3 mangoes (about 3 pounds total), peeled, pitted, and cut into chunks (about 5 cups)
2 cucumbers, peeled, seeded, and chopped
2 cups low-fat buttermilk
1 tablespoon fresh lime juice, plus lime wedges, for serving (optional)
1 teaspoon rice vinegar
Coarse salt
Hot sauce (optional)
Sliced fresh basil leaves, for garnish (optional)

Steps:

  • Working in batches, place mangoes, cucumbers, buttermilk, lime juice, and vinegar in a blender; puree until smooth. Season with salt and, if using, hot sauce. Refrigerate until chilled, about 1 hour. Serve gazpacho with lime wedges and basil, if desired.

This is my mother's Puerto Rican gazpacho salad recipe. I've been eating it since I was knee-high to a grasshopper. It's good and very easy to make.

½ pound salted cod fish
2 avocado - peeled, pitted, and diced
1 large tomato, diced
1 large Spanish onion, cut into matchstick-size pieces
2 tablespoons extra-virgin olive oil
1 drop white vinegar
1 pinch ground black pepper

Steps:

  • Bring a saucepan of water to a boil. Cook codfish in boiling water to reduce saltiness to your taste, 10 to 25 minutes; drain. Let codfish cool completely.
  • Mix avocado, tomato, and onion together in a bowl. Break cooled codfish into small pieces, discarding any bones, and add to the avocado mixture; stir gently. Drizzle olive oil over the mixture; add whine vinegar and stir gently. Season salad with black pepper; stir. Cover bowl with plastic wrap.
  • Cover bowl with plastic wrap. Refrigerate salad at least 45 minutes.

PUERTO RICAN SANCOCHO



Puerto Rican Sancocho image

This is my mom's Puerto Rican comfort soup. The mix of vegetables and herbs is an influence of the Spanish Canary Island ancestors of some Puerto Rican families. The soup was adjusted to the vegetables available in Puerto Rico by the addition of corn and pumpkin. In the Canary Islands of the 1700s, corn was only fed to farm animals! In Puerto Rico, some cooks now add ginger root, chile pepper, cumin, and other ingredients but I believe it destroys the original rich natural vegetable taste. Similar Spanish sancocho recipes were passed on to other Spanish colonies such as Columbia. Serve hot with bread to soak up the delicious flavor.

1 large onion, chopped
5 cloves garlic, chopped
3 sprigs fresh cilantro, chopped
¼ teaspoon ground white pepper
1 pinch dried oregano
salt to taste
1 ½ pounds beef stew meat, cut into small pieces
water to cover
½ (6.5 ounce) can tomato sauce
2 cubes beef bouillon
1 cup 1 1/2-inch cut fresh green beans
2 carrots, peeled and sliced
⅓ cup chopped celery
1 large chayote squash - peeled, cored, and sliced lengthwise
1 (15.5 ounce) can small white beans, rinsed and drained
½ head cabbage, chopped
1 green banana, peeled and sliced into 3/4-inch pieces
1 yellow plantain, peeled and cut into 1-inch pieces
5 large llautias (yautias), peeled and quartered
6 potatoes, peeled and quartered
½ cup chopped peeled pumpkin
2 ears fresh corn, sliced into 6 pieces each
⅓ cup chopped green bell pepper

Steps:

  • Heat olive oil in a large pot over medium-low heat; add onion, garlic, cilantro, white pepper, oregano, and salt. Cook and stir until onion is browned and very tender, about 20 minutes. Add stew meat; cook and stir until meat is browned on all sides, 5 to 7 minutes.
  • Pour enough water over meat mixture to fill pot 3/4 full; add tomato sauce and beef bouillon.
  • Mix green beans, carrots, celery, chayote squash, white beans, cabbage, green banana, yellow plantain, llautias, potatoes, pumpkin, corn, and green bell pepper (in this order), cooking and stirring after each addition. Cook until all the vegetables are tender and stew has formed a rich broth, 2 to 3 hours. Add more water or salt if needed.

I got this recipe from a coworker from Mexico. Since I live in the southwest, I make this recipe year round at work, but it is demanded in summer! My customers and anyone else who tries this loves it! You can add small shrimp to make this a main course or serve as a light lunch or appetizer. Keeps refrigerated for 1 week.

1/2 cup granulated sugar
1 lemon, juice of
1 papaya, peeled, chopped small

1 teaspoon fresh ginger, shredded, to taste

Steps:

  • Puree raspberries in a blender or food processor, then pass the puree through a sieve to remove the seeds.
  • In a non-reactive bowl, combine raspberry puree with sparkling water & sugar, then add lemon juice, papaya, mango, kiwi & pineapple.

