1 large vanilla pudding mix (NOT instant)

Steps:

  • Grease a 9x13 pan.
  • Place frozen rolls in pan.
  • Mix remaining ingredients and pour over frozen rolls.
  • Place in oven overnight.
  • In the morning, bake at 350 for 20-25 minutes.
  • Turn out upside down.

EASY HAMBURGER BUNS



Easy Hamburger Buns image

This recipe came with King Arthur's hamburger bun pan I purchased. Not as super soft as store bought buns, but I like these much better. I use my automatic bread machine (ABM) to make these using the dough cyle for kneading and forming them separately. If you are using the ABM, you can add all ingredients in the machine while it heats up except the milk/butter mixture. When it starts to knead, add the milk/butter mixture in and let the machine complete the dough cycle and proceed with step 3.

1 cup milk
4 tablespoons butter, soft
3 cups all-purpose flour
1 1/4 teaspoons salt
2 tablespoons sugar
2 teaspoons yeast
1 teaspoon dried onion flakes (optional)
1 egg white, beaten
1 tablespoon water
sesame seeds, for sprinkling

Steps:

  • Warm the milk and butter together just until the butter starts to melt.
  • Place all of the ingredients into a mixing bowl. (I use my bread maker dough cycle here). Stir to combine, then knead the dough until it's smooth and elastic, about 10-15 minute. Add a bit of additional flour or water if needed.
  • Place the dough in a lightly greased bowl, turning to coat all sides. Cover it with lightly greased plastic wrap, and let the dough rise until it's doubled in bulk.
  • Turn the dough out onto a lighly floured work surface and divide it into six pieces. Roll each piece into a smooth ball and place it in the lightly greased pan.
  • Cover the pan let the buns rest for 10 min, then press each to flatten the top. Cover and let it rise until puffy, about 1 hour.
  • Mix beaten egg white with 1 T water.
  • Just before baking, brush with the egg white water mixture and sprinkle with sesame seeds. Bake the buns in a preheated 375 F degree oven for 15 to 20 minutes or until they are golden brown.
  • Remove from oven and let cool on a rack before slicing in half horizontally.

1 cup warm tap water
⅓ cup oil
¼ cup sugar
2 tablespoons yeast
1 egg (beaten)
1 tablespoon softened butter
½ teaspoon salt
3 to 4 cups all-purpose flour (I used closer to 3)
⅛ cup milk (room temperature)

Steps:

  • Preheat oven to 400*F.
  • In a large bowl, combine 1 cup water, oil, sugar, and yeast. Let sit until yeast is bubbly (about 8 minutes). Stir in beaten egg, softened butter, and salt.
  • With a stand mixer or by hand, add flour, one cup at a time until you have a soft dough that isn't sticky. Knead by hand 10 minutes or 5 minutes with a stand mixer.
  • Divide dough into 18 even pieces, and form into balls. Place in a greased pan and cover with parchment paper and a kitchen towel.
  • Let rise 10 minutes in a warm place. (You can allow them to rise up to an additional 30 minutes if time allows).
  • Lightly brush with milk and bake on the middle rack for 10-12 minutes or just until browned.

My Mom's Homemade Buns are the perfect dinner roll for any occasion! Incredibly soft and fluffy, use all purpose or whole wheat flour, make a big batch and freeze for later.

1/2 cup warm water ((105-110 degrees F -- warm but not hot))
1 tablespoon instant or active dry yeast ((I use instant, but either works in this recipe))
1 teaspoon granulated sugar
2 cups warm water
1/2 cup melted unsalted butter
1/3 cup granulated sugar
1 tablespoon salt
6-7 cups all purpose or whole wheat flour

Steps:

