SOY-GLAZED SALMON



Soy-Glazed Salmon image

This tasty, simple salmon recipe is from Anne Ford, of Palo Alto, California.

1/4 cup packed light-brown sugar
1/4 cup olive oil
3 tablespoons soy sauce
2 tablespoons fresh lemon juice
2 tablespoons dry white wine, or water
2 pounds salmon fillet
Lemon wedges, for serving

Steps:

  • Preheat oven to 400 degrees. with a rack in the center. Make the glaze: In a small bowl, stir brown sugar, olive oil, soy sauce, lemon juice, and white wine until the sugar has dissolved.
  • Cut salmon fillet into 4 equal-size pieces; arrange, skin side down, in a single layer in a baking dish. Pour glaze over the fish, and turn to coat evenly.
  • Bake until fish is opaque but still bright pink inside, basting every few minutes with glaze from baking dish, 15 to 20 minutes. Serve with lemon wedges.

1/4 teaspoon salt
1/4 teaspoon pepper
3 tablespoons brown sugar
4 teaspoons Dijon mustard
1 tablespoon reduced-sodium soy sauce
1 teaspoon rice vinegar

Steps:

  • Preheat oven to 425°. Cut salmon into 4 portions; place in a foil-lined 15x10x1-in. pan. Sprinkle with salt and pepper. Roast 10 minutes. Remove from oven; preheat broiler., In a small saucepan, mix remaining ingredients; bring just to a boil. Brush over salmon. Broil 6 in. from heat until fish just begins to flake easily with a fork, 1-2 minutes.

1 tablespoon brown sugar
2 teaspoons butter
1 teaspoon honey
1 tablespoon olive oil
1 tablespoon Dijon mustard
1 tablespoon reduced-sodium soy sauce
1/2 to 3/4 teaspoon salt
1/4 teaspoon pepper
1 salmon fillet (2-1/2 pounds)

Steps:

  • In a small saucepan over medium heat, cook and stir the brown sugar, butter and honey until melted. Remove from the heat; whisk in the oil, mustard, soy sauce, salt and pepper. Cool for 5 minutes., Place salmon in a large foil-lined baking pan; spoon brown sugar mixture over top. Bake at 350° for 20-25 minutes or until fish flakes easily with a fork.

Part of our annual trek to the mountains is cooking out streamside. This year I decided to try salmon and found this recipe on another site. I scaled it back to feed 2 and marinated the fish for about 6 hours. It was spectacular. You can baste the fish while it's cooking if you wish, but not necessary. We used a grill basket and oiled it first to prevent sticking.

lemon pepper

garlic powder
1/3 cup soy sauce
1/3 cup brown sugar
1/3 cup water

Steps:

  • sprinkle fillets with salt, lemon pepper and garlic powder to taste.
  • Combine soy sauce, brown sugar, water and oil.
  • Marinate fish in soy mixture for 2 hours or more.
  • remove from marinade.
  • Grill for 7 minutes per side.

3 tablespoons Soy Sauce
2 tablespoons Brown sugar
1 tablespoon Honey
1 tablespoon Canola oil
1 teaspoon Minced garlic
1 1/2 pounds Salmon fillet
1 Garlic powder
1 Black pepper
1 Aluminum foil

Steps:

  • Pre-heat oven to 425. In a small bowl, add Soy Sauce, brown sugar, honey, oil, and minced garlic. Whisk all ingredients together to combine.
  • Place two pieces of foil on top of each other for each salmon fillet. Gather the sheets so they are raised on all sides (to prevent any marinade from dripping out).
  • If your fillets are large, you can cut them in half. Season fillets with garlic powder and black pepper.
  • Drizzle marinade evenly over salmon fillets
  • Gather the long ends of the foil and fold down. Fold in the short ends to form a packet
  • Place packets on a cookie sheet. Place in the oven and bake for about 18 minutes.

This is one of my favorite broiled salmon with brown sugar recipes.

¼ cup brown sugar
2 tablespoons low-sodium soy sauce
1 tablespoon olive oil
1 large red onion, cut into 1/4-inch thick wedges
1 pinch kosher salt and ground black pepper to taste
4 (5 ounce) skinless salmon fillets

Steps:

  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Combine brown sugar and soy sauce in a small bowl.
  • Heat oil in a pan over medium-high heat. Saute onion, salt, and pepper in the hot oil until soft, 5 to 7 minutes. Transfer to sugar mixture and mix together. Place salmon fillets on a rimmed baking sheet.
  • Cook salmon in the preheated oven for 10 minutes. Turn over and drizzle with 1/2 of the sugar mixture. Continue to broil until salmon is opaque throughout and easily flaked with a fork, 5 to 10 minutes more. Serve with remaining sugar mixture.

  • Place the salmon fillets in a baking dish and cover with the marinade.
