BUTTERCREAM DECORATOR ICING



Buttercream Decorator Icing image

This icing can be used to frost any cake or cupcakes and it's also Gr8 for piped decorations!

Number Of Ingredients 5

4 cups confectioner's sugar (sifted or whisked to break up any big lumps)
1 cup solid shortening
2 teaspoons vanilla extract (clear vanilla is best, if you can find it. Brown vanilla will tint the icing ever so slightly.)
Pinch of Salt
4-6 Tablespoons milk (any kind, I've even used cream in a pinch.)

Steps:

  • In the bowl of a stand mixer, on high speed, cream your shortening or butter until well softened.
  • Add the confectioner's sugar one cup at a time and continue to beat. Frosting will be thick, but don't worry.
  • Add vanilla and salt and beat until incorporated.
  • Add milk one Tablespoon at a time until frosting is the desired consistency.
  • If the frosting becomes too thin, add more confectioner's sugar. If it is too thick, add more milk.
  • Use as desired.

I always use this when I decorate cakes and I get many, many compliments on the wonderful taste. It is not that usual shortening-and-sugar-bakery-icing taste. If I am not using it to decorate a cake with, I use my all butter variation: Recipe #261024.

1/2 cup shortening
1/2 cup real butter
1 1/2 teaspoons clear vanilla extract
1 dash salt (optional)
5 cups confectioners' sugar
2 -3 tablespoons milk

Steps:

  • Cream butter and shortening then add vanilla.
  • Add sugar a cup at a time beating on medium speed.
  • Add milk 1 Tbls. at a time and beat on high until completely blended.
  • TIP: To cut the sweetness I usually sprinkle some salt in the vanilla (so it will dissolve) before proceeding with recipe as instructed.

1 cup unsalted butter
1 tablespoon milk
1 teaspoon vanilla extract
½ teaspoon salt
5 cups powdered sugar, sifted

Steps:

  • In a large bowl, use an electric hand mixer to cream butter until smooth, but not airy. Add milk, vanilla and salt and mix to incorporate.
  • Sift powdered sugar over the butter mixture. Mix until incorporated and smooth. Do not overmix, to avoid air pockets in your frosting.
  • Divide the frosting and add gel food coloring as desired.
  • Use a piping bag fitted with desired tip to pipe flowers onto parchment paper. Freeze the flowers for at least 20 minutes.
  • Use a knife to lift frozen flowers from parchment and onto a frosted cake. Arrange as desired.
  • Enjoy!

4 teaspoons water
1/2 pound unsalted butter, at room temperature

Steps:

  • With a heavy wire whisk, beat the egg until frothy, and set aside.
  • Combine the sugar and water in a heavy-bottomed pan, and bring to a boil. Boil, stirring occasionally to clean the sides, until the mixture reaches 248 degrees, the soft ball stage, on a candy thermometer.
  • Pour the boiling sugar syrup into the beaten egg, vigorously whisking the egg as you pour so it cooks but does not curdle.
  • Slowly add the butter, whisking each addition until it is incorporated. When smooth, spread on cake.