  • In a small bowl or liquid measuring cup, whisk together the warm water, yeast and sugar.
  • Let sit for 10 minutes or until bubbly -- this is how you know your yeast is working. This step is technically not required when using instant yeast, but I do it always anyways, so that I know my buns will be a success.
  • In the bowl of a stand mixer (or a very large bowl if you are kneading by hand), whisk together the 2 cups warm water, butter, 1/3 cup sugar and salt.
  • Add the bubbly yeast mixture and stir to combine.
  • Place the bowl in the stand mixer and put the dough hook on the machine. You can also knead by hand.
  • Add the flour, one cup at a time, and mix until nearly combined before adding more. You can use all purpose or whole wheat or a combination. Start with 4-5 cups flour, mixing until each is incorporated.
  • The closer you get to your dough being ready, the less flour you will add at once. We want a smooth, soft dough, never stiff, so we need to watch and stop adding flour at just the right moment.
  • Add up to 6-7 cups flour total, very gradually at the end, until the dough comes together in a smooth, soft ball and does not stick to the sides of the stand mixer. When you touch it, it should be smooth and slightly tacky but not sticky.
  • Place dough in a large lightly greased bowl (you can use the same bowl and grease it), and cover with plastic wrap or a clean kitchen towel.
  • Set in a warm spot (I use the oven with the light on -- turn the oven on to preheat for 2-4 minutes before turning off and adding the dough) and let rise until doubled, about 1.5 hours.
  • Uncover dough, punch down, and roll out 20-24 rounds -- smoothing the top and pinching the seam in the back to smooth (see video for additional details).
  • Place on a parchment lined baking sheet and let rise (you don't have to cover them) in a warm spot for 30 to 90 minutes (instant yeast will be quicker) until doubled.
  • Bake at 350 degrees for 15-20 minutes, until light golden brown.

Very quick and simple. Nothing is better than fresh hamburger buns. This is a very sticky dough that requires very little kneading.

¼ cup white sugar

  • In a large mixing bowl, dissolve yeast and sugar in warm water. Let stand until creamy, about 10 minutes.
  • Add oil, 2 cups of flour and the salt; stir well to combine. Add the remaining flour, 1/2 cup at a time, stirring well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes. 4 cups (512g) all-purpose flour, (or more if needed)
2 envelopes (about 2 tablespoons) rapid rise or instant yeast
1/4 cup (50g) granulated sugar
1 large egg, (room temperature)
1 teaspoon salt
1 1/2 cups (367g) whole milk
2 tablespoons salted butter, (melted)
1 teaspoon kosher salt, (optional)

Steps:

  • Combine 3 cups flour, undissolved yeast, sugar, egg, and salt in a large bowl or in the bowl of your stand mixer fitted with dough hook.
  • Heat milk until very warm (110°F to 120°F).
  • Add warm milk to flour mixture. Knead 2 minutes at medium speed, scraping bowl occasionally if needed. Add 1/2 cup flour; knead 2 more minutes.
  • Add remaining 1/2 cup flour. The dough should be pulling away from the sides of the bowl and very soft. (If the dough seems too wet you may need more flour. Add in 1/4 cup increments until the dough has pulled away from the sides of the bowl while kneading.)
  • Cover with a clean towel and let REST 30 MINUTES.
  • Remove towel and punch down dough.
  • Divide dough into equal pieces and shape into balls. Place in greased 9x13 inch pan. Cover with plastic wrap and REST in a warm place - over 70°, preferably 75° - until doubled in size, about 30 minutes. (I had 6 left over and added them to a greased 7-inch pie dish and baked as directed.)
  • Bake in preheated 375°F oven for 12-17 minutes or until golden brown.
  • Brush with melted butter while warm.
  • Sprinkle kosher salt on top if desired.

We're going to make our own, and not only are these going to be the perfect shape, they're going to taste way better than anything that comes out of a plastic bag. The total time takes almost 4 hours, but the actual amount of work involved is maybe 10 minutes.

