2/3 cup sugar
2 teaspoons salt
2 teaspoons grated orange zest
2 garlic cloves, minced

3 pounds chicken wingettes and drumettes
3 teaspoons chili powder
3/4 teaspoon cayenne pepper
3/4 teaspoon hot pepper sauce
BLUE CHEESE DIP:
1 cup mayonnaise
1/2 cup blue cheese salad dressing
1/3 cup buttermilk
2 teaspoons Italian salad dressing mix

Steps:

  • In a small bowl, combine the soy sauce, sugar, salt, orange zest, garlic and pepper. Pour half of the marinade into a large shallow dish. Add the chicken; turn to coat. Cover and refrigerate for 1 hour. Cover and refrigerate remaining marinade. , Drain the chicken, discarding marinade. Transfer chicken to a greased 13x9-in. baking dish. Cover and bake at 325° for 1-1/2 hours or until chicken juices run clear., Using tongs, transfer chicken to a greased 15x10x1-in. baking pan. In a small bowl, combine the chili powder, cayenne, pepper sauce and reserved marinade. Drizzle over chicken. , Bake, uncovered, for 30 minutes, turning once. 1 cup Hellmann's mayonnaise
2 teaspoons finely chopped onions
1/4 cup chopped fresh parsley
1/2 cup sour cream
1 teaspoon lemon juice
1 teaspoon white vinegar (red is fine too)
1/2 cup mild blue cheese, crumbled
1 teaspoon minced garlic
25 chicken wings, tips removed, separated at joint (will have 50 pieces)
8 teaspoons melted butter
2 teaspoons vinegar
2/3 cup hot pepper sauce (Like Louisianna Hot Sauce)
cayenne pepper

Steps:

  • Mix all dip ingredients and chill overnight if possible.
  • Spread wings out on a lightly oiled cookie sheet.
  • Mix melted butter, vinegar, and hot pepper sauce.
  • Brush butter mixture onto wings.
  • (Can do this ahead and hold for 2 hours maximum if at room temp).
  • Bake at 400° for 20- 30 minutes, or until wings are cooked through.
  • Baste one time during cooking.
  • Sprinkle cayenne during last 5 minutes of cooking for more heat.
  • Serve hot with dip and celery sticks.

4 tbsp butter
5 tbsp hot sauce such as Tabasco sauce or Crystal
1 tbsp white wine vinegar
900g/2lb - 1kg/2lb 4oz chicken wings
¼ tsp celery salt (optional)
flour , for dusting
sunflower oil , for frying
celery sticks, to serve
150ml buttermilk
150ml soured cream
85g blue cheese , crumbled
1 garlic clove , crushed
¼ tsp sweet paprika

Steps:

  • Slowly melt the butter, hot sauce and vinegar in a medium saucepan, then pour into a large bowl. Mix all the ingredients for the blue cheese dip together with a pinch of salt. Cover and chill until needed.
  • Trim the end off each chicken wing, then cut each in half through the joint. Tip the wings into a bowl. Add the celery salt (if using), seasoning and enough flour so they're all evenly coated.
  • Heat 4 tbsp oil in a large, deep frying pan and add the wings (do this in 2 batches if your pan isn't big enough). Fry them, stirring frequently, until they are cooked through and browned all over, about 10 mins for each batch. As soon as they are cooked, transfer them to the bowl of butter sauce and stir well. Repeat with the second batch. Serve the wings on a platter with any extra buttery sauce poured over and the blue cheese dip and celery sticks on the side

1/2 Cup Sour Cream
1/4 Cup Mayonnaise
1/4 Cup Milk
1/4 Cup Fresh Parsley (Chopped)

3 lbs Chicken Wings
1/4 Tsp Salt
3 Tbsp Unsalted Butter
1/4 Cup Hot Sauce

Steps:

  • In a medium bowl, combine all sauce ingredients and mix well. Cover and refrigerate.
  • Preheat broiler.
  • Arrange Chicken Wings on Baking Sheet. Sprinkle with salt.
  • Broil for 10 minutes approximately 5 inches from heat. Turn wings and broil until golden brown, approximately 10 to 15 minutes.

Instead of the traditional and now rather expensive chicken wings, I use boneless, skinless chicken thighs in my version of this popular snack. It's best to use natural, high-quality chicken. The dip can be made up to four days ahead, but definitely start this dish at least a day ahead of time to let the chicken marinate.

1/4 cup bourbon
1/4 cup soy sauce
1/4 cup fresh lemon juice
2 lb. boneless, skinless chicken thighs
1/4 lb. Maytag Blue, crumbled
1/2 cup mayonnaise (homemade or prepared)
1/4 cup sour cream
2 Tbs. cider vinegar
1/2 cup thinly sliced scallions
1 Tbs. finely chopped fresh flat-leaf parsley
1 Tbs. finely chopped fresh dill
1/2 tsp. coarse salt
1/4 tsp. freshly ground black pepper
Pinch cayenne
1/4 cup Crystal Hot Sauce (or another brand of cayenne hot sauce such as Frank's or Durkee, but not a fiery sauce like Tabasco)
4 Tbs. melted unsalted butter
3/4 tsp. coarse salt
1 Tbs. cornstarch mixed with 1/4 cup water
About 1 qt. vegetable oil for frying
1/2 tsp. freshly ground black pepper
3 cups unbleached all-purpose flour
2 colored bell peppers (orange, red, or yellow), cored, seeded, and cut into 1/2-inch wide strips
1 seedless cucumber, unpeeled, cut into spears
1 celery heart, washed and drained, cut into sticks

