BUTTERMILK BISCUITS WITH SAUSAGE GRAVY



Buttermilk Biscuits with Sausage Gravy image

2 cups all-purpose flour ((240 grams))
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon coarse salt
6 tablespoons unsalted butter ((85 grams), cold and cut into cubes)
3/4 cup buttermilk ((175 ml), chilled, plus additional for brushing)
8 oz ground country/bulk breakfast sausage ((225 grams))
2 tablespoons butter
1/4 cup all-purpose flour ((30 grams))
2 1/2 cup whole milk ((590 ml))
1 teaspoon salt (plus more to taste)
1/2 teaspoon fresh ground pepper (plus more to taste)

Steps:

  • Preheat oven to 400 degrees. Line a sheet pan with parchment paper.
  • In a medium bowl mix together the flour, baking powder, baking soda, and salt. Mix in the butter with a pastry cutter or a fork until mixture resembles coarse meal. Add the buttermilk and stir until the dough comes together in a ball.
  • On a lightly floured surface, gather the dough into a bowl and knead gently 6 times. Pat dough to about 1/2 inch thick. Cut dough into three inch rounds with a lightly floured cutter. Place on the prepared baking sheet about 2 inches apart. Brush with buttermilk.
  • Bake until golden brown, about 15-20 minutes. Transfer to a wire rack to cool.
  • While the biscuits are baking, prepare the gravy. Brown the sausage in a large saute pan set over medium high heat. Transfer browned sausage to a paper towel to drain.
  • Reduce heat to medium low and add butter and flour to pan and whisk together with remaining sausage drippings. Slowly add the milk a little at a time while whisking constantly, scraping bottom of pan with whisk to removed browned bits. Continue to cook, while whisking often, until gravy has thickened. Stir in salt and pepper and sausage. Simmer for about 5 minutes. Add additional salt and pepper to taste.
  • Serve warm biscuits with the gravy. Store leftover gravy in the fridge for up to 5 days. Store biscuits in an airtight container at room temperature for up to 3 days.

2 to 3 tablespoons all-purpose flour

Steps:

  • In a small skillet, cook sausage over medium heat until no longer pink, 3-5 minutes, breaking into crumbles; drain. Add butter and heat until melted. Add the flour, salt and pepper; cook and stir until blended. Gradually add the milk, stirring constantly. Bring to a boil; cook and stir until thickened, about 2 minutes. Serve with biscuits.

His grandmother stated that you must use Farmer John® sausage and bacon drippings or it would not taste as delicious as hers. It was never written down, just a pinch of this and a handful of that. I finally got him to measure everything and this is the result.

1 3/4 cups Southern all-purpose flour, such as White Lily, or cake flour (not self-rising), plus more for rolling out
1/2 cup whole wheat pastry flour
1 tablespoon baking powder
1/2 teaspoon fine sea salt
1/4 teaspoon baking soda
2 tablespoons cold unsalted butter, cut into bits and chilled
3/4 to 1 cup lowfat buttermilk
2 tablespoons canola oil
1 1/4 pounds lean pork, chicken or turkey sausage, casings removed
Coarse kosher salt and freshly ground black pepper
1 sweet onion, finely chopped
2 cups 2-percent or whole milk

Steps:

  • Preheat the oven to 500 degrees F.
  • In a bowl, combine 1 1/2 cups of the all-purpose flour, the whole wheat pastry flour, baking powder, salt and baking soda. Using a pastry cutter or two knives, cut the butter into the flour mixture until it resembles coarse meal. Combine the buttermilk and 1 tablespoon of the oil. Pour the buttermilk mixture into the flour mixture and gently mix until just combined.
  • Turn the dough out onto a lightly floured surface. Knead lightly using the heel of your hand to compress and push the dough away from you, and then fold it back over itself. Give the dough a small turn and repeat eight or so times. (It's not yeast bread; you want to just barely activate the gluten, not overwork it.) Using a lightly floured rolling pin, roll the dough out 1/2 inch thick. Cut out rounds of dough with a 1 1/2-inch round cutter dipped in flour; press the cutter straight down without twisting so the biscuits will rise evenly when baked.
  • Meanwhile, heat the remaining 1 tablespoon oil in a large skillet over medium-high heat. Add the sausage and sprinkle with salt and pepper. Using a wooden spoon, break up the meat into small pieces. Cook until lightly browned, 3 to 5 minutes. Pour off any excess rendered fat. Add the onions and cook until clear and translucent, 3 to 5 minutes. Add the remaining 1/4 cup all-purpose flour and stir to combine and coat. Add the milk and season with salt and pepper. Bring to a boil and then reduce the heat to simmer. Let cook, stirring occasionally, until thick, about 5 minutes. Taste and adjust for seasoning with salt and pepper.
  • Meanwhile, place the biscuits on an ungreased baking sheet about 1 inch apart. Bake until golden brown, 8 to 10 minutes. Transfer to a rack to cool just slightly. Split and serve hot with the sausage gravy.

1 tablespoon butter
1 log package sausage (recommended: Jimmy Dean)
2 cups heavy cream
1 teaspoon hot sauce (recommended: Tabasco)
1 tablespoon Worcestershire sauce
1/3 cup maple syrup
Salt and freshly cracked black pepper
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
3/4 cup cold butter
1 cup whole milk
All-purpose flour, for dusting
Cream, for glazing

Steps:

  • For the sausage gravy:
  • In a large heavy bottom pot melt the tablespoon of butter and brown the sausage for about 5 minutes. Add the heavy cream and bring to a simmer. Once at a simmer, add the hot sauce, Worcestershire sauce and maple syrup. Simmer the gravy for 15 minutes and season with salt and pepper, to taste.
  • For the biscuits:
  • Preheat oven to 425 degrees F.
  • In a bowl sift together the dry ingredients. Add the butter and incorporate the flour into it until the texture is consistent. Pour the milk into the flour mixture and mix with a fork until the dough begins to come together.
  • Turn the dough out onto a lightly floured surface and roll out until it's about 1-inch thick. Cut the dough vertically and then horizontally, yielding approximately 15 square biscuits. Lay the biscuits out on a baking sheet lined with parchment paper. Glaze the top of each biscuit with a little bit of cream and place the sheet in the oven for 12 to 15 minutes, or until the biscuits turn golden in color.
  • Assemble by placing a biscuit on a plate and covering it with about 1/2 a cup of the sausage gravy.

2 lbs Bob Evans sausage (Regular, Sage or Hot)
1/2 lb bacon
2 teaspoons rubbed sage
1/4 lb real butter
2 cups flour
1/2 gallon whole milk (2% or skimmed will not work)
black pepper

Steps:

  • Place flour into a dry non-stick frying pan over medium heat and cook until light brown.
  • Stir continually to prevent flour from burning.
  • Pour into a glass bowl and set aside to be used later.
  • (Browing the flour will keep it from lumping when added later) Cut bacon into 1/2" pieces and place into large pot or Dutch oven.
  • Fry bacon until crispy.
  • Pinch sausage into small pieces and add to bacon.
  • Continue frying until sausage is completely cooked.
  • Add sage and butter and stir in completely until butter is melted.
  • Add browned flour a few tablespoons at a time and stir until liquid becomes pasty (you may not need all of the flour).
  • Pour in milk slowly, bring to a slow boil and contiue stirring until gravy thickens.
  • Add black pepper to taste.
  • You may also add a pinch or two of crushed red pepper flakes if you want the gravy to be more zippy.
  • Serve over buttermilk biscuits prepared per package instructions.