1 (.25 ounce) package active dry yeast (such as Fleischmann's ActiveDry Yeast®)
1 pound all-purpose flour, or as needed - divided
1 cup warm water (105 degrees F/41 degrees C)
1 large egg
3 tablespoons butter, melted
3 tablespoons white sugar
1 ¼ teaspoons salt
1 teaspoon olive oil
1 egg, beaten
1 tablespoon milk
1 teaspoon sesame seeds, or as needed

Steps:

  • Line a baking sheet with a silicone mat or parchment paper.
  • Place yeast into bowl of a large stand mixer; whisk in 1/2 cup flour and warm water until smooth. Let stand until mixture is foamy, 10 to 15 minutes.
  • Whisk 1 egg, melted butter, sugar, and salt thoroughly into yeast mixture. Add remaining flour (about 3 cups).
  • Fit a dough hook onto stand mixer and knead the dough on low speed until soft and sticky, 5 to 6 minutes. Scrape sides if needed. Poke and prod the dough with a silicone spatula; if large amounts of dough stick to the spatula, add a little more flour.
  • Transfer dough onto a floured work surface; dough will be sticky and elastic but not stick to your fingers. Form the dough lightly into a smooth, round shape, gently tucking loose ends underneath.
  • Wipe out stand mixer bowl, drizzle olive oil into the bowl, and turn dough over in the bowl several times to coat surface thinly with oil. Cover bowl with aluminum foil. Let dough rise in a warm place until doubled, about 2 hours.
  • Transfer dough to a floured work surface and pat to flatten bubbles and form into a slightly rounded rectangle of dough about 5x10 inches and about 1/2 inch thick. Dust dough lightly with flour if needed. Cut dough into 8 equal pieces. Form each piece into a round shape, gently tucking ends underneath as before.
  • Use your hands to gently pat and stretch the dough rounds into flat disc shapes about 1/2 inch thick. Arrange buns about 1/2 inch apart on prepared baking sheet. Dust buns very lightly with flour. Drape a piece of plastic wrap over the baking sheet (do not seal tightly). Let buns rise until doubled, about 1 hour.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Beat 1 egg with milk in a small bowl, using a fork, until mixture is thoroughly combined. Very gently and lightly brush tops of buns with egg wash without deflating the risen dough. Sprinkle each bun with sesame seeds.
  • Bake in the preheated oven until lightly browned on top, 15 to 17 minutes. Buns will stick together slightly where they touch. Let cool completely, tear the buns apart, and slice in half crosswise to serve.

I attend a mom's group at my church and one Tuesday morning our "craft" was making buns. The experienced bun makers of the previous generation taught all of us young moms the craft of bun making. Now I am proud of my bun making and I am glad that I had a chance to acquire this new skill. (Thank you Mavis!) Prep time does not include rising time. Sometimes I will make a big batch of this recipe and then make breadsticks, hoagie rolls, small buns for kid's lunches, and even a batch of cinnamon rolls but adding cinnamon and sugar and rolling up the dough. All of these can be tucked into the freezer until you need them.

STEAMED BAO BUNS

300 g (2 cups) plain flour (all-purpose flour) or bleached flour
125 g (1 cup) cornflour (cornstarch)
5 tablespoons caster sugar (super-fine sugar)
1 teaspoon instant yeast (also called instant dried yeast or fast-action dried yeast) (see Kitchen Notes)
2 1/2 teaspoons baking powder
180 ml (3/4 cup) warm water
60 ml (1/4 cup) vegetable oil, plus extra

Steps:

  • Measure all of the dry ingredients into a large mixing bowl or the bowl of an electric stand-mixer (if using).
  • Measure the warm water and oil into a measuring jug. The water needs to be a bit more than lukewarm to help activate the yeast, but it shouldn't be boiling hot.
  • Using the dough hook on medium speed, mixing the liquid ingredients into the dry ingredients. Depending on the type of flour which you have used, you might need more or less liquid that than stated in the recipe.
  • Once you have a sticky dough, continue kneading the dough on medium speed until it becomes soft and smooth to touch. This should take about 10 minutes using the stand-mixer on medium speed, or about 5 minutes by hand.
  • Once the dough is soft and smooth, I recommend kneading it by hand for a few more minutes on the kitchen benchtop.
  • Place the ball of dough back into the (clean) mixing bowl.
  • Cover the bowl with some cling film or a re-usable bowl cover.
  • Place the bowl somewhere warm for about 60 to 90 minutes for the dough to rise and double in size.
  • Once the dough has doubled in size, punch it back and knead it by hand for about 5 minutes to release any air bubbles in the dough.
  • Then roll out the dough until it is about 1 cm in height.
  • Use your hands to rub some oil onto the surface of the dough.
  • Use an 8 cm (3 inch) cookie cutter to cut out rounds from the dough.
  • Re-roll the dough as needed.
  • Place these rounds onto a small sheet of baking paper - I like to use plain white cupcake wrappers which I flatten with a rolling pin.
  • Fold over each round and then use a rolling pin to gently flatten the dough to form the bun shape.
  • Place all of the shaped buns onto a large tray, cover with a tea towel, and place in a warm place for about 30 minutes for the buns to rise again. After this time, the bao buns should have puffed up slightly.
  • Meanwhile, prepare the steamer on the stove (see Kitchen Notes below).
  • Steam the buns in batches for 10 to 12 minutes, or until they are puffy and soft, and cooked all the way through.
  • Serve the buns immediately.