Steps:

  • Marinate the chicken: In a large bowl, combine the bourbon, soy sauce, and lemon juice. Trim and discard any visible fat on the chicken thighs. Cut each thigh lengthwise into 5 to 6 strips. Toss the strips in the bourbon mixture. Cover and refrigerate for 24 hours.
  • Make the dip: Blend half the cheese with the mayonnaise in a food processor until smooth. Add the sour cream and cider vinegar and process until the mixture has the consistency of creamy mayonnaise. Add the scallions, parsley, and dill and process again briefly. Add the remaining cheese, process very briefly (the dip should be slightly chunky), and remove from the food processor. Season to taste with salt, pepper, and cayenne. Wrap well and refrigerate for up to four days.
  • Make the sauce: In a small saucepan, whisk together the hot sauce, melted butter, salt, and cornstarch mixture. Heat while whisking constantly until the mixture comes to a boil. The sauce should be smooth and slightly thickened. Remove from the heat and keep warm.
  • Finish the dish: Heat the oven to 250ºF. Pour enough oil into a wok or deep, heavy pot to reach about 2 inches. Heat the oil to 365ºF or until the oil shimmers and the air 2 inches above the oil feels hot.
  • Drain the chicken well and pat dry with paper towels. Season the chicken with the 1/2 tsp. pepper. Spread the flour in a wide, shallow container and dredge one-third of the thigh strips, shaking off any excess flour. Carefully put the strips one at a time in the hot oil. Fry until the strips are golden brown, about 7 minutes. Remove from the oil and drain on paper towels. Repeat this process until all the chicken has been fried.
  • Put the fried chicken in a large bowl. Toss with the warm sauce and spread in a single layer on a baking sheet. Heat in the oven for about 5 minutes so the sauce is absorbed. Serve immediately with the dip, peppers, cucumber, and celery.

1 tablespoon salt
1 tablespoon red hatch chile powder
1 tablespoon smoked paprika
1 teaspoon ground black pepper
1 teaspoon granulated sugar
1/2 teaspoon granulated onion
1/2 teaspoon garlic powder
1/4 teaspoon dried thyme
1/4 cup white vinegar
2 tablespoons apple juice
2 tablespoons ketchup
2 teaspoons dark brown sugar
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon chile flakes
1/4 teaspoon paprika
1/4 cup (4 tablespoons) butter
1/4 cup hot sauce, such as Frank's RedHot

Steps:

  • Pat the wings dry, then toss with the All-Purpose Poultry Seasoning. Let sit for 15 minutes.
  • Preheat a grill to medium low (about 250 degrees F).
  • Once the grill is up to temperature, place the wings on the upper rack in the grill and cook with the cover closed for 15 to 20 minutes, or until the internal temperature is around 150 degrees F. Once the chicken wings reach the desired temperature, increase the temperature of your grill to medium high (about 400 degrees F). Spray your grill grates with nonstick grill spray, then place your wings onto the hot grates and cook to create a nice char on each side of the wings, until the final temp reaches 165 degrees F, about 1 minute per side.
  • Transfer the wings from the grill to a mixing bowl with the Buffalo BBQ Wing Sauce and toss to coat. Serve with the Blue Cheese Yogurt Dip (or your favorite ranch or blue cheese dressing) and carrots and celery sticks.
  • Combine the salt, chile powder, paprika, black pepper, granulated sugar, granulated onion, garlic powder and thyme in a mixing bowl and stir to evenly incorporate.
  • Combine the vinegar, apple juice, ketchup, brown sugar, salt, black pepper, chile flakes and paprika in a nonreactive container and whisk to combine.
  • Melt the butter over medium heat. Transfer to a mixing bowl, add the vinegar mixture and hot sauce and whisk to emulsify.
  • Combine the mayonnaise, yogurt, blue cheese, buttermilk, lemon juice, garlic powder, granulated onion, black pepper and salt and mix well. Cover and store in the refrigerator until ready to use. Great as a dip or dressing.

3 lbs chicken wings
6 ounces blue cheese
1 small onion, chopped fine
2 cloves crushed garlic

1/4 pint sour cream
2 tablespoons lemon juice
2 tablespoons freshly chopped parsley

Steps:

  • Make a paste with the garlic, cayenne, chili powder, lemon juice and paprika.
  • Gradually mix in the olive oil and tomato puree.
  • In a large glass bowl tumble the wings in the paste until evenly coated.
  • Cover with plastic wrap and refrigerate for at least 4 hours.
  • Tumble the wings again to ensure an even coating.
  • Preheat oven to 425F.
  • Arrange the wings on a baking try lined with aluminium foil and bake or 25 minutes, until crisp.

  • Make the dip: Pulse the sour cream, blue cheese, mayonnaise, garlic, milk and lemon juice in a food processor until combined but still chunky. Season with salt and pepper. Cover and refrigerate until ready to serve.
  • Make the wings: Heat 1 inch of vegetable oil in a large deep skillet over high heat until a deep-fry thermometer registers 375 degrees F. Set a rack on a rimmed baking sheet.
