VERY POPULAR BUBBLE TEA
Bubble tea is very popular, especially to Asians, but now, more and more people from different backgrounds like the taste of it. I'm no expert at this, but I do know how to make it. It's simple but some of the ingredients may be a little tough to find. Just be patient and look for them in Chinese grocery stores. It is worth the trouble!

Steps:
- In a small saucepan, bring 2 cups water to a boil. Stir in 1 teaspoon sugar until it dissolves. Toss in the pearl tapioca. Cook for about 20 minutes. Rinse, drain, and refrigerate until chilled.
- Pour tea, milk, and 4 teaspoons sugar into a cocktail shaker. Stir until the sugar has dissolved and the milk is well mixed in. Add the ice cubes, and shake so the whole drink can get cold. Pour into a glass, and add tapioca.

Steps:
- Bring water to a boil in a pot, add tapioca pearls, and cover pot. Reduce heat to medium-low and simmer for 5 minutes. Drain pearls and set aside.
- Pour brewed tea, condensed milk, and sugar into a pitcher; stir to dissolve sugar. Refrigerate tea mixture until chilled, about 1 hour.
- Scoop tapioca pearls into 4 large glasses, about 2 tablespoons each. Fill each glass with tea mixture; top with ice.

BUBBLE TEA
A fun slushy drink with chewy tapioca pearls! If you can find extra wide straws, put one in each drink so you can suck the pearls up the straw and chew on them while you are drinking!

- Fill a saucepan about halfway with water, and bring to a boil. Add the tapioca pearls, and return to a boil. Stir to make sure they do not start to stick together or to the pot. Cover, and simmer over medium heat for 45 minutes. Remove from the heat and let stand for 30 minutes, then rinse and drain. The pearls should be squishy and black. Stir some of the honey into the pearls so they are coated.
- Place the milk, any remaining honey, tea mix, and ice into the container of a blender. Cover, and blend to your desired slushiness. Pour the tea into two large glasses. Spoon half of the tapioca pearls into each glass. If you can find extra wide straws, place one into each drink to suck up the pearls and chew on them while you are drinking.

Steps:
- The ratio should be a minimum of 6:1, water to tapioca pearls.
- Boil water in a large pot.
- Add in the tapioca pearls to boiling water.
- The tapioca pearls should float in the water.
- Boil for about 25 minutes depending on the tapioca pearl with the cover on.
- Turn the heat off and let the tapioca sit in the water for 25 minutes.
- Rinse the cooked tapioca pearls in warm water and drain out the water.
- Cover with bubble tea sugar syrup or brown sugar and serve.

PINA COLADA BUBBLE TEA
A refreshing new twist on an old favorite. This is for the Asian tapioca pearl drink that is very popular in Taiwan now. Bubble Tea isn't hard to make at home and it is a lot more healthy and fresher tasting to make at home. If you don't have a cocktail shaker just use a 16 oz tightly sealed thermos or jar. I used a thermos and it works great! I will include recipes for the tea base. Note: You have to purchase the Bubble tea straws to drink up the large tapioca pearl. Otherwise you can use regular pearls, but that's not as much fun!

- Put all ingredients, except Tapioca pearls and Ice, into cocktail shaker or other tightly sealed container.
- Shake for about 10 seconds or until nice froth or bubbles appear at surface.
- Place Tapioca pearls at bottom of tall glass, then pour shaken liquid into the glass on top of them.
- Put as much ice as you want and stick a Bubble tea straw in your glass and enjoy.

COOKIES AND CREAM BUBBLE TEA SLUSHIE
Tastes just like the ice cream. I love this one the most. Note: large tapioca pearl can be purchased at Asian grocery stores and bubble tea straws can be purchased through many online stores.

- To make oreos from scratch I used a recipe called "Faux-Reos" from www.kingarthurflour.com under recipes.
- Melt chips in microwave for about 20 seconds, stir then microwave for another 20 seconds. Mix 1/4 cup of water with melted chocolate until sauce is formed.
- Mix crushed oreos with 1/4 cup of water.
- Crush ice until partially crushed.
- Pour all liquids into blender and blend on highest setting until all remaining ice chunks are crushed.
- Place tapioca pearl at bottom of tall glass and serve with bubble tea straw.

BUBBLE TEA SUGAR SYRUP
This is the liquid sweetner used in all Bubble tea drinks. It is used both to cover the tapioca pearl and sweeten the drink. You can use all white sugar for fruit flavored drinks and green tea base drinks. It can be easily made diabetic but substituting Splenda for the sugar in the recipe.