In Puerto Rico, these wrapped goodies are made in large quantities during the holidays, often with several family members sharing in the tasks of preparation. A food processor or blender makes the job easier. There are different versions. This one has a lot of ingredients but it is still very good. You can also stuff them with chicken instead of pork. (Time to make depends on how much help you can get!)

1/2 cup lard or 1/2 cup vegetable oil
1 tablespoon annatto seeds
1 1/2 lbs lean pork, cut into 1/4-inch cubes
1/4 lb pork fatback, cut into 1/2-inch pieces or 1/4 lb bacon, strips cut into 1/2-inch pieces
2 -3 garlic cloves, minced
1 medium onion, coarsely chopped
1 green bell pepper, seeded and coarsely chopped
6 small sweet green peppers, seeded and coarsely chopped (aj?es dulces) (optional)
2 medium tomatoes, seeded and coarsely chopped
4 leaves fresh culantro, coarsely chopped (or cilantrillo, or both)
2 tablespoons chopped fresh oregano or 1 tablespoon dried oregano
1 (16 ounce) can chickpeas (reserve the liquid)
1/3 cup pitted green olives, sliced into thin rounds, with 1 tablespoon liquid
1 tablespoon capers (optional)
2 cups raisins
2 large green plantains
green bananas
2 lbs yautia (taro root, malanga, dasheen)
1 cup broth, reserved from cooking the filling
1 tablespoon salt
1 lb frozen banana leaves, spines removed or 1 lb fresh banana leaf, cut into 12-inch squares spines removed
20 sheets parchment paper, 12-inch x 18-inch (If banana leaves are not available, parchment paper may be used for entire wrapping)

Steps:

  • add oil in a large skillet over medium heat. Add the annatto seeds and heat for one minute to release their orange color.
  • Remove from heat and drain the oil into a separate container.
  • Discard the seeds and return half of the oil to the skillet.
  • Return the oil to medium-high heat and add the pork and bacon. Brown for about 5 minutes, stirring occasionally.
  • Add the garlic, onion, bell pepper, small green peppers, tomatoes, culantro, and oregano, and sauté for another 5 minutes.
  • Stir in the chickpeas and olives (with their respective liquids), capers, and raisins.
  • Cover and simmer over low-medium heat for 40 minutes. When done, uncover and allow to cool.
  • Drain the broth into a separate container and set aside.
  • Make the dough by peeling the plantains and the bananas, first cutting off the ends and running a knife tip lengthwise along one or more of the ridges.
  • Insert and run a thumb just beneath the cut peel to lift and remove it. Peel the yautia.
  • Place plantains, bananas, and yautia into a large bowl of salted cold water to prevent discoloring.
  • You can grate them using the fine side of a hand grater, or instead, cut into 1/2- to 1-inch pieces for the processor.
  • Fill 1/3 to 1/2 of the food processor or blender container with the cut vegetables, slowly adding broth to form a smooth, porridgelike mash. It should not be runny.
  • Transfer the purée to a large bowl. If you run out of broth, substitute water as needed.
  • Stir in the salt and the remaining annatto oil.
  • Place a banana leaf on a sheet of parchment paper.
  • Drop a scant 1/2 cup of the dough onto the center of the leaf and spread it several inches all around with the back of a spoon.
  • Drop 2 tablespoons of the filling a bit off center. Fold each long side and then the ends toward the center.
  • Slide the encased leaf toward the long edge of the parchment and wrap again.
  • Fold end flaps over.
  • Tie two pasteles together, with folded edges facing each other.
  • To cook, put a batch (4 to 6 tied bundles) into a large kettle of salted boiling water and cook semicovered at medium-high heat for 30 minutes.
  • Turn the bundles over and cook 40 minutes more.
  • When done, drain them well, remove the strings and wrappings, and serve hot.

3 cups freshly squeezed orange juice
2 teaspoons sugar
Grated zest of 1 orange
Grated zest of 1 lime
2 cups diced cantaloupe
2 cups diced honeydew melon
1 mango, peeled and diced
1 apple, peeled and diced
1 cup fresh blueberries
1 cup halved green or red seedless grapes
Fresh strawberries, hulled and cut in half, for garnish 1 or 2 kiwis, peeled and sliced (garnish)

Steps:

  • Combine tomatoe puree, orange juice, sugar, orange and lime zests, cantaloupe, honeydew and mango in a large bowl. Process half the mixture in a food processor fitted with a steel blade or a blender until smooth. Stir the pureed fruits into the remaining fruit mixture.
  • Stir in apple, blueberries and grapes. Refrigerate covered for several hours.
  • Ladle soup into bowls. Garnish each serving with strawberry halves and kiwi slices.
