MOM'S SPAGHETTI BOLOGNESE

Recipe passed on from my Italian grandfather. The ultimate comfort food. Leftovers freeze nicely! To make this recipe more authentic, you can use a mixture of ground veal, pork, and beef. You can also substitute the balsamic vinegar for 1/2 cup of red wine.

1 (16 ounce) package spaghetti
2 tablespoons olive oil
3 slices bacon, diced
1 large onion, finely chopped
1 stalk celery, finely chopped
1 carrot, finely chopped
1 teaspoon dried oregano
3 cloves garlic, minced
1 pound lean ground beef
2 tablespoons balsamic vinegar
2 (28 ounce) cans crushed tomatoes
2 tablespoons tomato paste
2 teaspoons white sugar
salt and ground black pepper to taste
2 tablespoons chopped fresh basil
¼ cup freshly grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a rolling boil. Cook the spaghetti in the boiling water until cooked through yet firm to the bite, about 12 minutes; drain.
  • Heat the olive oil in a large pot over medium heat. Cook the bacon in the oil until crisp, 8 to 10 minutes. Stir the onion, celery, carrot, and oregano into the bacon; continue cooking until the vegetables begin to soften, another 8 to 10 minutes. Add the garlic and cook until fragrant, about 2 minutes. Crumble the ground beef into the vegetable mixture; cook and stir until the beef is completely cooked and no longer pink, 8 to 10 minutes.
  • Pour the balsamic vinegar over the ground beef mixture; allow to simmer until the liquid evaporates, about 5 minutes. Stir the crushed tomatoes, tomato paste, and sugar into the ground beef mixture; bring the mixture to a boil, season with salt and black pepper, and remove from heat. Stir the fresh basil into the mixture.
  • Ladle the sauce over the cooked spaghetti. Top with Parmesan cheese to serve.

2 pounds lean ground beef
1 (6 ounce) can tomato paste
2 cups water
1 cup diced carrot
1 envelope beef and onion dry soup mix
1 teaspoon granulated garlic
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon ground thyme
1 (16 ounce) package uncooked spaghetti

Steps:

  • Cook and stir ground beef in large pot over high heat until browned, about 5 minutes. Stir in tomato paste, water, carrot, onion soup mix, granulated garlic, oregano, basil, and thyme. Bring to a boil. Turn sauce down to a simmer and cook for 1 hour, stirring occasionally.
  • When sauce has finished cooking, fill a large pot with lightly salted water and bring to a rolling boil over high heat. Stir in the spaghetti, and return to a boil. Cook the pasta stirring occasionally, until cooked but is still firm to the bite, about 12 minutes. Drain.
  • Serve Bolognese sauce over hot spaghetti.

1-1/2 lb lean ground beef
2 medium onions, finely chopped
1 can(s) tomato paste (12 oz)
1 can(s) tomato sauce (29 oz)
1 qt stewed tomatoes (my mom uses dad's from his garden) OR 3 14.5 oz cans stewed tomatoes (break them up with a spoon while simmering)
1/2 pkg (3) regular italian sausage
1/2 pkg (3) hot Italian sausage
2 tsp garlic powder
1 Tbsp parsley
1/2 tsp fennel seed
2 tsp basil
1 Tbsp sugar

Steps:

  • 1. In a skillet, brown beef and onions.
  • 2. Broil sausage for 3 minutes on each side. Drain sausage on a paper towel, slice.
  • 3. In a large pot/Crock Pot add all the ingredients.
  • 4. Stir and make sure it's combined well. Simmer for at least an hour.
  • 5. While simmering make sure you stir from the bottom occassionally.

  • In a deep pot/pan heat the oil over high heat and add the minced beef. Let it sauté, and with a spatula break any lumps that have formed. Let all the juices evaporate and sauté some more for the meat to brown/caramelize a little and the flavor to develop.
  • Reduce heat to medium and add the onion and carrot (if using). Stir until translucent and then add the garlic, tomato paste, bay leaves, cinnamon, cloves and allspice.
  • Stir for two minutes and add the wine, water, pureed tomatoes, basil, and the chicken bouillon. (Alcohol boils in lower temperature than water, so all of the alcohol will evaporate during cooking)
  • When it starts to boil, reduce heat to low and simmer until almost all of the liquids have evaporated and a thick sauce has remained. Remove and discard the bay leaves, cinnamon, all spice and cloves (if you used whole cloves and all spice kernels).Taste and adjust salt and pepper.
