BUFFALO CHICKEN BITES WITH BLUE CHEESE DIP
Buffalo Chicken Bites with Blue Cheese Dip are the perfect appetizer for Super Bowl Sunday! These mini pastries are a delicious football snack for all buffalo chicken lovers! Especially for those of you who prefer to enjoy spicy buffalo chicken with homemade blue cheese dip.

Steps:
- In the bowl of a stand mixer fitted with the dough hook, place warm milk and sugar, stir with a spoon to dissolve.
- Add 2 ½ cups flour and dry yeast, then mix on low speed until a soft dough forms. Add a little more flour at the time if needed. Kneed 5-6 minutes.
- Transfer the dough onto lightly floured surface and knead a few times with your hands to form a ball. Then transfer the dough into a bowl lightly greased with vegetable oil. Cover the bowl with plastic wrap and set aside on a warm place up to 2 hours or until the dough doubled in size and bubbles appear on the surface.
- While you are waiting the dough to raise, prepare the filling and Blue cheese dressing.
- In a bowl combine all filing ingredients (diced chicken, cream cheese, shredded Cheddar cheese, Hot sauce, crumbled bacon, melted butter, garlic powder and salt). Then stir well until evenly combined, set aside.
- In a bowl combine crumbled blue cheese, mayonnaise, sour cream, lemon juice, salt and pepper. Stir well. Store in the fridge until serving. Garnish with sliced green onion when ready to serve.
- Line large baking sheets with parchment paper.
- Transfer the dough on a floured surface and cut in 4 equal pieces.
- Knead each piece a few times, then roll with your hands to make about 12 inches long rope. Then using a rolling pin dusted with flour, roll out each rope in a 12 x 4 inches rectangle with the long side facing you.
- Spread ¼ of the filling into the bottom third of each rectangle, then roll as tightly as possible, starting with the end that has the filling.
- Cut each log in 12 1-inch pieces and arrange on baking sheets leaving 2 inches apart. Let it sit for about 20-30 minutes to rise.
- Meanwhile, preheat oven to 375 F and place the rack in the middle position.
- Brush each roll with melted butter and sprinkle with kosher salt.
- Bake 10-12 minutes, until golden brown. Serve warm with Blue Cheese Dip and enjoy!
BUFFALO CHICKEN BITES
Perfectly crisp buffalo chicken bites with a homemade bleu cheese dip is a classic appetizer that everyone loves!

- Combine dressing ingredients in a food processor and process until smooth. Refrigerate until ready to use.
- Place the buttermilk, salt, and chicken in a large Ziploc bag. Refrigerate for1- 2 hours.
- In a small saucepan add the hot sauce, water, sugar, butter, and 3 teaspoons of cornstarch. Whisk over medium heat until thickened. Set aside.
- In a small bowl, whisk the egg whites until foamy.
- In a medium bowl combine the flour, baking soda, 1 ½ cups of cornstarch, and 1/3 cup of the hot sauce mixture (from the saucepan). Mix until combined and it resembles cornmeal.
- Remove chicken from the buttermilk marinate and lightly pat dry with a paper towel.
- Toss a third of the chicken in the egg white mixture, making sure the chicken has been covered. Then transfer to the flour mixture and dredge the chicken until all of the pieces are coated (press to adhere the flour). Transfer the coated chicken to a plate. Repeat until all of the chicken has been dunked in the egg whites and dredged in the flour mixture.
- Heat the oil in a large Dutch oven over medium heat. The oil should register 350°F. (I use my instant read thermometer to check the temperature). Cook half the chicken at a time. Cook for 2 minutes, flip them over, and cook an additional 2-3 minutes.
- Transfer fried chicken to a towel lined plate. Repeat frying for the second half of chicken. *Note, make sure the oil returns to the 350°F temp before adding the chicken to it!
- At this point, you'll need to rewarm the hot sauce. Simply place it over low heat until it starts to simmer. Place the now fried chicken in a large bowl, pour the hot sauce overtop and toss the chicken until all of the pieces are coated in the sauce. Serve immediately with the homemade bleu cheese dressing.

Tap off excess Bisquick mixture and place chicken on cookie sheet.

- In 10-inch nonstick skillet, heat oil (1/4 inch) over medium-high heat 2 to 4 minutes. Cook chicken bites in oil in batches, about 1/3 at a time, 3 to 4 minutes, turning once, until golden brown. Drain on paper towels. Serve chicken with dipping sauce.

Buffalo wings were arguably one of my favorite foods to eat this past year. I love them, and they are incredibly easy to make at home. The balance of sweet and spicy in this recipe is fantastic; great for any game day!

- Place the chicken wings in large resealable bag in a shallow baking dish.
- Melt the butter in a small saucepan and remove from the heat. Stir in the honey, hot sauce, paprika, salt and cayenne pepper. Let cool completely and pour over the chicken wings. Seal the bag and let marinate at room temperature 25 to 30 minutes. Drain and discard the marinade.
- Meanwhile, preheat the oven to 425 degrees F. Line a large sheet tray with aluminum foil and spray with nonstick spray.
- Bake the chicken on the sheet tray, flipping once halfway through cooking, 35 minutes.
- Serve alongside the Blue Cheese Dipping Sauce and celery sticks.
- Combine the blue cheese, mayonnaise, sour cream and Worcestershire sauce together in mixing bowl or food processor and mix until combined. Season with salt and pepper.

- Mix cream cheese, hot sauce, ranch dressing, onion, garlic powder, and onion powder together in a bowl; fold in chicken.

Steps:
- Boil in a large sauce pan enough water to cook the chicken breasts.
- Then, boil the chicken until its cooked through, about 15 minutes.
- Remove the chicken, pat dry, and shred with a fork.
- Then place the shredded chicken in a large baking dish.
- For a tailgate, I usually use 2 of those disposable 8 by 8 aluminum pans, or one large lasagna-size one.
- Pour your desired amount of hot sauce over the chicken, and season with salt and pepper if desired.
- Set this dish in the refrigerator to let the chicken absorb the flavor.
- Preheat your oven to 350.
- Next, over medium heat in a large pan, melt the cream cheese.
- Pour in the blue cheese dressing and stir until they are completely combined.
- Pour this mixture over the chicken.
- Bake for 10 minutes.
- Remove, but don't turn the oven off.
- Sprinkle the cheddar cheese evenly over the top and return to the oven for another 10-15 minutes, until the cheese is melted and starting to brown just a little.
- Serve hot or cold with chips!
