PERFECT M&M COOKIES
These M&M cookies are perfect! Chewy centers, crispy edges, easy to make and even easier to eat.

Steps:
- In a bowl, mix together flour, cornstarch, salt and baking soda. Set aside.
- In the bowl of a stand mixer (or using a hand mixer), cream together butter and both sugars on medium speed until light and fluffy (2-3 minutes). With the mixer on low, add egg and vanilla. Return mixer to medium and mix until incorporated. Scrape sides if needed.
- With the mixer back on low, add dry ingredient mixture gradually until dough forms. Stir in M&Ms by hand (see note). Refrigerate dough for at least 30 minutes.
- Preheat oven to 350°F and line baking sheets with parchment paper or Silpat and set aside.
- Form balls from approximately 1 tablespoon of dough and place evenly spaced on prepared baking sheet.
- Bake for 9-11 minutes or until edges are just barely golden. Remove from oven and let cool for a couple of minutes on baking sheet before removing and placing on wire rack to finish cooling.
- Store in airtight container when completely cooled.

THE BEST M&M COOKIES
We took our favorite chocolate chip cookie recipe and increased the brown sugar to make these cookies extra moist and chewy. Then we super-sized them -- the better to get in more of our favorite candy-coated chocolates. Save some extra candy for topping each cookie before baking. The result, cookies that look just as good as they taste!

- Sift the flour, baking powder, baking soda and salt into a large bowl.
- Beat the butter, brown sugar and granulated sugar in a bowl with a mixer on medium-high speed until pale and fluffy, about 4 minutes. Beat in the eggs one at a time until smooth, then beat in the vanilla. Reduce the mixer speed to low. Add the flour mixture and beat until combined. Reserve 1/4 cup of the chocolates, then stir in the remaining 1 3/4 cups of chocolates by hand. Press plastic wrap directly onto the surface of the dough and refrigerate until chilled through, about 1 hour.
- Arrange the racks in the upper and lower third of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment paper.
- Roll the dough into 24 balls, each about 3 tablespoons (alternatively, use a #20 large cookie scoop). Place 6 dough balls on each of the prepared baking sheets; stud the top of each dough ball with some of the reserved chocolates. Bake 2 trays at a time until the cookies are golden around the edges but still soft in the middle, rotating the trays halfway through, 15 to 18 minutes. Remove from the oven and let cool 10 minutes on the baking sheets, then transfer to wire racks to cool completely. Repeat with the remaining dough and chocolates.
EASY BROWN BUTTER COOKIES
Steps:
- Heat butter in a skillet over medium-low heat; cook and stir butter until foamy and butter begins to turn brown and fragrant, about 5 minutes. Remove skillet from heat, pour butter into a thick glass or metal bowl, and cool to room temperature, about 30 minutes.
- Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
- Mix flour, cornstarch, baking powder, baking soda, and salt together in a bowl.
- Stir brown sugar into cooled butter and mix until well blended; add eggs and vanilla extract and mix well. Slowly stir flour mixture into butter mixture just until dough is mixed. Form dough into small balls and slightly flatten with your hand or fork. Arrange cookies on the prepared baking sheet.
- Bake in the preheated oven until tops of cookies are firm and edges are golden, 8 to 10 minutes. Cool cookies on baking sheet for 3 minutes before transferring to a wire rack to cool completely.

BROWN BUTTER COOKIES
Using butter (NOT margarine) is essential for the success of this rich, but highly addictive cookie! You may need as little as 3 cups confectioners' sugar for the icing; just stop adding it when you've reached the desired consistency.

- Preheat oven to 350 degrees F (175 degrees C).
- Heat butter over medium heat for 5 minutes or so, until it turns nut brown in color. The foaming and bubbling is part of the browning process, but watch it carefully so that you don't burn the butter. Remove from heat, and cool slightly. Reserve 1/2 cup of the butter for the frosting.
- Pour remaining browned butter into a large mixing bowl. Beat browned butter with brown sugar until the butter is no longer hot. Mix in eggs, 2 teaspoons vanilla, baking soda, baking powder, and salt. Beat thoroughly. Mix in flour and chopped pecans. Drop tablespoons of dough onto ungreased baking sheets.
- Bake for 10 minutes in the preheated oven, or until light brown around the edges. Cool.
- In a medium bowl, mix the reserved 1/2 cup browned butter with 2 teaspoons vanilla, confectioners' sugar, and hot water. Beat until smooth, and use to frost cooled cookies.

- Place butter in a small saucepan over medium heat and heat until golden brown specks appear, swirling the pan occasionally. Butter will get foamy and if you swirl the pan around, you will see brown bits at the bottom and it will have a nutty smell. Remove from heat and pour into a small bowl. Make sure to get all those browned bits at the bottom of the pan, that is where all the flavor is. Allow to cool until it becomes solid (I refrigerate mine to speed up the process).
- When brown butter is solid, preheat oven to 350 degrees. Cream together brown butter, brown sugar and sugar until light and fluffy. Add the egg, vanilla and milk and beat until combined. In a separate bowl, combine the flour, cornstarch, baking soda and salt and add to wet ingredients. Mix until just combined. Stir in one cup of M&M's. Chill dough for at least one hour or overnight.
- Roll dough into balls, around 1 1/2 Tablespoons of dough per cookie. Press a few extra M&M's onto the top of each dough ball. Bake for 7- 9 minutes. Cookies will look underdone, but set up perfectly once they cool. My oven does bake slightly warmer than most and I think 7 minutes is perfect. Do not overbake or the cookies will be dry. Makes 24-30 cookies.
