To-Die-For Butter Tarts image

This recipe uses currants, not raisins, and maple flavouring. The crust is the best, and easy to make. I make 20 dozen of these at Christmas because so many people request them.

1 cup dried currants
1 tablespoon maple extract
1 tablespoon water
3 cups all-purpose flour
1 teaspoon salt
1 cup shortening (such as Tenderflake®)
¼ cup cold butter
⅓ cup ice water
2 cups brown sugar
⅔ cup butter
¼ cup heavy whipping cream
2 teaspoons vanilla extract
2 eggs, lightly beaten
24 pecan halves

Steps:

  • Heat currants, maple extract, and 1 tablespoon water in a saucepan over low heat until currants are soft, about 5 minutes. Set aside to cool to room temperature, about 10 minutes.
  • Preheat oven to 450 degrees F (230 degrees C). Spray 24 muffin cups or individual tart pans with cooking spray.
  • Whisk flour and 1 teaspoon salt together in a large bowl. Cut in shortening and cold butter with a knife or pastry blender until the mixture resembles coarse crumbs. Add ice water, 1 tablespoon at a time, tossing with a fork, until flour mixture is moistened. Do not add more water than you need: when you squeeze a handful of the moistened pastry mixture, it should form a ball. Divide dough in half and shape into balls.
  • Roll out one half of dough on a lightly-floured surface. Cut tart shells out of dough with a 3 1/2-inch circular cutter, and press into prepared tins. Repeat with the remaining dough. Cover tins; set aside.
  • Heat brown sugar, 2/3 cup butter, cream, and vanilla over low heat until smooth, stirring occasionally; remove from heat. Whisk a few spoonfuls of the warm butter mixture into beaten eggs, then whisk egg mixture into the butter mixture.
  • Divide the currants, along with their liquid, into the bottom of the prepared tart shells. Fill each shell about 3/4-full with butter mixture. Place a pecan half on top of each tart.
  • Bake tarts in the preheated oven for 8 minutes. With oven door closed, reduce temperature to 350 degrees F (180 degrees C); continue baking until filling is bubbly, about 10 minutes. Remove from oven; allow to cool for a few minutes before loosening tarts from pan with a knife. Remove tarts to cool completely on a wire rack.

2 teaspoons salt
2 cups shortening
¾ cup ice water, or as needed
cooking spray
5 cups brown sugar
1 ⅔ cups butter, softened
5 eggs, beaten
⅔ cup milk
5 teaspoons vanilla extract
1 ¼ cups raisins
1 ¼ cups dried currants

Steps:

  • Whisk flour and salt together in a large bowl; cut in the shortening with a knife or pastry blender until the mixture resembles coarse crumbs. Add ice water, 1 tablespoon at a time, tossing with a fork, until the flour mixture is moistened. When you squeeze a handful of the moistened pastry mixture, it should form a ball. Divide dough in half and shape into balls.
  • Preheat oven to 450 degrees F (230 degrees C). Spray 36 muffin cups with cooking spray.
  • Roll pastry out 1/8-inch thick on a lightly floured surface. Cut into 4-inch rounds; press rounds into the bottom and up sides of muffin cups to make tart shells.
  • Beat brown sugar and butter together with an electric mixer until smooth and creamy; beat in eggs, milk, and vanilla extract just until combined. Stir raisins and currants into butter mixture; fill tart shells with mixture 2/3-full.
  • Bake in the preheated oven for 8 minutes; leaving oven closed, reduce temperature to 350 degrees F (180 degrees C) and bake until filling is bubbly and pastry is lightly browned, about 15 minutes.

2 sheets refrigerated pie crust
FILLING:
1/2 cup raisins
1 cup water
1 large egg, room temperature, lightly beaten
1/2 cup packed dark brown sugar
1/2 cup packed light brown sugar
1/3 cup butter, melted
1-1/2 teaspoons vanilla extract
1/4 teaspoon salt
1/3 cup coarsely chopped pecans
Vanilla ice cream, optional

Steps:

  • Preheat oven to 425°. Line 12 muffin cups with foil liners. (Do not use paper-lined foil liners.), On a work surface, unroll crust. Cut 12 circles with a floured 4-in. round cookie cutter (save remaining crust for another use). Gently press crust circles onto bottoms and up sides of foil liners. Refrigerate while preparing filling., In a microwave-safe bowl, combine raisins and water; microwave on high 2 minutes. Drain; cool slightly., In a small bowl, mix egg, brown sugars, melted butter, vanilla and salt until blended; stir in pecans and raisins. Spoon into crust cups, dividing evenly., Bake on a lower oven rack until filling just begins to bubble up and crusts are light golden brown, 7-9 minutes (do not overbake). A holiday treat! Everyone who has ever tried these luscious currant and butter tarts asks for the recipe. My grandmother made dozens of them every Christmas. She called them "English Butter Tarts". It's a very old recipe she got from a neighbor who came from England. I am including her recipe for the pastry dough she used (contains lard, a no-no these days) but premade or your own pastry works just fine!

