1/2 cucumber, peeled, seeds removed and coarsely grated
3/4 teaspoon salt, plus
1/4 teaspoon salt
3/4 cup buttermilk
1/4 cup mayonnaise
1/2 teaspoon minced garlic
2 teaspoons chopped fresh dill
1/4 teaspoon cayenne pepper

Steps:

  • Place the cucumbers in a small bowl and sprinkle with 3/4 teaspoon of the salt.
  • Stir to combine, then set aside while you assemble the remaining ingredients.
  • In a small bowl combine the buttermilk, mayonnaise, garlic, dill, cayenne and salt and stir to combine well.
  • Drain the cucumber in a small colander, then, using your hands, squeeze to remove as much excess water as possible.
  • Add the cucumber to the buttermilk mixture and stir to thoroughly combine.
  • Serve immediately or refrigerate, covered, for up to 1 day in advance.

Amazing butter sauce can be used on anything from seafood to leftover chicken or beef to potatoes. Quick, easy, creamy, and delicious!

15 cloves garlic, peeled
1 ½ tablespoons extra-virgin olive oil
2 ½ cups chicken stock, heated
sea salt and finely ground black pepper, to taste
½ cup cream
5 tablespoons butter, cut into small pieces
¼ cup chopped fresh parsley
2 tablespoons chopped fresh thyme
1 ½ teaspoons chopped fresh oregano

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place garlic cloves in a small baking dish and toss with oil to coat.
  • Bake in the preheated oven until cloves are light golden brown, about 15 minutes.
  • Combine garlic and hot stock in a blender. Season with salt and pepper. Blend until smooth. Add cream, butter, parsley, oregano, and thyme; process until completely blended.
  • Transfer sauce to a container and allow to cool, about 10 minutes. Refrigerate until ready to use. Reheat the sauce over low heat when ready to serve.

1 1/4 cups mayonnaise
6 tablespoons buttermilk
2 tablespoons fresh lemon juice
1 tablespoon snipped fresh chives
1 tablespoon chopped fresh parsley
1/4 teaspoon salt
fresh ground pepper

Steps:

  • Whisk together all ingredients in a medium bowl; cover and chill at least 30 minutes.
  • Place a 2-gallon zip-top plastic bag in the center of an 18-inch-tall glazed strawberry jar, fill to top with ice and seal.
  • Nestle a ramekin on ice in top opening of jar.
  • Fill ramekin with dip.
  • Arrange assorted fresh vegetable sticks (carrots, red, yellow and green bell peppers, celery, zucchini,etc. ) in pockets of jar and serve.
