OLD-FASHIONED PENUCHE
The name penuche comes from the Mexican word for "raw sugar" or "brown sugar," and this sweet can best be described as a creamy brown-sugar fudge. We recommend using butter, not margarine, for a smoother texture. Do-Ahead: up to 3

Steps:
- Grease 8-inch by 8-inch metal baking pan. Line bottom and sides of pan with foil, allowing foil to extend above pan on 2 sides; grease foil.
- In heavy 4-quart saucepan, melt butter over medium heat. Add cream, granulated sugar, brown sugar, and corn syrup; heat to boiling over high heat, stirring frequently, until sugar completely dissolves. With pastry brush dipped in water, wash down sugar crystals on side of pan.
- Set candy thermometer in place and continue cooking, without stirring, until thermometer reaches 238 degrees F., or soft-ball stage (when small amount of mixture dropped into very cold water forms a soft ball that flattens on removal from water).
- Remove saucepan from heat. Cool mixture to 210 degrees F., about 8 minutes, without stirring. Sprinkle white chocolate over mixture; let stand 1 minute. Add walnuts and stir with wooden spoon just until chocolate and nuts are incorporated (do not overmix).
- Immediately pour mixture into pan (do not scrape inside of saucepan). Cool candy in pan on wire rack 30 minutes or until firm, but still warm. Lift foil and candy out of pan and place on cutting board. While warm, cut candy into 8 strips, then cut each strip crosswise into 8 pieces.
- Cool completely on foil on wire rack. Store at room temperature in tightly covered container, with waxed paper between layers, up to 3 weeks.

PENUCHE - EASY FUDGE LIKE RECIPE

- Spray a 9 x 5 inch loaf pan cooking spray and line with parchment paper. Set aside. Can use 8 or 9 inch square if desired. Melt butter in a heavy bottomed 2 quart saucepan over medium-low heart, stirring as needed. Stir in the brown sugar and cook for 2 minutes, stirring constantly. Gently pour in the milk and stirring constantly, bring mixture to a boil. Remove from heat and let cool for 30 to 40 minutes, or until the mixture is lukewarm or at room temperature. Stir in the vanilla extract. Stir in powdered sugar, one to one-half cup at a time, stirring until completely combined. Add powdered sugar just until the mixture is thick and has the consistency of fudge. (It wall harden as it chills.) Stir in coarsely chopped pecans. Spoon into the prepared loaf pan and top with additional pecans if desired. Cover and cool until firm. Cut into squares and store in the refrigerator in an airtight container.

- Butter the bottom and sides of a heavy 4-quart saucepan.
- In pan, combine the sugars, milk, corn syrup and salt.
- Cook and stir over medium heat until sugars dissolve and mixture begins to boil.
- Reduce heat; attach candy thermometer to pan.
- Continue cooking, stirring occasionally, until thermometer reads 236°F.
- Remove from heat; add peanut butter but do not stir it in; set pan aside.
- Do not stir or move pan during cooling.
- When thermometer reaches 115°F, add vanilla extract.
- Beat by hand until mixture loses its gloss; pour into buttered pan.
- When penuche is only slightly warm, cut into small squares.

- In a heavy medium sized pot, bring first 4 ingredients to a boil over medium-high heat, stirring constantly.
- Reduce heat to low and stir frequently until candy thermometer reads 240°F (soft ball stage) (this will take about 20-30 minutes).
- Pour into a metal bowl as a plastic one will melt and add vanilla.
- Beat with electric mixer at medium speed.
- Add powdered sugar slowly and continue beating until fudge is thick and smooth (about 3-4 minutes).

EASY PENUCHE ICING
This recipe comes from an old version of the Betty Crocker Cookbook that my mother got when she first married. It is wonderful addition to any chocolate cake. Enough for 2 - 8" or 9" layers or 1 - 13x9" oblong cake.
