1 cup rendered butter, refrigerated or 1 cup unsalted butter
1 cup powdered sugar
2 -2 1/2 cups flour
1 teaspoon orange blossom water (optional)
1/2 cup blanched almond

Steps:

  • Beat butter, sugar, and orange blossom water thoroughly with a mixer. Add flour gradually and mix well.
  • Form small cookies into an S shape, with each cookie being about a couple inches in size, give or take.
  • Press a blanched almond in the center of each S cookie. Place on cookie sheets and bake at 300 degrees in a preheated oven for 20 to 25 minutes. Avoid browning.

1/2 - 2/3 cup powdered sugar
1 cup clarified butter
2 1/2 cups all purpose flour
A pinch of salt

Steps:

  • Beat butter until it is almost white. Add the sugar and beat another 2 minutes or so. Add in the flour. Stir completely. The dough will form. Now you can handle it with your hands. Mash the dough with your hands until it is well blended. You can refrigerate it for 10 or 15 minutes to make it more firm. Divide into equal parts and make little balls. Press each ball down with your thumb. You can also roll the dough between your fingers to make a long about 4-inch piece. Join the ends. Place on cookie sheet. Decorate with crush pistachios or with one single pistachio in the middle. Bake on 350° about 15 minutes. The cookies should still be very pale. Don't let them take on color. Let cool about 20-30 minutes.

¼ teaspoon salt

Steps:

  • In a large bowl, cream together the butter and white sugar until light and fluffy. Beat in the egg, then stir in the vanilla. Combine the flour and salt; stir into the sugar mixture. Cover dough, and chill for at least one hour. Chill cookie sheets.
  • Preheat oven to 400 degrees F (200 degrees C). Press dough out onto ungreased, chilled cookie sheets.
  • Bake for 8 to 10 minutes in the preheated oven, or until lightly golden at the edges. Remove from cookie sheets to cool on wire racks.

When I was little I used to live next to a Greek family, who would make these cookies year round, and give tins of them to neighbors around Christmas.

1 cup butter, softened
¾ cup white sugar
1 egg
½ teaspoon vanilla extract
½ teaspoon almond extract
2 ¼ cups all-purpose flour
½ cup confectioners' sugar for rolling

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease cookie sheets.
  • In a medium bowl, cream together the butter, sugar and egg until smooth. Stir in the vanilla and almond extracts. Blend in the flour to form a dough. you may have to knead by hand at the end. Take about a teaspoon of dough at a time and roll into balls, logs or 'S' shapes. Place cookies 1 to 2 inches apart onto the prepared cookie sheets.
  • Bake for 10 minutes in the preheated oven, or until lightly browned and firm. Allow cookies to cool completely before dusting with confectioners' sugar.