They freeze well, and make excellent toast. This recipe is a combo of my grandmothers recipe and a few others, all tweaked to make a fast, easy, soft, fluffy bun.

2 tablespoons unsalted butter (at room temperature, cut into 4 pieces)

  • Combine the warm water, warm milk, yeast and sugar in the bowl of a stand mixer. Stir gently to combine. Let stand for 5 minutes.
  • Add the salt and egg to the bowl. Use the paddle attachment to combine on low speed.
  • Add both flours and mix on low speed until combined, then mix in the butter pieces.
  • Switch to the dough hook and knead for 8 minutes. The dough will be very soft and slightly sticky.

1/3 cup milk (low-fat ok)
3 tablespoons granulated sugar
1/3 cup butter
3 1/2 teaspoons instant yeast
3/4 cup warm water (105F - 115F)
3 cups all-purpose flour
1/2 teaspoon salt
3/4 cup brown sugar (packed)
1/4 cup granulated sugar
1 tablespoon cinnamon
1/4 cup butter (softened)
6 tablespoons butter (melted)
½ cup brown sugar (packed )
¼ cup granulated sugar
¼ cup dark corn syrup
¼ teaspoon salt
2 tablespoons water
1 cup coarsely chopped pecans (optional)

Steps:

  • Grease a 9x13-inch metal baking pan; set aside.
  • In a small saucepan, stir milk, sugar, and butter together. Heat over low heat just until butter melts and sugar dissolves. Cool to about 100-105 F.
  • Pour the milk mixture into the bowl of a stand mixer.
  • Add the yeast and warm water.
  • Add 2 cups flour and salt to yeast mixture. Using a dough hook, mix on low speed for about 1 minute.
  • With the mixer still going, add remaining flour, 1/2 cup at a time. Mix about 1 ½ minutes, or until dough starts to clean the sides of the bowl.
  • Knead on low speed for about 2 more minutes, or until dough is smooth and elastic - the dough will still be slightly sticky to the touch.
  • Place dough in a greased bowl, turning it to grease the top. Cover the dough with a clean, dry dish towel.
  • Let it rise in a warm place, free from draft, for about 10 minutes.
  • While dough is rising, prepare the topping.
  • Whisk melted butter, brown sugar, granulated sugar, corn syrup, and salt together in medium bowl until smooth.
  • Add water and whisk until combined.
  • Pour mixture into prepared pan. If necessary, tilt pan to get mixture to cover pan. Sprinkle evenly with pecans, if using. Set aside.
  • Turn the dough onto a floured surface, and roll into a 12x16-inch rectangle.
  • Stir filling ingredients together, and spread over dough. Since the filling is a little crumbly, I gently press it into the dough to help it stick.
  • Roll dough up lengthwise, pinching seam to seal.
  • Cut into 12 pieces, and place over topping in prepared baking dish. I use a serrated knife to cut the dough.
  • Cover the baking dish with the dish towel, and let the dough rise for about 15 minutes.
  • Meanwhile, preheat oven to 350 F.
  • Bake at 20-25 minutes, or until the rolls are golden brown.
  • Tent with aluminum foil, and continue to bake for an additional 10-15 minutes, or until baked through.
  • Let the sticky buns cool in pan for 5 minutes.
  • Place a serving dish over the pan, and carefully invert pan. Be careful as topping will be hot.
  • Remove pan, and replace any topping that has fallen off.
  • Let buns sit 10-15 minutes before serving.

