SCRUMPTIOUS BUTTERNUT SQUASH
This is a simple and scrumptious way to do a butternut squash;just a couple of ingredients and you have a great veggie side! Even my son will eat this!

- Halve the butternut squash lengthwise and scoop out seeds.
- Sprinkle with brown sugar and cinnamon.
- Dot each half with 4 pieces of butter.
- Drizzle with honey.
- Bake in oven at 350 degrees until tender, about 20 minutes.

- Place squash in a saucepan and cover with water; bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until very tender. drain well and place in a large bowl; mash. In another bowl, combine the eggs, cheese, onion, milk, salt and pepper; add to the mashed squash and mix well.
- Transfer to a greased 2-qt. baking dish. Sprinkle with cracker crumbs. Dot with butter. Bake, uncovered, at 350 degrees F for 40-45 minutes or until a knife comes out clean.

Drain well in a fine mesh strainer, pressing water out with the back of a large spoon. , Transfer to a large bowl; mash. Stir in the eggs, cheese, mayonnaise, cracker crumbs, onion and dressing mix. , Pour into a greased 1-1/2-qt. baking dish. Sprinkle with bread crumbs and paprika. Drizzle with butter. Bake, uncovered, at 325° for 45-50 minutes or until a thermometer reads 160°.
