1 cup butter, softened
0.667 cup granulated sugar
0.667 cup packed brown sugar
1 teaspoon baking soda
0.5 teaspoon salt
2 eggs
1 teaspoon vanilla
2.5 cup all-purpose flour
1 11 ounce package butterscotch pieces

Steps:

  • Preheat oven to 375 degrees F. In a large mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds. Add sugar, brown sugar, baking soda, and salt. Beat until combined, scraping sides of bowl occasionally. Beat in eggs and vanilla until combined. Beat in as much of the flour as you can with the mixer; stir in any remaining flour and the butterscotch pieces.
  • Drop dough by rounded teaspoonfuls about 2 inches apart onto ungreased cookie sheets. Bake for 9 to 10 minutes. Rotate cookie sheets halfway through bake cycle. Remove from cookie sheets immediately and cool on wire racks. Makes 4 dozen cookies.

2 tablespoons butter, softened
2 tablespoons shortening
1 cup packed brown sugar
1 large egg
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
3/4 teaspoon baking soda
3/4 teaspoon cream of tartar
1/4 teaspoon salt
1/4 cup English toffee bits or almond brickle chips
1/4 cup finely chopped pecans

Steps:

  • In a large bowl, cream butter, shortening and brown sugar until light and fluffy. Beat in egg and vanilla. Combine flour, baking soda, cream of tartar and salt; gradually add to creamed mixture and mix well. Stir in toffee bits and pecans. Shape into a 10-in. roll; wrap in plastic. Refrigerate 4 hours or until firm., Preheat oven to 375°. Unwrap dough and cut into 1/2-in. slices. Place 2 in. apart on baking sheets coated with cooking spray. Bake 9-11 minutes or until lightly browned. Cool 1-2 minutes before removing from pans to wire racks. Freeze option: Place wrapped logs in resealable plastic freezer bag; freeze. To use, unwrap frozen logs and cut into slices. If necessary, let dough stand a few minutes at room temperature before cutting. Bake as directed.

These are my absolute favorite cookie. Ever. I have licked many a beater after mixing these cookies up. They are of course from the back of the Toll House package.

2 1/4 cups flour
3/4 cup sugar
3/4 cup brown sugar
1 teaspoon vanilla
1 cup butter
1 teaspoon baking soda
1 teaspoon salt
2 large eggs
2 cups butterscotch chips

Steps:

  • Mix together the flour, salt and baking soda in a small bowl, set aside.
  • Cream the sugars and butter together, add the vanilla.
  • Add the eggs one at a time.
  • Slowly add the flour mixture.
  • When completely mixed, add the butterscotch chips.
  • Drop by the spoonful onto an ungreased cookie sheet.
  • Bake 8-10 minutes at 375F degrees.

These are the Holiday cookies I grew up with, we made them as a family when I was growing up, I made them with my daughter and now I make them with my grand kids, everyone LOVES them, not your everyday sugar cookie, there so much better. My Mom gave me the original recipe, from a 1967 McCalls Magazine, as you can see it's been through a lot!

DECORATING GLAZE

Steps:

  • Mix Brown sugar, salt butter thoroughly in large mixing bowl. Beat eggs ans extract into mixture until light and fluffy. Sift together flout, baking powder and soda,and cinnamon;gradually blend into sugar ingredients. Chill well.
  • Roll chilled dough 1/8 in thick on a well floured surface. cut into fancy shapes and bake on regressed cookie sheets. Bake at 350 8-10 minutes or until slightly brown around the edges ( I like then chewy so I stay closer to 8 min) remove to cooling rack, cool completely before decorating.
  • for glaze, blend confectioners sugar into 1 slightly beaten egg white, add melted butter,salt and extract, beat until smooth . if too thin add more sugar. Divide glaze into several parts and tint with desired food coloring, apply glaze to cookies with decorating tubes or paint brushes, load the kids with sprinkles and take lots of pictures!
  • Store in airtight containers yields 6-10 dozen cookies I always double the recipe, more fun for the kids!

My mother in law has been making these for Christmas for years and years. I make them for all holidays, using different cookie cutters for whatever occasion. They are the best when they are frosted, but sometimes I just sprinkle on colored sugar before baking. I call them "Play Dough" cookies because that's what the dough smells like to me! (Don't worry, they don't taste like Play Dough :) Chilling time is not included.

Steps:

  • Cream butter and sugar well.
  • Add egg and vanilla and beat well.
  • Combine baking powder and flour.
  • Add gradually to creamed mixture.
  • Chill until firm.
  • Preheat oven to 400 degrees.
  • Roll out dough to about 1/4" thickness and cut into desired shapes.
  • Bake for 6 to 8 minutes.
  • When cool, decorate with frosting or icing if desired.
