WEST COAST TRAIL COOKIES
This cookie gets its name from the West Coast Trail on Vancouver Island. It's my adaptation of the perfect nut-free trail cookie that's been our family's favorite chewy oatmeal cookie for 10 years. Loaded with choco-chips and dried cranberries. The flax seed meal and pumpkin seeds give them a nutty taste, without the nuts. Perfect for school kids or those with allergies.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper.
- Whisk together all-purpose flour, whole wheat flour, flax seed meal, cinnamon, baking soda, and salt in a bowl.
- Beat together butter, brown sugar, and white sugar in a large bowl until smooth and creamy; Stir in eggs and vanilla. Stir flour mixture into creamed butter mixture until dough is just combined. Fold oats, chocolate chips, cranberries, coconut, and pumpkin seeds into dough just until evenly combined.
- Shape dough into 1 1/2-inch balls or drop by heaping tablespoonfuls onto the prepared baking sheets about 2 inches apart; press to flatten slightly.
- Bake cookies in the preheated oven until lightly golden at the edges, about 12 minutes. Cool on the baking sheet for 10 minutes; transfer to a wire rack to cool completely.

ROAD TRIP COOKIES
Steps:
- Preheat the oven to 350 degrees.
- In a sifter combine the flour, baking soda and salt. Sift onto a large piece of waxed paper and set aside until needed.
- Heat 1-inch of water in the bottom half of a double boiler over medium heat. With the heat on, place the semisweet chocolate in the top half of the double boiler. Use a rubber spatula to stir the chocolate until completely melted and smooth, about 4 to 5 minutes. Transfer to a 1-quart bowl and set aside.
- Place the granulated sugar, light brown sugar and butter in a 7-quart bowl. Use a stiff rubber spatula (or a wooden spoon) to cream the ingredients together until smooth. Add the eggs and vanilla extract and mix to incorporate. Add the melted chocolate and mix until combined. Add the sifted dry ingredients and thoroughly combine. Add the M&M's, mixing to incorporate.
- Using 3 heaping tablespoons of dough for each cookie (approximately 3 ounces), portion 6 cookies, evenly spaced, onto each of 3 nonstick baking sheets (this is a hefty cookie, so don't crowd). Place the baking sheets on the top and center racks of the preheated oven and bake for 14 minutes. Remove the cookies from the oven and cool to room temperature on the baking sheets, about 30 minutes. Store the cooled cookies in a tightly sealed plastic container until ready to serve.
BUS TRIP COOKIES
My friend and I are in charge of the bus trips for our senior citizen center. We also make the treats, and these are always popular.

- In a bowl, cream butter and sugar. Add eggs and extract; mix well. Add biscuit mix and potato flakes; mix well. Drop by rounded teaspoonfuls 2 in. apart onto greased baking sheets. , Bake at 350° for 9-12 minutes or until edges are lightly browned. Cool for 2 minutes before removing to wire racks.

- For the roast beef with cucumber and chive cream cheese: Combine the cream cheese, chives and lemon zest and juice in a medium mixing bowl. Season with salt and pepper, mixing together to blend.
- Spread 1 tablespoon of the chive cream cheese onto each slice of bread. Top 4 of the bread slices with a thin layer of cucumber, 2 slices of roast beef and another slice of bread (making 4 sandwiches).
- For the ham and cheddar with dill butter: Combine the butter and dill in a medium mixing bowl. Season with salt and pepper, mixing together to blend.
- Spread 1 tablespoon of the dill butter onto each slice of bread. Top 4 of the bread slices with 2 slices of ham, 1 slice of cheese and another slice of bread (making 4 sandwiches).

- Two bowling teams, one of all Blondes and one of all Brunettes, chartered a double-decker bus for a weekend trip to Louisiana The Brunette team rode on the bottom of the bus, and the Blonde team rode on the top level. The Brunette team down below really whooped it up, having a great time, when one of them realized she hadn't heard anything from the Blondes upstairs. She decided to go up and investigate. When the Brunette reached the top, she found all the Blondes in fear, staring straight ahead at the road, clutching the seats in front of them with white knuckles. The brunette asked, 'What the heck's going on up here? We're having a great time downstairs!' One of the Blondes looked up at her, swallowed hard and whispered... 'YEAH, BUT YOU'VE GOT A DRIVER!!'

Steps:
- Preheat oven to 350 degrees F. Generously grease a 9-by-13-inch baking pan. Line pan with the folded foil across length of pan with 2 inches folded over both sides. Generously grease foil with vegetable shortening.
- In a large bowl mix together dry ingredients: oats, brown sugar, cinnamon, flour, baking soda, chocolate morsels and salt. Add honey, oil and vanilla extract, plus any optional nuts and raisins. Mix well and spoon into baking pan. Using the bottom of a measuring cup, press mixture firmly into the pan until evenly distributed and smooth on top.
- Bake 25 to 30 minutes, until bars are slightly darker at the edges than the center. Cool on a wire rack 15 minutes. Cut with a serrated knife into 3-by-1-inch bars.
- Wrap individually in snack-size Bags or store in an airtight container like a Container with Snap 'n Seal Lid.
