2 cups graham cracker crumbs
1/4 cup confectioners' sugar
1 stick (8 tablespoons) butter, melted
1 can (14 ounces) sweetened condensed milk
1 can (8 ounces) crushed pineapple in juice, drained and excess moisture squeezed out
1 can (7 ounces) sweetened shredded coconut
1/2 cup coarsely chopped almonds, pecans or macadamia nuts
1 1/2 cups white chocolate chips

Steps:

  • Heat oven to 375°F. Grease a 9x13-inch baking pan. Mix graham cracker crumbs and confectioners' sugar. Stir in butter until evenly moistened. Press crumb mixture firmly into bottom of pan. Bake until edges are golden brown, 10 to 12 minutes. Meanwhile stir sweetened condensed milk, pineapple, coconut and almonds until blended. Pour into baked crust and spread almost to edges. Bake until just set, 10 to 15 minutes. Remove from oven and sprinkle with white chocolate chips. Let stand until chocolate softens, 3 to 4 minutes, then carefully spread chocolate over surface. Cool completely. Cut into 32 bars. 250g jumbo oats
50g desiccated coconut
25g dark muscovado sugar
50g pumpkin seeds
100g mixture of chopped Brazil nuts and whole raw cashews
250g packet ready-to-eat tropical fruit
yogurt , fresh blueberries, sliced banana and honey to serve (optional)

Steps:

  • Preheat the oven to 200C/Gas 6/fan oven 180C. Put oats, coconut, sugar and pumpkin seeds on a large baking tray with sides, ideally nonstick. Mix in sugar and break up lumps with fingers, then add nuts.
  • Bake for 15 minutes, stirring every 5 minutes, until sugar starts to melt and nuts are lightly toasted. Tip into a big bowl and leave to cool.
  • Snip bite-sized pieces of tropical fruits into the mixture. Serve with chilled milk, yogurt and fruit
  • Store for up to 2 months, airtight.

1 pouch (1 lb 1.5 oz) Betty Crocker™ sugar cookie mix
1/2 cup butter or margarine, softened
1 egg
2 cups white vanilla baking chips
1 cup coarsely chopped dried pineapple
1 cup flaked coconut
1 cup Betty Crocker™ macadamia nuts, chopped
1 can (14 oz) sweetened condensed milk (not evaporated)

Steps:

  • Heat oven to 350°F. Spray bottom only of 13x9-inch pan with cooking spray. In large bowl, stir cookie mix, butter and egg until soft dough forms. Press dough in bottom of pan.
  • Bake 15 minutes. Sprinkle with baking chips, pineapple, coconut and nuts. Drizzle evenly with sweetened condensed milk.
  • Bake 30 to 35 minutes longer or until light golden brown. Cool completely. For bars, cut into 9 rows by 4 rows. Store covered in refrigerator.

1 cup sweetened shredded coconut
1 cup dairy-free white baking chips
1 cup macadamia nuts, chopped
1/2 cup chopped dried pineapple
1/2 cup dried mangoes, chopped
1 can (11.6 ounces) sweetened condensed coconut milk

Steps:

  • Preheat oven to 350°. Melt butter in a 9-in. square baking pan. On top of melted butter, sprinkle crumbs, then coconut, then baking chips, then macadamias, then pineapple and then mangoes. Pour well stirred coconut milk over all. Do not stir. Bake until a toothpick inserted in center comes out clean, about 30-35 minutes. Refrigerate at least 4 hours or overnight. Cut into bars and serve.

Steps:

  • Heat oven to 350°F. Spray 8- or 9-inch square pan with cooking spray.
  • In large bowl, beat butter and brown sugar with electric mixer on medium speed about 3 minutes or until light and fluffy. Beat in Bisquick mix, scraping bowl occasionally, until blended. Evenly pat dough in pan.
  • Bake 25 to 35 minutes or until golden brown.
  • Remove from oven and immediately sprinkle with chocolate chips. Let stand 2 minutes; spread chocolate over bars. Sprinkle with coconut and pecans, pressing lightly to adhere to chocolate. Cool completely, about 1 hour 30 minutes. Cut into 4 rows by 4 rows.