1/4 cup warm water (110°F)
2 Tablespoons sugar
2 cups all-purpose flour, plus more as needed
1/2 teaspoon salt
1/2 cup whole milk
2 Tablespoons unsalted butter, melted, plus more for brushing
Large-flake sea salt (optional)

Steps:

  • In the bowl of a stand mixer fitted with the dough hook, combine the warm water, yeast and sugar. Let the mixture stand for 5 minutes.
  • Add 1 cup of the flour, as well as the salt, whole milk and melted butter and beat for 2 minutes.
  • Add an additional 1 cup of flour and beat on high speed for 2 minutes until the dough begins to form a ball. (If the dough is still very sticky, add an additional 1/4 cup flour as needed.)
  • Lightly flour your work surface. Scrape the dough onto your work surface, and using the heel of your hand, knead it for 2 minutes then place the dough in a greased bowl and cover the bowl with a towel. Set the bowl in a dark, warm place for 30 minutes until it has doubled in size.
  • Grease an 8-inch round pan with cooking spray or butter.
  • Divide the dough into 12 pieces then roll each piece into a ball and arrange the balls in the prepared pan. Cover the pan with a towel then return it to a dark, warm place for 30 minutes.
  • Preheat the oven to 375°F. Uncover the rolls then bake them for 20 to 25 minutes until they are golden brown and cooked through.
  • Remove the rolls from the oven, brush them with additional melted butter and immediately sprinkle them with the sea salt (optional). Serve them warm.
  • If you want to prepare the rolls in advance, follow the directions up until you place the (unbaked) rolls in the baking pan then tightly cover the pan with plastic wrap. When ready to serve, remove the rolls from the freezer and place them in the fridge overnight then bring them to room temp to rise before baking them as directed.

17.6 oz all purpose flour (4 US cups, measured by spoon and level method (please see notes).)
½ cup warm milk
¾ cup warm water
2 tsp dry active yeast
1 1/2 tsp salt
1 tbsp sugar
1 egg
2 tbsp softened butter / oil
Extra oil to lightly oil the bowl
1 egg for the egg wash

Steps:

  • In a mixing bowl (of your stand mixer), combine the flour, yeast, sugar and salt.
  • In another small bowl, whisk together the water, milk and egg.
  • With the paddle attachment in your stand mixer or a dough whisk, mix the dry ingredients and add the water-milk-egg mixture and mix to combine.
  • Switch to the dough hook of your stand mixer, and knead the dough to bring it together. The dough needs to be fairly wet and sticky. Knead for about 5 minutes, until you have a smooth ball of dough.
  • Add the oil or butter and knead for a further 5-10 minutes (I knead it for about 8 minutes), until the dough is shiny, smooth and tacky to the touch.
  • Lightly oil a big bowl and place the dough in it. Make sure the dough is lightly oiled on the surface as well.
  • For best results, cover the bowl with plastic wrap and store in the fridge overnight (8 hours) or for up to 24 hours. Alternatively, if you want to bake it on the same day, you can cover the dough with plastic wrap and let it rise for 1 hour in a warm place, until it has doubled in size.
  • On the day you bake the bread rolls - turn the chilled dough out on to a lightly floured surface and lightly dust the surface of the dough as well. If the dough wasn't chilled, you may need extra flour on your hands and on your work surface to prevent the dough from sticking.

