BUFFALO CHICKEN PIEROGI BAKE



Buffalo Chicken Pierogi Bake image

Using frozen pierogies as the base, this Buffalo Chicken Pierogi Bake is a delicious comfort food casserole...and it can be made on a weeknight, too!

4 boneless (skinless chicken breasts)
12 oz. buffalo wing sauce
1 oz. dry ranch dressing mix
2 12.8-oz. packages frozen Mrs. T's Mini 4 Cheese Medley
2 tsp minced garlic
8 oz. cream cheese (softened)
1 cup low-sodium chicken broth
1½ cups shredded mozzarella cheese
1 cup shredded cheddar cheese
¾ cup thinly-sliced red onions
1 cup thinly-sliced celery
1 cup crumbled blue cheese (plus more for garnishing)
½ cup chopped green onions (plus more for garnishing)
buffalo wing sauce (for finishing)
ranch or blue cheese dressing (for finishing)

Steps:

  • Place chicken breasts in slow cooker. Pour wing sauce on top and then sprinkle ranch mix over wing sauce. Cover and cook on low for 6-7 hours.
  • Once cooked, place chicken breasts on a plate and shred using 2 forks.
  • Drain cooking liquid from slow cooker, reserving ~¼ cup. Return shredded chicken to slow cooker and add reserved cooking liquid; stir until well combined.
  • Preheat oven to 400°F.
  • Spray a 9"x13" pan with nonstick cooking spray. Spread pierogies evenly on bottom of pan; set pan aside.
  • Using a medium saucepan, add garlic, cream cheese and chicken broth. Place over medium heat and cook, stirring often, until cream cheese has melted and mixture is well combined.
  • Pour sauce evenly on top of pierogies.
  • Using a large mixing bowl, add shredded buffalo chicken, mozzarella cheese, cheddar cheese, red onions, celery, blue cheese and green onions; stir until well combined. Spread this mixture evenly on top of pierogies.
  • Bake for 20-25 minutes, or until cheese has completely melted.
  • Remove pan from oven and garnish top with additional crumbled blue cheese and green onions.
  • Before serving, drizzle top with buffalo sauce and ranch/blue cheese dressing.

1 box Mini 4 Cheese Medley or your favorite variety of Mrs. T's® Mini Pierogies
Nonstick cooking spray
½ stick butter, melted
½ cup cayenne hot sauce
½ teaspoon chili powder
Blue cheese or ranch dressing, as desired
Carrots
Celery

Steps:

  • Traditional: Preheat oven to 400ᵒF. Combine melted butter, cayenne hot sauce and chili powder; toss with pierogies.Coat a baking sheet with nonstick cooking spray and spread pierogies evenly on the baking sheet.Bake for 16 to 18 minutes, or until pierogies are browned. For best results, turn over halfway through bake time.Serve with blue cheese or ranch dressing, carrots and celery. Deep Fryer: Deep fry pierogies in 350ᵒF oil for 3 minutes or until golden brown. Toss with cayenne hot sauce mixture. Air Fryer: Combine melted butter, cayenne hot sauce and chili powder; toss with pierogies.Place pierogies in the air fryer basket.Set the air fryer to 400°F for 12 to 14 minutes, tossing pierogies halfway through.Serve with blue cheese or ranch dressing, carrots and celery.

Great-Gramma's Lazy Pierogi image

I know there are many ways to make lazy pierogi. This is a recipe my Great Gramma taught me. Pretty easy and oh so delish!!

1 pound spiral noodles cooked and drained.
1 can(s) cr of mushroom soup plus 2tbls milk or cream
1 med sliced onion
1 qt mushrooms
1 bag(s) refridgerated sauerkraut
6 slices bacon
s&p
1/2 stick butter

Steps:

  • 1. Boil and set aside pasta.
  • 2. In large frying pan cook bacon, set aside. Crumble. Same pan toss in butter melt, and saute mushrooms and onion till softened, turn pan to med, toss drained kraut in pan cook for 5 minutes to marry flavors. Add soup and bacon stir well.
  • 3. Add cooked Pasta to pan stir well. Transfer to low setting crockpot and let the flavors come together for hour. Longer sits the better the flavor. Serve as main dish or side with keilbasa or protien of choice.

Every time we have a party I'm requested to make this dish. Wonderful mixture of pasta, bacon, mushrooms, and onions.

1 (16 ounce) package rotelle pasta
½ pound bacon, chopped
2 onions, chopped
½ pound mushrooms, quartered
1 tablespoon butter
1 (16 ounce) can sauerkraut - rinsed and drained
2 (10.75 ounce) cans condensed cream of mushroom soup
salt and pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Preheat oven to 350 degrees F (175 degrees C).
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Stir in onions, and cook until translucent. In a separate pan, saute the mushrooms in butter.
  • In a large bowl, combine pasta, bacon, onion, mushrooms, sauerkraut and condensed soup. Season with salt and pepper. Pour into a 9x13 inch baking dish.
  • Bake in preheated oven for 45 minutes.

For this tasty pierogi casserole, sauerkraut, onion, mushrooms, and pasta are combined and baked in a rich, buttery sauce. If you are making this ahead and are going to reheat it in the oven you may have to add a little water. If cold, bake at 350 degrees for 1 1/2 to 2 hours.

3 pounds sauerkraut
1 onion, chopped
1 pound uncooked rotini pasta
1 pound fresh mushrooms, chopped
½ pound butter
2 (10.75 ounce) cans condensed cream of mushroom soup

Steps:

  • Place the sauerkraut and onion in a large skillet over medium-low heat with enough water to cover. Simmer 1 hour, or until most of the water has cooked off.
  • Bring a large pot of lightly salted water to a boil. Add rotini and cook for 8 to 10 minutes or until al dente; drain.
  • In a medium skillet over medium heat, saute the mushrooms in 2 tablespoons of the butter for about 5 minutes.
  • Stir the remaining butter, cooked pasta, and cream of mushroom soup into the sauerkraut mixture. Cook and stir 15 minutes, or until heated through.

One of my employees made this for a Christmas party a few years back. I loved it and so did everyone else. I got the recipe from her and added some things over the years. No complaints were heard : )

1 lb penne pasta
2 (4 ounce) cans mushrooms (pieces and stems works fine)
1 (10 1/2 ounce) can cream of mushroom soup
1 (27 ounce) can sauerkraut (the package kind in the cooler section works well too)
5 tablespoons butter
1 medium onion
1 (16 ounce) package Polish sausage (I like the turkey kind)

Steps:

  • Boil water for pasta.
  • While water is boiling add 3 Tablespoons of Butter to a medium sized skillet.
  • Dice up one medium sized onion and add to skillet.
  • Saute until clear. Add mushrooms after being drained.
  • Add Polish Sausage after being sliced.
  • Sautee for about 5-7 minutes to heat through.
  • Cook pasta according to package.
  • Drain noodles.
  • Add saurkraut to hot pot and turn heat to medium. Add 2 Tablespoons of Butter while noodles drain.
  • Combine the saurkraut and sausage mixture into to pot. Mix around.
  • Add noodles and combine thoroughly. Put heat to medium low for 5-7 minutes.
  • Enjoy!

  • At this point turn your dough out on a lightly floured surface and roll out less than 1/4” thick. Using a 3” circular cutter, cut out your circles.
