Number Of Ingredients 18

Melt in a double boiler:
1/2 cup butter
4 0z. chocolate (baker's)
Cool this mixture. If you don't, your brownies will be heavy and dry.
Beat until light in color and foamy in texture:
4 eggs at room temp
1/2 teaspoon of salt
Add gradually and continue beating until well creamed:
2 cups sugar
1 teaspoon vanilla
With a few swift strokes, combine the cooled chocolate mixture into the
eggs and sugar. Even if you normally use an electric mixer, do this
manually.
Before the mixture becomes uniformly colored, fold in, again by
hand:
1 cup sifted all purpose flour
And before the flour is uniformly colored, stir in gently:
1 cup pecan meats (I don't use these myself)

Steps:

  • Bake in a 9 x 13 inch pan for about 25 minutes. Cut when cool. Wrapped individually in foil these will keep well 3 or 4 days.

The brownie recipe is "Brownies Cockaigne" from the Joy of Cooking. I had to adapt the directions a bit to make them more readable in this format. They are absolutely the BEST brownies I've ever had. They're more fudgey and dense than cakey. I've added all kinds of things to this brownie recipe and it's always turned out good. The addition of caramel was all mine, though, so I feel like I can take a bit of the credit!

1/2 cup unsalted butter
4 ounces unsweetened baker's chocolate, coarsely chopped
2 cups sugar
4 eggs
2 teaspoons vanilla
1 cup flour
1 cup chopped walnuts
1/4 cup jarred caramel sauce (I use "Smucker's Sundae Syrup") or 1/4 cup ice cream topping (I use "Smucker's Sundae Syrup")

Steps:

  • This recipe has appeared in Joy since the original edition. Have all ingredients at room temperature. Position a rack in the center of the oven. Preheat oven to 350* F. Line a 13 x 9- inch baking pan (I always use Pyrex) with greased aluminum foil, allowing it to overhang the 2 narrow ends of the pan by 2 inches.
  • In a large, heavy saucepan over very low heat, melt butter with chocolate, stirring constantly until the mixture is smooth.
  • Remove from heat and set butter and chocolate aside until completely cool.
  • Once cool, stir in sugar and vanilla.
  • Stir in eggs until well-combined.
  • Add flour and walnuts and stir until just combined (be careful not to overmix!).
  • Scrape the batter into the pan and spread to the edges.
  • Once level, drizzle caramel ice cream topping over brownies in a swirly pattern or zig-zag. Be careful not to get too much syrup in one spot, or it'll make a delicious, gooey hole in the finished brownies. The syrup will make a slight indentation into the brownies as they bake.
  • Bake until the center of the pan is almost firm when lightly pressed and a toothpick inserted in the center comes out clean but still moist at the bottom, 23-28 minutes.
  • Remove the pan to a cooling rack and let stand several hours until completely cool.
  • Using the overhanging foil as handles, lift the brownies to a cutting board, peel off the foil, and slice into pieces.
  • **Helpful hint: Using a plastic knife will keep the brownies from sticking to the knife!***.

Steps:

  • In a large saucepan, melt 1/2 cup butter. Remove from heat, and stir in sugar, eggs, and 1 teaspoon vanilla. Beat in 1/3 cup cocoa, 1/2 cup flour, salt, and baking powder. Spread batter into prepared pan.
  • Bake in preheated oven for 25 to 30 minutes. Do not overcook.
  • To Make Frosting: Combine 3 tablespoons softened butter, 3 tablespoons cocoa, honey, 1 teaspoon vanilla extract, and 1 cup confectioners' sugar. Stir until smooth. Frost brownies while they are still warm.

This recipe is an accidental creation by Nick Malgieri, who (in a rare human moment for a pastry chef) once forgot to double the flour when baking his own fudge brownie recipe. He also adds a measure of brown sugar to the basic formula. The experts are divided as to whether the brown sugar actually contributes flavor or simply makes the brownie moister (molasses, which makes brown sugar brown, is powerfully hydrophilic). It's my belief that the slightly bitter taste of molasses acts as an invisible enhancer to the chocolate. The result is as complex and sophisticated as any terrine or truffle I have ever produced.

8 ounces bittersweet chocolate
1 cup dark brown sugar, such as muscovado
1 cup granulated sugar

Steps:

  • Butter a 13-by-9-inch baking pan and line with buttered parchment paper. Preheat oven to 350 degrees. In top of a double boiler set over barely simmering water, or on low power in a microwave, melt butter, chocolate and sugars together. Cool slightly. In a large bowl or mixer, whisk eggs. Whisk in salt and vanilla.
  • Whisk in chocolate mixture. Fold in flour just until combined. If using chopped walnuts, stir them in. Pour batter into prepared pan. If using whole walnuts, arrange on top of batter. Bake for 35 to 40 minutes or until shiny and beginning to crack on top. Cool in pan on rack.

The first time I made brownies without my mother was in the late 1960s, using a recipe from Paula Peck, the cookbook writer. Over the years, I tinkered with that and a similar version by Marion Cunningham. As my daughters learned to cook, they experimented a bit further. But we never really strayed from the originals. As long as you keep the flour to a minimum and don't add chemical leavening like baking powder, you will produce a true and beautiful brownie.

3 ounces unsweetened chocolate
8 tablespoons (1 stick) salted or unsalted butter, more for greasing pan
1 cup sugar
2 eggs
1/2 cup all-purpose flour
Pinch salt if you use unsalted butter
1/2 teaspoon vanilla extract, optional

Steps:

  • Heat oven to 350 degrees. Combine chocolate and butter in a small saucepan over very low heat, stirring occasionally. When chocolate is just about melted, remove from heat, and continue to stir until mixture is smooth. Meanwhile, grease an 8-inch-square baking pan. If you like, also line it with waxed or parchment paper and grease that.
  • Transfer mixture to a bowl, and stir in sugar. Beat in eggs, one at a time. Add flour (and salt and vanilla if you are using them), and stir to incorporate. Stop stirring when no traces of flour remain.
  • Pour into pan, and bake 20 to 30 minutes, or until set and barely firm in the middle. Cool on a rack before cutting.
