FRESH TOMATO AND BASIL BRUSCHETTA

Fresh Tomato and Basil Bruschetta image

Italian simplicity at its best can be found in this bruschetta recipe with fresh tomato, basil, and mozzarella.

Provided by Kimberley Eggleston

Categories     Appetizer     Snack

Time 15m

Yield 16

Number Of Ingredients 7

1 loaf bread (crusty Italian, sliced 3/4-inch thick, about 16 pieces)
2 tbsp. olive oil
2 cups tomatoes (fresh, chopped)
2 tbsp. basil (chopped)
4 cloves garlic (chopped very fine)
1/2 tsp. salt
1 oz. cheese (mozzarella, shaved)

Steps:

  • Gather the ingredients.
  • To begin with, combine the chopped tomatoes, basil, garlic, and salt in a small bowl and lightly toss together. Set aside.
  • Set the oven to the broil setting. Place the bread slices in a single layer on a large baking sheet coated with a small amount of cooking spray or olive oil. Using a basting brush, brush a small amount of the olive oil on the top of each slice of bread.
  • Place the bread in the oven and broil for about 1 minute, or just until the bread becomes lightly toasted.
  • Remove the bread from the oven, and spoon about 2 tablespoons of the tomato mixture on each slice. Top each with a couple of shaves of the mozzarella cheese. Return the bread to the oven and broil the bruschetta for another 30 seconds. Watch the bruschetta carefully during this time to make sure it does not burn. Remove the bruschetta when the cheese becomes melted, and the edges of the bread are lightly browned and toasted.
  • Remove the bruschetta to a plate or a wire rack to cool just for a few minutes, and then serve immediately.

BRUSCHETTA WITH FRESH BASIL RECIPE - (4.5/5)

Bruschetta with Fresh Basil Recipe - (4.5/5) image

Provided by Foodiewife

Number Of Ingredients 8

1 fresh baguette
Good quality olive oil
1 large clove fresh garlic, peeled
1 to 2 small garlic cloves, finely minced
Roma tomatoes (these work best)
8 to 12 fresh basil leaves
Fresh Parmesan-Reggiano (not the stuff in the green can, please)
Kosher salt & fresh ground pepper

Steps:

  • Slice the baguette, thinly at an angle. Brush each slice with olive oil. Broil for about 1 minute, but stay close! They can burn very easily. Remove from the broiler and rub the clove of garlic, lightly. Set aside. Cut and de-seed the tomatoes, by pulling out the pulp and seeds with your fingers. Cut into small pieces. Peel and mince a small garlic clove and add to the tomatoes. Season with kosher salt & fresh cracked pepper, to taste. Add a little bit of olive oil-- just enough to coat the tomatoes. If desired, drizzle a little balsamic vinegar. Gently toss and allow to sit for a few minutes. Pile each basil leave on top of one another, and roll (like a cigar). Slice thin strips. Add to the tomato, garlic and oil mixture and gently toss. Add a small bite-sized mound on each crostini. With a micro-plane or small grater, garnish with fresh parmesan. Watch these disappear!
