Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Beat butter, brown sugar, white sugar, eggs, and vanilla extract together in a bowl using an electric mixer until light and fluffy. Stir flour, baking powder, cinnamon, salt, and nutmeg into creamed butter mixture until batter is just combined; fold in oats and 1 cup chocolate chips. Pour batter into a 9x12-inch baking pan; sprinkle with remaining 1/4 cup chocolate chips.
- Bake in the preheated oven until the top is dry and the edges have started to pull away from the sides of the pan, about 40 minutes.

CHEWY OATMEAL BROWNIES
I promised my daughter I could make yummy brownies WITHOUT a box mix! When I went looking for a recipe, I wanted "something" nutritionally "good" in the recipe. This is what we came up with. Its a chewy, chocolatey brownie you can dress up with nuts, chips, marshmallows or m&m's.

- Combine sugar, eggs and vanilla with a fork.
- Combine dry ingredients (up to oats) in separate bowl.

- In a large bowl, combine the oats, M&M's, flour, sugar, walnuts, baking soda and butter. Set aside 1 cup for topping. - Position racks in the upper and lower thirds of the oven; preheat to 350 degrees F. Line 2 baking sheets with parchment paper. Whisk the flour, baking powder and salt in a medium bowl; set aside.
- Combine 6 ounces chopped chocolate and the butter in a medium microwave-safe bowl. Microwave in 45-second intervals, stirring after each, until melted, about 2 minutes. Let cool slightly.
- Meanwhile, combine the eggs and sugar in a large bowl and beat with a mixer on medium-high speed until very thick and pale, about 5 minutes. Stir the espresso powder and vanilla in a small bowl, then beat into the egg mixture.
- Beat the warm chocolate mixture into the egg mixture. Reduce the mixer speed to low and beat in the flour mixture until combined. Beat in the remaining 2 ounces chopped chocolate; finish mixing with a rubber spatula (the dough will be soft).
- Drop mounds of dough (1 1/2 tablespoons each) about 2 inches apart on the prepared pans. Bake, switching the pans halfway through, until the cookies are just set around the edges and the tops are puffed and cracked, 10 to 14 minutes. Let cool completely on the pans.
CHEWY BROWNIE OATMEAL COOKIES

- Combine brownie mix, oats, oil, eggs and water in large bowl with spoon until fully blended. Gently stir in chocolate chips.
- Drop by heaping tablespoons 2-inches apart on baking sheets lined with parchment paper or silicone baking sheets.
- Bake 12 -15 minutes or until just set in centers.
- Cool cookies 2 minutes on pan before transferring to a wire rack to cool completely.

- In a large bowl, combine brownie mix and flour. Add oil, egg, and water; mix well. Add chips and nuts.
