- Trim tough stems from brussels sprouts.
- With a knife, mark base of each brussels sprout with a shallow"x".
- Remove about 25 large outer green leaves; set aside.
- In pot of boiling salted water, cook the brussels sprouts until just tender but still bright green, about 6 to 8 minutes.
- Strain with a slotted spoon and transfer to ice water bath to stop cooking.
- Blanch the reserved leaves in the pot of boiling water, until bright green, 1 to 2 minutes.
- Strain; transfer to bowl of ice water.
- Drain; reserve.
- Transfer sprouts to food processor.
- Heat cream and butter in saucepan over low heat until butter has melted.
- Add salt, pepper, and nutmeg; add to sprouts.
- Process until combined.
- Transfer to serving bowl.
- Arrange reserved leaves around edge of bowl.

- Steam the brussels sprouts until tender but not soft, about 6 minutes. Set aside.
- When the sprouts are just cool enough to handle, slice in half and pulse in a food processor until finely chopped.
- Heat the cream until almost boiling and add to the sprouts with the butter. Process until smooth. Add 1 1/2 teaspoon salt, 1/4 teaspoon white pepper and a pinch of nutmeg, blend well and adjust seasonings to taste. Serve warm.

- Preheat the oven to 425 degrees F (220 degrees C). Lightly grease a baking pan.
- Combine Brussels sprouts and pears in a bowl with 2 tablespoons olive oil, diced onion, garlic powder, and salt. Spread into the prepared pan.
- Bake in the preheated oven until browned and tender, 25 to 30 minutes, tossing after 15 minutes to brown evenly.
- While baking, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels.
- Drain bacon grease form the skillet and discard; add remaining olive oil and balsamic vinegar to the skillet. Cook over low heat, stirring constantly, until mixture reduces slightly, 3 to 4 minutes. Pour over roasted mixture and serve.

- Heat the oven to 450°. In a medium bowl, toss the Brussels sprouts with 1 tablespoon of the oil, 1/4 teaspoon of salt, and 1/4 of teaspoon pepper. Set aside.
- Put the chicken pieces in a large roasting pan and toss with 1 tablespoon of oil, 1/4 teaspoon salt, and 1/4 teaspoon pepper.
- Arrange the chicken pieces about 1 inch apart, skin-side up, and roast for 25 minutes.
- Add the Brussels sprouts and continue cooking until the chicken and sprouts are done, about 12 minutes longer. Transfer them to plate and leave to rest in a warm spot for about 5 minutes.
- Meanwhile, in a medium saucepan, heat the remaining 2 tablespoons oil, the garlic, and the rosemary over low heat, stirring, for 3 minutes.
- Raise the heat to moderate and add the beans, 1/4 cup of the water, 1/4 teaspoon salt, and 1/8 teaspoon pepper.
- Cook, mashing the beans to a coarse puree, until hot, about 5 minutes. Stir in the parsley.
- Pour off the fat from the roasting pan. Set the pan over moderate heat and add the remaining 1/4 cup water.
- Bring to a boil, scraping the bottom of the pan to dislodge any brown bits. Boil until reduced to 1/4 cup, about 4 minutes.
- Add any accumulated juices from the chicken and a pinch each of salt and pepper.
- Spoon the white-bean puree onto plates and top with the chicken, the Brussels sprouts, and then the pan juices.

- Wash the brussel sprouts then half them. Boil in salty water with the sugar for 8-10 minutes.
- Drain and slice the sprouts thinly.
- Heat olive oil in a pan, add bacon and then after a few minutes the sprouts.
- Add the creme fraiche, lemon juice.
- Season with nutmeg, cayenne pepper and salt and pepper to taste.

- Preheat oven to 400 degrees. Halve brussels sprouts through core; set aside.
- Place bacon in a wide, ovenproof skillet and cook over medium heat, stirring occasionally, until almost crisp, about 4 minutes. Using a slotted spoon, transfer bacon to a paper towel-lined plate; set aside.
- Drain most of the fat from skillet and add brussels sprouts, cut side-down. Increase heat to medium-high and cook until sprouts begin to sizzle. Transfer skillet to oven and roast until sprouts are deep brown in color, about 8 minutes. Shake skillet to redistribute sprouts, and continue roasting until bright green and tender, 10 to 15 minutes more.
- Return skillet to stovetop and turn heat to medium. Stir in butter and bacon; season with salt and pepper. Toss sprouts to coat.
- Divide kimchi among 4 shallow bowls, using the back of a spoon to spread out kimchi so it covers the bottom of each bowl. Divide brussels sprouts evenly among bowls, arranging on top of kimchi. Garnish with carrots and serve.
