutes or until liquid is absorbed.
  • Spoon into a bowl and fluff with a fork. Top with green onions.

2 1/2 cups cooked brown rice
1/2 cup parsley, chopped
1/2 cup coriander, chopped
125 g pine nuts, toasted
1/4 cup brown sugar
1/4 cup balsamic vinegar

Steps:

  • Heat olive oil in fry pan.
  • Cook onions slowly on low heat for 20 minutes.
  • Add brown sugar and vinegar and cook 10 more minutes.
  • Combine rice,onions,lots of salt and pepper,chopped herbs and pine nuts.
  • Serve at room temperature.

I made some very simple chicken kabobs and had some onion bits and pieces left over, so I decided to make some rice to go along side it. This is all stuff I had on hand (I just got back from World Market which is why I had the garlic and basil oil on hand) and this is definitely a one off from plain white rice. And I promise it's not too oily! Enjoy!

1/4-1/2 cup onion, diced
1 teaspoon garlic oil, minced garlic will work just as well
1 teaspoon basil oil
1 teaspoon extra virgin olive oil
1 cup jasmine rice
1 1/2 cups chicken broth, I like Rachel Ray's Stock in a Box
salt and pepper

Steps:

  • Heat extra virgin olive oil in a pot on medium/high heat. Add diced onions and stir. Cover and let them cook for 1-2 minutes, stir, and cover and let them cook for another 1-2 minutes, just until they turn brown.
  • Add rice, garlic oil, basil oil, and salt and pepper and stir until well combined.
  • Add chicken broth, stir, bring to a boil (should be fairly quick), cover, turn down to low and let simmer for 15 minutes.
  • Turn burner off and let rest for 5-10 minutes without taking the lid off. When done, stir/fluff and serve.

1 cup short grain brown rice or 1 cup white rice
2 cups chicken broth or 2 cups water
3 tablespoons butter
1 cup chopped yellow onion
3 garlic cloves, minced
1/2 cup broken pecans
2 green onions, chopped

Steps:

  • Using chicken broth [or water for Vegetarian], cook the rice according to the package directions.
  • About 15 minutes before the rice is ready, melt the butter in a skillet over medium low heat.
  • Add the chopped onion and saute', stirring often, until the onion is very soft and begins to color, about 10 minutes.
  • Stir in the minced garlic and the pecan meats; saute' over medium heat, stirring, until the nuts and onions are golden and the garlic is tender.
  • After done cooking, let the rice stand, covered, for 5 minutes; spoon rice into a bowl, spoon the onions and pecans on top, and fluff with a fork or a chopstick.
  • Garnish with the green onions.
  • Makes 4 servings.
  • This is also good with other types of nut, such as pine nuts, pistachios, and walnuts, and also made with a mixture of white and wild rice; sliced mushrooms are also a good addition.
