BROWNIE-STUFFED CHOCOLATE CHIP COOKIES
Oh yes, we did make a pan of brownies just to stuff them inside chocolate chip cookies! And once you try 'em, you'll understand why.

Steps:
- Heat oven to 350°F. Spray bottom only of 13x9-inch pan. Make and bake brownie mix as directed on box. Cool completely in pan, about 1 hour.
- In medium bowl, crumble a 6x3-inch rectangle of the baked brownies (about 1/2 cup, firmly packed). Shape into 20 (3/4-inch) balls; set aside. (Reserve remaining brownies for another use.)
- Heat oven to 350°F. In large bowl, mix cookie mix, butter, flour and 1 egg until soft dough forms. Shape dough into 20 (1 1/2-inch) balls. Press thumb into center of each ball to form indent. Press 1 brownie ball into center of each cookie, making sure to form dough around brownie ball to enclose; reshape balls. Place 2 inches apart on ungreased large cookie sheets.
- Bake 10 to 12 minutes or until golden brown. Cool on cookie sheet 2 minutes; remove to cooling rack to cool completely. Store in airtight container at room temperature.

- 1. For the brownies Make brownies according to box directions. Stir in chocolate chips. Preheat oven 350 degrees. Spray two mini muffin pan with cooking spray. Fill the muffin tins half full and bake 10 minutes Remove and let cool then scoop them out of the muffin pan and set aside.
- 2. For the cookies In a large bowl beat the butter and both sugars together. Add in the vanilla and eggs. Beat until fluffy. Beat in the baking soda and salt. Add the flour and mix well. Stir in chocolate chips.
- 3. Place the chocolate chip cookie dough around the brownie muffin and shape it into a big ball. Place on parchment lined baking sheet. Repeat until all cookie dough is used up. You probably have left over brownies. Place in freezer and allow to freeze for one hour.
- 4. Preheat oven 350 degrees Bake the frozen cookies about 15 minutes or until browned.

Add in the egg and egg yolk, beating well after each addition, followed by the vanilla. Lastly, add in the baking soda, cornstarch, salt, flour, and dry pudding powder and mix on low speed until a soft dough has formed. Fold in the chocolate chips.
- Using a 1-Tablespoon-size cookie dough scoop, scoop out a cookie dough ball into your hand and make an indentation in the center of the dough ball using your thumb. Fill the indentation with a piece of fudge brownie. Using a half-scoop of more dough, gently pinch and roll the dough around the brownie, enclosing it completely. Place the dough balls about 2-3" apart on the baking sheets. Repeat with remaining dough balls.
- Bake for approximately 10-12 minutes, rotating pans halfway through baking time to ensure even cooking. Remove from the oven and let cool completely on the baking sheets before serving.