500g strong white bread flour , plus extra for dusting
7g sachet fast action yeast
1 tsp white caster sugar
2 tsp fine salt
1 tsp sunflower oil , plus extra for the work surface and bowl

Steps:

  • Tip the flour, yeast, sugar, salt and oil into a bowl. Pour over 325ml warm water, then mix (with a spatula or your hand), until it comes together as a shaggy dough. Make sure all the flour has been incorporated. Cover and leave for 10 mins.
  • Lightly oil your work surface and tip the dough onto it. Knead the dough for at least 10 mins until it becomes tighter and springy - if you have a stand mixer you can do this with a dough hook for 5 mins. Pull the dough into a ball and put in a clean, oiled bowl. Leave for 1 hr, or until doubled in size.
  • Tip the dough onto a lightly floured surface and roll into a long sausage shape. Halve the dough, then divide each half into four pieces, so you have eight equal-sized portions. Roll each into a tight ball and put on a dusted baking tray, leaving some room between each ball for rising. Cover with a damp tea towel and leave in a warm place to prove for 40 mins-1 hr or until almost doubled in size.
  • Heat the oven to 230C/210C fan/gas 8. When the dough is ready, dust each ball with a bit more flour. (If you like, you can glaze the rolls with milk or beaten egg, and top with seeds.) Bake for 25-30mins, until light brown and hollow sounding when tapped on the base. Leave to cool on a wire rack.

1 tbsp instant yeast (10g)
3½ cups all purpose flour (418g)
2 tbsp onion powder (20g)
2 tbsp garlic powder (20g)

2 eggs (one for the dough, one for the egg wash)
¼ cup sugar (50g)
1 cup shredded cheddar cheese
1¼ tsp salt
½ cup topping: shredded cheese (divided into 8)

Steps:

  • Combine the ingredients in the order that they are listed and then mix by hand or mixer until you have a soft, smoothish dough.
  • Cover the dough, and let it rise for 1 to 2 hours, however long it takes for the dough to double in size.
  • When finished rising, gently punch down the dough and divide it into 8 pieces.
  • Roll each piece into a round ball and gently flatten so it is about 3″ wide.
  • Transfer each of the buns on a parchment lined baking sheet with at least 1.5″ inches in-between each bun, use two sheet pans if necessary.
  • Cover the dough again and let rise for about an hour.
  • Preheat oven to 355F.
  • When finished rising, brush egg wash on top of each bun and then top with shredded cheese, around 1 tbsp per bun.
  • Bake for 15-17 minutes.
  • When done, let cool before enjoying!

1/4 cup dark raisin
2 teaspoons baking powder
3/4 teaspoon baking soda

3/4 cup plain fat-free yogurt
1/4 cup canola oil
2 teaspoons margarine, melted
1/4 cup light brown sugar, firmly packed
4 tablespoons walnuts, finely chopped
1 teaspoon cinnamon (a little more if you wish)

Steps:

  • Spray a 9 inch baking pan and preheat oven to 425°F.
  • In a small bowl mix the filling ingredients together, mixing well.
  • In large bowl combine the sugar, raisins, flour, salt, baking powder and baking soda.
  • Add yogurt and oil, mix well together until you have formed a dough.
  • On a lightly floured surface knead the dough 8-10 times.
  • Roll the dough out to a 8" x 10" rectangle.
  • Brush dough with margarine and sprinkle the filling evenly over the dough.
  • Roll up jelly roll fashion, Pinch seam to seal.
  • Cut into 12 1-inch pieces.
  • Place rolls slightly touching in the prepared baking pan.
  • Bake for approx 17 minutes or until golden.
  • Place on wire rack for 10 minutes.

12 tablespoons (1 1/2 sticks) unsalted butter, at room temperature
1/3 cup light brown sugar, lightly packed
1/2 cup pecans, chopped in very large pieces
1 package (17.3-ounces/ 2-sheets) frozen puff pastry, defrosted
2 tablespoons unsalted butter, melted and cooled
2/3 cup light brown sugar, lightly packed
3 teaspoons ground cinnamon
1 cup raisins

Steps:

