This is a simple and scrumptious way to do a butternut squash;just a couple of ingredients and you have a great veggie side! Even my son will eat this!

2 butternut squash
honey
4 tablespoons brown sugar
1 tablespoon cinnamon
1/4 cup unsalted butter, 1/2 stick, cut into 16 equal pieces

Steps:

  • Halve the butternut squash lengthwise and scoop out seeds.
  • Sprinkle with brown sugar and cinnamon.
  • Dot each half with 4 pieces of butter.
  • Drizzle with honey.
  • Bake in oven at 350 degrees until tender, about 20 minutes.

2 large eggs eggs, beaten
1 cup shredded Cheddar cheese
1 medium onion, chopped
¾ cup milk
1 teaspoon salt
¼ teaspoon pepper
½ cup crushed butter-flavored crackers
2 tablespoons butter or margarine

Steps:

  • Place squash in a saucepan and cover with water; bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until very tender. drain well and place in a large bowl; mash. In another bowl, combine the eggs, cheese, onion, milk, salt and pepper; add to the mashed squash and mix well.
  • Transfer to a greased 2-qt. baking dish. Sprinkle with cracker crumbs. Dot with butter. Bake, uncovered, at 350 degrees F for 40-45 minutes or until a knife comes out clean.

2 pounds yellow summer squash, peeled and cubed
3 eggs, lightly beaten
1 cup (4 ounces) finely shredded sharp cheddar cheese
1 cup mayonnaise
3/4 cup crushed butter-flavored crackers (about 19)
1 medium onion, finely chopped
1 envelope buttermilk ranch salad dressing mix
1/3 cup dry bread crumbs
1/8 teaspoon paprika
3 tablespoons butter, melted

Steps:

  • Place squash in a saucepan and cover with water; bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until very tender. Drain well in a fine mesh strainer, pressing water out with the back of a large spoon. , Transfer to a large bowl; mash. Stir in the eggs, cheese, mayonnaise, cracker crumbs, onion and dressing mix. , Pour into a greased 1-1/2-qt. baking dish. Sprinkle with bread crumbs and paprika. Drizzle with butter. Bake, uncovered, at 325° for 45-50 minutes or until a thermometer reads 160°.

1 carrot, grated
1 small onion, chopped
salt & pepper
herb seasoned bread crumbs

  • Mash cooked squash. Add sour cream, chicken soup, grated carrot, chopped onion, salt and pepper. Sprinkle a layer of herb-seasoned bread crumbs on bottom of shallow casserole dish.
