STIR FRY NOODLES
Chicken stir fry noodles with vegetables in a quick and easy stir fry sauce. This fast, healthy meal tastes better than takeout and is better for you too!

- Place the chicken in a bowl and toss with 1 tablespoon soy sauce. Let sit while you prep the remaining ingredients.
- In a small bowl or large liquid measuring cup, combine the three-quarters of the green onions, the remaining 3 tablespoons soy sauce, hoisin, garlic, ginger, and vinegar. Set near the stove. Reserve the remaining green onions for serving.
- Bring a large pot of salted water to a boil. Cook noodles until they are about 1 to 2 minutes from done, according to package instructions. They should be very al dente, still a little too firm to eat, but not excessively hard and chewy. Drain and toss with 1/2 tablespoon of the oil to prevent sticking.
- In a large skillet over medium-high heat, heat 1/2 tablespoon oil. Once the oil is hot, add the chicken. Cook until golden and fully cooked through, about 3 to 4 minutes. Remove to a plate.
- To the now-empty skillet, add the remaining 1 tablespoon oil. Add the vegetables and cook until they begin to brown and soften but are still fairly crisp, about 3 to 4 minutes.
- Add half the scallion mixture and saute until fragrant, about 1 minute.
- Add the noodles. Cook, using tongs to toss the noodles and coat them with the sauce, for 30 seconds.
- Add the eggs, sriracha, chicken, and remaining scallion mixture.
- Continue to stir fry and toss the noodles, until the eggs are cooked through and the noodles are tender, 1 to 2 minutes longer.
- Remove from heat. Sprinkle with the reserved green onions.

- Bring water to a boil and cook the soba noodles according to the package, (just slightly on the al dente side). Drain in cool water to remove gluten and starchiness. (This helps the texture and prevents the soba noodles from getting gummy and gluey). Set aside.
- Stir together the sauce ingredients: sesame oil, rice vinegar, maple syrup, soy sauce.
- Heat oil over medium-high heat in a wok or skillet. Add napa cabbage, shiitake mushrooms, carrot strips, and a sprinkle of salt. Stir constantly for 2-3 minutes. Stir in garlic and ginger for 1-2 minutes. Add bell pepper and white part of the green onion stir-frying for 2-3 minutes until just tender but still crisp.
- Add the soba noodles and sauce. Toss together 1-2 minutes letting it thoroughly heat through.
- Sprinkle with sesame seeds and green onions. Add black sesame seeds for garnish if desired.

SOBA NOODLE STIR-FRY

Steps:
- Cook the noodles according to the package directions. Drain and rinse well under cold water to prevent sticking.
- Lightly coat a large nonstick skillet with cooking spray; place over medium-high heat. Add the tofu and season with salt. Cook for 8 minutes, until golden, stirring occasionally. Transfer to a platter.
- Coat the skillet again with cooking spray; place over medium-high heat. Add the broccoli, peas, and a splash of water. Cover and cook for 5 minutes, until the vegetables are crisp-tender.
- Meanwhile, make the sauce. In a small bowl, whisk together the peanut butter and 2 tablespoons water. Whisk in the vinegar, soy sauce, and pepper flakes, if desired.
- Add the reserved noodles, the tofu, garlic, and sauce to the vegetables. Cook for 2 minutes, tossing, until the noodles are warmed through. Serve.
STIR-FRIED VEGETABLES AND CHICKEN WITH BUCKWHEAT NOODLES

This stir-fried vegetables and chicken with buckwheat noodles makes two servings-you can share with a friend, keep one portion for the next day, or halve the recipe.

Steps:
- In a large pot, boil 6 cups of water; add the salt.
- Add the noodles, reduce heat slightly, and boil for about 3 minutes or until tender.
- Place noodles in a colander and rinse thoroughly in cold water.
- Drain water completely, toss lightly in the sesame oil, and set aside.
- For the stir-fry, heat a heavy skillet and add oil.
- Keep on a high heat and add garlic and ginger for one minute, stir with a wooden spoon.
- Add the rest of the vegetables a little at a time to keep heat up, except the snap peas.
- Toss, flip, or just use a wooden spoon to coat vegetables and prevent scorching.
- Add the nama shoyu (or tamari) and 2 tablespoons water.
- Finally, add the snap peas for 1 minute.
- Toss in a bowl with the noodles and serve.
- Garnish with fresh cilantro, and serve chicken breasts on the side.