  • Preheat the oven to 400 degrees F. Place a 12-cup standard muffin tin on a sheet pan lined with parchment paper.
  • In the bowl of an electric mixer fitted with the paddle attachment, combine the 12 tablespoons butter and 1/3 cup brown sugar. Place 1 rounded tablespoon of the mixture in each of the 12 muffin cups. Distribute the pecans evenly among the 12 muffin cups on top of the butter and sugar mixture.
  • Lightly flour a wooden board or stone surface. Unfold 1 sheet of puff pastry with the folds going left to right. Brush the whole sheet with the melted butter. Leaving a 1-inch border on the puff pastry, sprinkle each sheet with 1/3 cup of the brown sugar, 1 1/2 teaspoons of the cinnamon, and 1/2 cup of the raisins. Starting with the end nearest you, roll the pastry up snugly like a jelly roll around the filling, finishing the roll with the seam side down. Trim the ends of the roll about 1/2-inch and discard. Slice the roll in 6 equal pieces, each about 1 1/2 inches wide. Place each piece, spiral side up, in 6 of the muffin cups. Repeat with the second sheet of puff pastry to make 12 sticky buns.
  • Bake for 30 minutes, until the sticky buns are golden to dark brown on top and firm to the touch. Be careful - they're hot! Allow to cool for 5 minutes only, invert the buns onto the parchment paper (ease the filling and pecans out onto the buns with a spoon) and cool completely.

  • Gather the ingredients.
  • Combine the yeast and warm water in a large bowl or the bowl of a stand mixer. Let the mixture stand for about 10 minutes, until foamy.
  • In a small bowl, whisk the milk, egg, and melted butter together to blend.
  • Add the milk mixture to the yeast mixture along with the sugar, salt, and flour.
  • Knead the dough by hand (or using a stand mixer with the dough hook) for 8 to 10 minutes, adding a little more flour if necessary to keep the dough from sticking to your hands, the countertop, or the sides of the bowl. The dough should be smooth and elastic at this point.
  • Generously grease a large bowl with butter or oil. Gather the dough into a ball and place it into the greased bowl. Turn it over a few times to coat the dough thoroughly.
  • Cover the bowl with plastic wrap and let the dough rise for 1 to 1 1/2 hours, or until it has doubled in bulk.
  • Line 2 large baking sheets with parchment paper or lightly grease the pans.
  • Punch down and pat the dough into a rectangle.
  • Cut the dough into 18 pieces, about 1 1/2 to 1 3/4 ounces each (or smaller).
  • Shape the dough pieces into firm balls, flatten slightly with your hand, and place on the prepared baking sheets 2 to 3 inches apart.
  • Cover the buns with a lightweight kitchen towel and let them rise in a draft-free spot for about 30 minutes.
  • Preheat the oven to 375 F and arrange racks in the lower and upper thirds of the oven. If using the egg wash , whisk the egg white with 1 tablespoon of water until blended.
  • Before placing in the oven, brush each roll with the egg wash and sprinkle with sesame seeds or poppy seeds if using.
  • Bake for 15 to 18 minutes, or until golden brown.
  • If you didn't use the egg wash and seeds, brush with melted butter if desired. Let the buns cool on a rack.
  • Split the buns apart and stuff them with sandwich fillings.
  • Gather the ingredients.
  • In a small bowl, whisk together the water, milk, melted butter, and egg.
  • Place the milk mixture along with the flour, sugar, salt, and instant or bread machine yeast in the bread machine in the order suggested by the manufacturer.
  • Set to the dough cycle.
  • Remove the finished dough to a lightly floured surface. Flatten into a rectangle, cut into pieces, and shape the dough into balls. Place on 2 parchment-lined baking sheets, cover with a kitchen towel, and let rise for 30 minutes.
  • Brush with the egg wash and seeds, if using, and bake in a 375 F oven for 15 to 18 minutes.
  • If desired, brush with melted butter if the egg wash and seeds weren't used. Let the buns cool on a rack.
  • Split the buns in half, add sandwich fillings, and enjoy.

  • Cover the pan, and let the buns rise for 1 hour, or until they've puffed up and are touching one another. While the dough is rising, preheat the oven to 375°F.
  • Bake the buns for 20 minutes, until they're golden brown. Remove from the oven, carefully turn the buns out of the pan (they should come out in one large piece), and transfer them to a rack to cool.
  • Mix together the icing ingredients, and when the buns are completely cool, pipe it in a cross shape atop each bun.
