This recipe has been in my family for many years, ever since we moved to Georgia over 30 years ago. It consists of chicken and salt pork with potatoes, beans and other vegetables. It's both hearty and delicious.

4 ounces diced salt pork
2 pounds chicken parts
8 cups water
3 potatoes, cubed
3 onions, chopped
1 (28 ounce) can whole peeled tomatoes, chopped
2 cups canned whole kernel corn
1 (10 ounce) package frozen lima beans
1 tablespoon Worcestershire sauce
½ teaspoon salt
¼ teaspoon ground black pepper

Steps:

  • In a large pot over high heat, combine the salt pork, chicken and water and bring to a boil. Reduce heat to low, cover and simmer for 45 minutes, or until chicken is tender.
  • Remove chicken and allow to cool until easy to handle. Remove meat and discard the skin and bones. Chop meat into bite size pieces and return to the soup.
  • Add the potatoes, onions, tomatoes, corn, lima beans, Worcestershire sauce, salt and ground black pepper. Stir well and simmer, uncovered, for 1 hour.

  • Combine chicken broth, pulled pork, mixed vegetables, tomatoes, potatoes, pepper, and Worcestershire sauce in a 4-quart slow cooker.

Ingredients have varied over the years, often using chicken or like here, leftover pork, but one thing is certain, and that is, no matter the region of The South, Brunswick Stew, sometimes called Camp Stew, is a southern favorite.

3 slices bacon
1 cup chopped onion
1/2 cup chopped green bell pepper
1/4 cup chopped celery
2 (14.5 ounce) cans stewed or diced tomatoes, undrained
3 cups chicken broth
3 potatoes (about a pound), peeled and diced
1 can corn, drained
1 can creamed corn, undrained
1 can green lima beans, drained
4 cups shredded BBQ pork
1 cup smoky flavor barbecue sauce
Couple dashes hot sauce, optional
Kosher salt and freshly cracked black pepper

Steps:

  • Cut the bacon into a pot and sauté until softened. Add the onion, bell pepper and celery and sauté until tender, about 5 minutes.
  • Add stewed tomatoes, bring to a boil, reduce heat and simmer for 10 minutes. Add the chicken broth and potatoes, bring back up to a boil, reduce heat, cover and simmer for 20 minutes.
  • To that add the corn, lima beans, barbecued pork, barbecue sauce and hot sauce. Simmer until everything is heated through. Taste and season with salt and pepper as needed.
  • Serve with cornbread, a side of coleslaw and some southern iced tea and you have one mighty fine southern meal.

You can make Brunswick Stew out of any kind of meat, but most people prefer it with a nice beef brisket and pulled pork combination for smokiness and a good, hearty spoonful of tenderness.

1 Tbsp Olive oil
​2 Onions finely minced
​1 Bell pepper (any color will work)
​2 Celery stalks
​2 Cloves fresh garlic or 2 tbsp minced garlic
Pulled pork
Brisket, finely chopped
​6 Cups Chicken or beef stock
3 Cans diced tomatoes (do not drain)
1 Cup Ketchup or BBQ sauce, depending on your preference
2 Cups Corn (creamed works just fine in a stew too)
1 tsp Worcestershire sauce
​Salt, cayenne, and pepper to taste

Steps:

  • The first step is very important in order to properly season your Brunswick Stew.
  • Over medium heat, combine olive oil, onions, bell pepper, and celery.
  • Sauté until softened and slightly browned. This usually takes about 10 minutes.
  • Add garlic and sauté for about 3 more minutes.
  • Gradually add your meats to the sauté mixture, coating all of the meat with it.
  • This makes sure that your meat stays smoky and doesn't get overpowered by all of the other delicious flavors that are about to be piled on top of it.
  • One ingredient at a time, add the chicken stock first, then the tomatoes, corn, BBQ sauce or ketchup, Worcestershire sauce, and all of your other spices.
  • Cayenne pepper adds a nice kick to this masterpiece.
  • Be sure to add liquid first so that the vegetables don't burn.
  • Bring all ingredients to a nice, rolling boil and then knock it down to a simmer.
  • Once the boiling has calmed down, stir occasionally until an hour has passed and your stew will be finished.
  • Serve immediately with warm bread, some crackers, or a dinner roll.

1 red bell pepper (diced)

Brunswick Stew is a traditional side dish served in barbecue restaurants throughout the South, but it's great as a main course of its very own. Just add saltine crackers or bread.

1 whole Chicken
1 lb. Pork Barbecue, fully cooked.
1 lb. Baby Lima Beans
1 lb. Corn
4 medium Potatoes, diced
1 can Tomato Sauce - 8oz.
2 cans Tomato Paste - 4oz
½ stick Butter
¼ cup Apple Cider Vinegar
¼ cup Texas Pete Hot Sauce
¼ cup Ketchup
2 Tablespoons Brown Sugar
1 Tablespoon Worcestershire Sauce
1 teaspoon Black Pepper
1 teaspoon Salt

Steps:

  • Rinse the fryer under cold running water.
  • Place fryer in large stock pot and cover with water about 6 inches over chicken.
  • Bring to a boil, reduce heat to medium and let chicken cook for one hour.
  • Remove cooked chicken from pot, set aside to cool.
  • Place the frozen baby lima beans and frozen corn in a colander. Rinse well.
  • Add the beans and corn to a large stock pot.
  • Wash, peel and cut up the potatoes, add to the beans and corn.
  • Add enough water to cover the vegetables by about 2 inches.
  • Cook over medium heat, stirring often, until vegetables are tender. About one hour.
  • While the vegetables cook, pull the chicken meat from the bones. Discard bones and skin.
  • Shred chicken into small pieces.
  • When vegetables are done, remove any excess liquid, leaving just enough to reach top of vegetables.
  • Add tomato sauce.
  • Add apple cider vinegar
  • Add brown sugar.
  • Add black pepper
  • Add salt.
  • Add butter.
  • Add Texas Pete Hot Sauce.
  • Add tomato paste.
  • Add Worcestershire Sauce.
  • Stir well.
  • Add chicken to the stew.
  • Add pork barbecue to stew.
  • Add Ketchup. Stir well.
  • Return to stove top and simmer on medium, stirring often, until warm, prior to serving.
  • Stock or liquid from vegetables may be added if needed to obtain desired consistency.
  • Serve warm and Enjoy!

1 pound bone-in pork loin chops
2 bone-in chicken breast halves, skin removed
1 pound beef top round steak, cut into bite-size pieces
6 cups water

1/2 cup cider vinegar

1 1/4 lbs cooked pork

  • In a 6 quart dutch oven, stir together onion, chicken broth, ketchup, vinegar, Worcestershire sauce, brown sugar, salt, pepper, and hot sauce.
  • Add thawed corn and butter beans; stir.
  • Add tomatoes; stir.