1/2 cup real butter, room temperature
1 cup granulated sugar
1 large egg
2 teaspoons vanilla
1 cup dried currant
2 cups all-purpose flour
1/4 teaspoon salt
2/3 cup lard
3 -4 tablespoons cold water

Steps:

  • To Make the Filling:.
  • Wash the currants and drain them.
  • Stir the sugar and butter together well. Mix in the egg and vanilla until well blended. Stir in the currants.
  • To Make the Pastry:.
  • Mix the flour and salt together.
  • Cut the lard into the flour and salt until the consistency is like crumbs. Gradually add enough of the water to make the dough hold together, and form it into a ball.
  • Roll out the dough and cut out with a round cookie cutter and fit into muffin tins (regular size, not mini).
  • To Assemble & Bake:.
  • Pre-heat oven to 375 degrees
  • Put a large spoonful (about 2 tablespoons) of the filling into each unbaked tart shell.
  • Bake @ 375 for 15 to 20 minutes, until bubbly and golden and crust is done. (Don't overbake - the filling should not be too brown or crispy.).

This recipe was a Christmas treat I remember from my childhood. I think it originates in Canada, but I'm not sure. My mother always made one batch of butter tarts and one batch of tarts with raspberry jam. The jam tarts were fair game, but she always hid most of the butter tarts for herself.

1 cup brown sugar, packed
1/2 cup butter, softened
1/2 teaspoon salt
1 teaspoon vanilla
1 cup currants
1 egg, separated, beat white

Steps:

  • Preheat oven to 375.
  • Double pie crust recipe can be used for tart shells.
  • Cut pie crust into circles (use a glass or biscuit cutter). Press into buttered muffin tin.
  • Cream butter, sugar, salt, and vanilla. Stir in currants and egg yolk. Add beaten egg white and mix well.
  • Use 1 1/2 scant teaspoons of filling for each tart to avoid overflow. Bake until filling is foamy and crust is brown, aprox. 12-15 minutes.
  • Makes 2 dozen.

Pinch salt
½ cup cold unsalted butter, cut into pieces (125 ml)
⅔ cup cold vegetable shortening (150 ml)
½ cup plus 2 tbsp. ice water (150 ml)
1 egg
½ cup packed brown sugar (125 ml)
½ cup maple syrup (125 ml)
¼ cup unsalted butter, melted (60 ml)
1 tsp vanilla extract (5 ml)
¼ tsp salt (1 ml)
¾ cup currants (150 ml)

Steps:

  • Preheat oven to 375 degrees F.
  • Sift dry ingredients together. With a pastry cutter, blend in the butter and shortening until the mixture resembles coarse meal. Add the ice water gradually until dough forms. Pat dough into a flat disk, wrap in plastic wrap and refrigerate for at least an hour.
  • Roll the dough 1/4-inch thick. With a cookie cutter, cut out ten 41/2-inch circles. Press the circles into 10 cups of a muffin tin. Put the muffin tin in the freezer for 20 minutes. Bake for 30 minutes, or until pastry is golden and set. Cool on a wire rack.
  • In a medium bowl, lightly beat together the egg, brown sugar, maple syrup, butter, vanilla and salt.
  • Divide the currants among the shells. Pour the mixture into the shells and bake until set, about 15 minutes. Let cool 5 minutes. Remove tarts from pan and cool on a wire rack.

With comforting notes of butterscotch and caramel, Canadian butter tarts are the perfect easy dessert for when you want something small and sweet.

Single-Crust Food Processor Pie Dough
⅔ cup packed light brown sugar
⅓ cup maple syrup
4 Tbsp. unsalted butter, very soft
1 large egg
1½ tsp. white ­vinegar or apple cider vinegar
1 tsp. vanilla extract
¼ tsp. salt
Small handful of ­raisins, dried currants, chopped pecans, or chopped walnuts (optional)

Steps:

  • Prepare and refrigerate the pie dough.
  • Roll the dough as you would for most pies, about ⅛-inch thick or a tad thinner. Don't worry about keeping it nice and round like you normally would.
  • Using a 4-inch-diameter cookie or biscuit cutter, cut the dough into as many circles as possible. Line each cup of a standard 12-cup muffin pan with one of the circles, gently nudging it down into the bottom creases of the pan. Try not to stretch the dough as you work; it can help to use something blunt, like a narrow jar, to nudge the dough. The top edge of the dough circle should come to about the middle of the cup. Gather the scraps and reroll the dough if you need additional ­circles. Chill the pan in the freezer for 20 to 30 minutes.
  • Adjust one oven rack so it is in the lower position, and preheat the oven to 425°F (220°C). Combine the sugar, maple syrup, and butter in a mixing bowl. Whisk briefly. Add the egg, vinegar, vanilla, and salt, and whisk again.
  • Set the muffin pan on your work surface. If you're using the fruit or nuts, put a few pieces in as many of the shells as you wish, but don't crowd them. Use a ladle or ¼-cup measuring cup with a handle to divide the filling evenly between the shells.
  • Bake for 15 to 18 minutes, until the filling bubbles and darkens somewhat.
  • Transfer the pan to a rack and cool for 5 minutes, then carefully run a butter knife around the edge to loosen each tart. Let the tarts cool in the pan, then remove. Store, refrigerated, in a single layer in a covered tin or container, but let them come to room temperature before serving.

Bake until filling is golden brown, covering edges with foil if browning too quickly, about 25 minutes. Transfer to rack and cool 15 minutes. Remove tart from pan. Cut into wedges. Serve warm or at room temperature. Pass whipped cream if desired.
